Copper Brewing Project Rationale Summary of Operations Copper Brewing Company is a beer production business with an onsite taproom/patio and manufacturing facility at #1021851 Kirschner Rd. All beer sold on site will be produced on site with a 10 hL brewing system, accompanied by 10 hL fermenter tanks and brite tanks. The beer that will be produced will be high quality, approachable beer styles that will have a focus on drinkability. The market focus will be beer drinkers looking to make their way in to the craft beer market in search of a more approachable product that is brewed local and fresh. The brewery will provide 56 core styles of beer that will be sold in the taproom and for wholesale. The taproom will also provide multiple other styles on a rotating basis. Local ciders, kombucha and a few local rotating wines on tap will be offered to those who wish to come to the brewery but prefer to not have beer. Food will be provided in the tap room to satisfy liquor laws but will not be the focus of business. To provide better food service to customers, food trucks and catering services will be brought in to supplement food service. This allows for a rotating menu and provides customers with better choice and a chance to try local food services. In house food offerings are expected to be: popcorn, local peperoni and cured meats, warm pretzel served with in house mustard, seasonal fruits and veggie platters, locally baked sausage rolls and meat pies. The hours of operation for the taproom are anticipated to be: 12pm – 9pm Wednesday & Thursday 12pm – 11pm Friday 3pm – 11pm Saturday 3pm – 8pm Sunday Monday and Tuesday, the taproom is anticipated to be closed. The manufacturing side of the business will operate outside of the above hours, however, no liquor service to the public will fall outside of these hours. The hours of operation may change with seasonal demands and slowdowns. The taproom will offer board games and card games for patrons to play. These games will be kept in an easily accessible area, so people can choose to play what they wish. The games will be by donation (as much as possible), and any person is more than welcome to bring in their own game. Beer in the taproom will be offered in 16oz (473ml) sleeves, 44oz (473ml) flights, 64oz pitchers (1.89L) and 5oz (147ml) wine glasses for on site consumption. For take home or offsite consumption the brewery will offer 64oz (1.89L) growlers and 4 packs of 16oz cans (1.89L). Growler bottles will be available for purchase and growler fills be charged upon request. Beer for wholesale to local vendors will be provided in 4 packs of 16oz cans (1.89L).

produced will be high quality, approachable beer styles that will have a focus on drinkability. The market

Community Impact 

Copper Brewing is a family and pet friendly brewery. The intent is to provide a comfortable space for 

social gathering with a focus on community involvement and inclusion. The beer provided will be highly 

approachable, high quality, moderate alcohol beers brewed true to style. The brewery will be a place 

that everyone, no matter what experience or knowledge of the craft beer industry, will feel welcome to 

come in, enjoy a glass of their favorite beer and feel comfortable trying something new. The brewery 

will have an inviting and inclusive atmosphere. No one should feel out of place. The brewery will focus 

on local economy as much as possible sourcing ingredients from the Okanagan and British Columbia. To 

provide an educational experience, all staff will be required to know everything about the beer they are 

serving. What malts, hops, yeast and fermenting temperatures were employed to make the beer along 

with a knowledge of the history of the style of beer the customer is consuming. The goal is to have 

people leave the brewery knowing more about beer than when they came in, no matter what level of 

knowledge they have. 

The location at 1851 Kirschner Rd. is in a mixed used commercial area and the brewery plans to grow 

with the changing community as the Capri Landmark urban centre plan unfolds. The area is in need of a 

positive social gathering hub and as more residential units unfold in the area, the brewery will provide a 

space to fill this void. 

The brewery will make donations to local veterinarians based on a percentage of sales. These donations 

will go into a fund that will be used to supplement vet charges to lower income families that do not have 

the money to pursue certain treatments. There are too many families that must make the difficult 

decision of putting their family pets down for financial reasons, especially when the problem can be 

avoided with treatment. Copper Brewing is pet friendly and understands the impact pets have on 

families. This is our way of giving back to the community. 

It is the full intention of the brewery to offer a space for peaceful enjoyment. There are no residential 

buildings within the immediate vicinity of the brewery, however, if noise at all becomes an issue, it will 

be dealt with immediately and protocols will be implemented to eliminate future nuisances. Copper 

Brewing wants everybody to be able to enjoy genuinely good beer in a respectable environment.
