    E ASTER  BRUNCHSpring is a time of rebirth and regeneration after thecold dreariness of winter. The gray is swept away,replaced by beauty and color - and Easter is thecornerstone celebration of spring! Tradition and ritual,always strong in our Italian culture, play an importantrole at Easter, or Pasqua, celebrations - and thereare many ceremonies and culinary customs that arereligiously upheld.

     Traditional Ita lian Easter meals vary from regionto region, but eggs and roasted lamb are commonelements everywhere. Eggs represent life, fertility,and renewal, all of which are essential symbols ofEaster. Dyed eggs grace many Easter tables, and eggsare often found in soups and in traditional Easterpie (Torta Pasqualina). Roasted lamb, as a symbolof birth and the shepherd, is the trad itional maincourse. While food is certainly a main attraction atevery Italian celebration, because Easter marks the endof the traditional deprivations of the Lenten season,cuisine plays an especially big role in the celebration ofPasqua in Italy and here at the Italian Club of Dallas.

    PRESIDENT’S LETTER

    HELP! I need somebody. HELP! Now justanybody. HELP! You know I need someone, HELP!

    I’ve been honored to be your ICD President for alitt le over two months now. Your Board of directors,

     which includes Carole Stripolli, Joan Seley, FrancescaBarone, Barbie Gumin and Bill Van Hoewyk have spent countless hoursanalyzing the financials and operations of the club, looking at expenses

     vs. income and rev iewing available actions that may opt imize our bottomline. The springt ime is usually slow months for us so a snapshot of worsecase scenarios has kept us on our toes. To be very frank, I will say that

     we are finding that these are indeed very tough times for ICD. Thefinancial situation is bleak, but we’ve seen worse. We must not only getthrough these slow times but build a solid plan to survive, grow andflourish in the future.

    I need your HELP! Everyone’s HELP! The best way you can help,other than a direct donation, is to support the Club’s activities. OurEvents committee has some wonderful activities planned that areenjoyable for you and beneficial for the Club. To name just a few, aBake Sale in March, Easter Brunch, Mystery Dinner on April 9 and thealways popular “Limoncello Smackdown” on April 22. We’re finalizingour Guest Chef program with our first Chef, Morris Salerno, and a

     Wednesday night with a presentation from Bella Italia. In addition tothese great events, we are working feverishly to book one wine tastingper month. And there is more! Supporting any or all these would be

     wonderful . On a smaller scale, if you haven’t been to a Cena lately, comeon down! Order a desert and cappuccino with your meal. Those extrafew bucks make a big difference.

    Other than financial support in the form of donations and participation,another way to HELP is to get involved. The Club belongs to you, themembers. It depends on you to exist. HELP! We need Board andCommittee members. If you can commit a few hours a month and havethe desire to be involved in the Club’s future, consider applying to beon our Board of Directors. Don’t have much time but have some greatideas to pitch? Consider one of the Committees. We would love moreparticipation on the Events, Membership, Marketing, Financial and

    Operations Committees! If you have a special talent, then please HELP!

    Our Spring Membership Meeting is scheduled for Sunday, April 17, 2016at 1:30pm. If you care to have lunch, that will start at 1:00. At that timeI will give you a State-of-Club report and your Board will present actualand up to date financials. The floor wil l be opened up to questions. Restassured that that everyone will have an opportunity to speak and that allconcerns will be addressed and all questions will be answered.

     The future of the Club is now. HELP! We need somebody. HELP!Now just anybody HELP! You know we need someone! YOU.

    LET US CELEBRATE LIMONCELLO 

     A PRIL 22, 2016

    Here is a little history of Limoncello, in case you are interested. It is aliqueur mainly produced in Southern Italy, especially in the region of theGulf of Naples. It is also produced in Abruzzo, Basil icata, Sicily, Sardiniaand Menton in France and it is at least one hundred years old.

    Our Third Annual Limoncello Smackdown saw the beginning of a newreign as Barbie Gumin was crowned the new Queen Limonhead, afterLynn Barnard’s two year reign. The challenge has been called! Our lastthree competitions were tons of fun, with laughter, tastings, and serious

     judging. Think you have the best Limoncello ? Come join us for our FourthLimoncello Smackdown af ter Cena on Friday, April 22 when we wi ll onceagain have a competition to determine who has the best.

    In the interest of providing a level playing field for the tasting, we askthat all entries be clear lemon-based liqueurs (no crema/creams ororange, mango, etc. we’ll save those for another contest!). Also, Melissais providing a standard bottle for each entrant so that the tasting is t rulyblind. Please contact Melissa by April 1 and obtain your bottle before thecontest at (972) 931-9167 or [email protected] orCarrie Harris at [email protected]. We need to know in advance whois participating.

     What wi ll you win, should your Limoncello be judged the best? Theaccolades of your ICD friends, the right to say your liqueur is the best, andthe title of King or Queen Limonhead. What more could you want?

    I TALIAN F OLK  D ANCING FOR  CHILDREN

     There is a wel l hidden secret in the Italian Club and it is a class for Childrthat teaches the “ancestral ” dances from the various regions of Italy. MariaChobany and Carrie Harris have been doing this since the mid 80’s everySaturday morning at 10:30. The dances are part of the Italian heritageand also fun and entertaining. In the past the group has participated inperformances at local and state wide events. Dancing presents a side totheir Italian heritage besides language, soccer and food. The dancingexposes them to some of the Musical Art of Italy.

    Bring your children, any age, to “audit” this c lass on any Saturday mornin

     JOIN TEAM V IVA  L’ITALIA ; T AKE  A  S TEP FOR   A  CURE

     The ICD’s Team Viva L’Italia will join hundreds of walkers at AddisonCircle Park on Saturday, April 2 to raise money for blood cancer research ithe Lymphoma Research Foundation’s seventh annual Dallas Lymphoma5K walk. As part of the Club’s charitable outreach mission, Team VivaL’Italia wil l participate in this fun and lively fundraiser. Come don yoursneakers, put on an ICD T-shirt, or wear Italian flag colors, and join the Team at this worthwhile event! Registration will star t at 9:00 a.m.

     The LRF is the largest non-governmenta l source of research grants in thecountry for lymphoma research programs. It is committed to understandin

    lymphoma and its causes, and to finding effective treatments and curesfor this disease. Unfortunately, although the cancer rate overall has beendecreasing in the US, the incidence of lymphoma has been increasing. Onrelatively rare, it now represents about 4% of cancer diagnosis, and is thethird most common cancer in children. Help turn these numbers around get lymphoma on the run.     PIZZA RUSTICA ~ EASTER RUSTIC PIE

    Ingredients:

    For the Dough:• 1 Lb Flour• 2 Eggs• Pinch of salt• 1/2 Lb Butter, cold• Milk, as much as

    needed

    For the Filling:• 1 Lb Basket Cheese or

    Ricotta cheese

    • 3 Eggs +1 egg for theegg wash

    • 1/4 Lb Provolone -Sharp

    • 1/4 Lb Mozzarella• 4 Tbs Grated Pecorino

    cheese• 1/4 Lb Prosciutto• 1/4 Lb Sopressata• 1/4 Lb Mortadella• Fresh black pepper, as

    desired

    Directions:

    Prepare the Dough:

    In a stand mixer, add the flour, salt and the butter cut incubes. Let the flour absorb all the butter. Add the eggs andlet them mix well. Add enough milk (about 1/4 + Cups)until you have a firm ball of dough. Let it rest.

    Prepare the Filling:

    Cut all the meats and cheeses in small cubes and put in alarge bowl. Add the grated Pecorino and mix. Add the eggsand mix. Add the basket cheese and mix well. Add freshblack pepper as desired. Set aside.

     Assemble the Pizza Rustica:

    Preheat the oven at 350F. Butter and flour a 9” springformpan. Cut a little less than 1/3 of the dough and set aside.

     With a rolling pin, roll the large piece of dough in a thincircle. Place the dough over the springform pan so that itoverflows the borders of the pan. Add the filing and spread itevenly. With a sharp knife, cut the excess dough from aroundthe border of the pan. With the remaining dough, roll it thinand with a ravioli cutter, cut strips to make the criss-crossstrips and arrange them on top of the filling. Wet the strips

     with egg wash and bake for about 1 hr and 15 minutes.

    M ARCH W INE F EATURE

    Hello again wine lovers! This month we are traveling to the Abruzzo region ofItaly where Montepulciano is king! The region of Abruzzo is considered oneof Italy’s most mountainous areas, and the hillside vineyards that cover the areabenefit from plentiful sun exposure and cool breezes coming off the AdriaticOcean that ventilate the vineyards.

    Montepulciano is a red wine grape that produces a rustic type of dry red wine. Itis a very aromatic wine with velvety soft tannins. It is extremely food friendly andpairs beautifully with grilled lamb, veal, and pasta. It offers earthy notes as well asblackberries, blueberries and stewed fruits.

    Montepulciano is also one of the most widely exported grapes in all of Italy. Theproducer I chose for the club is Caldora Montepulciano d’ Abruzzo. Caldora is apartnership between visionary Valentino Sciotti and renowned winemaker Mar ioErcolino. It is one of the largest cooperat ives in the Abruzzo. Many of you havehad a chance to try this wine, and I encourage anyone who hasn’t to buy a bottleon your next visit. I have enjoyed this classic Ital ian wine on many occasions, andI highly recommend it!

    In I Am Livia by Phyl lis T. Smith, one of ancient Rome’s mostnotorious women tells her story. Married to a General Tiberius at

    age 14, Livia Drucilla found herself, at the Emperor’s insistence,divorced and remarried by age 16 to the Emperor AugustusCaesar, with her ex-husband General Tiberius giv ing her away inmarriage. For 50 years, Livia served as Augustus’s Empress andprincipal advisor. She knew untrammeled power and wealth. AsLivia and the Emperor had no children, Livia arranged for heroldest son from her prior marriage, Tiberius , to succeed to the

    throne after all possible rivals came to unfortunate ends. When the Emperor died, hehad Livia adopted into the Caesar family and renamed Julia Augustus. He bequeathedher with one third of his estate. Join us at 7:00 p.m. on Wednesday, March 30.

    April Biondi, wife of Joe Biondi has recently been seriously ill. She is recovering athome. Joe is the son of one of the founding families of the Italian Club of Dallas,Emilio and Vincenza Biondi.

    Rose Tiseo, wife of Ar turo Tiseo (many may recognize them from the “old days” ofthe Club) has been ill for a long time.

    Maria Hawkins-Agostini lost her Father, Doyle Hawkings on February 18. Wesend our condolences.

    Remember these families in your prayers. Give them a call or send a card to let
