    Hello and welcome to the March edition o

    Lets eat! Magazine.

    This month we delve into the greener

    side o Bali and take a detailed look at thosein the F & B industry who are striving to make

    a dierence in terms o environmental and

    social sustainability. At Desa Seni, a boutique

    wellness resort in Canggu (p 40) we wander

    amidst ourishing organic gardens and help

    to pick resh vegetables or our delicious

    lunch. At Kopi Kultur at the Wisnu Open

    Space in Kerobokan (p62) we fnd a group o

    like-minded Balinese businessmen who ocus

    on empowering the local community. We

    sip at smooth organic coee and dig into an

    impressive nasi campur served in a bamboo

    pole. We also join an early morning yoga

    session at Uma, Ubud Resort (p46) ollowed by

    a healthy breakast, them spend an aternoon

    with Nilawati at Sari Organik to hear her unique

    take on the organic movement in Bali.

    Our new, monthly excerpt, Lets eat! culture

    ocuses on the ritual o Penampahan Galungan

    which takes place prior to the important Hinduestivals o Galungan and Kuningan that occurs

    at the end o March.

    Kapur Sirihs signature dish is Sop Buntut, oxtail soup

    combines perectly with moisture rich aloe vera. It eels wonderully light and sot and I am wrapped in a sarong while

    At the end o last year Bali

    received an award rom the

    Ministry o Agriculture in Jakarta

    or its successul organic program

    Simantri. The program oers cash

    and technical assistance to armers

    groups who are willing to convert

    to organic arming methods and

    to use alternative energy sources.

    Accepting the award, Bali Governor

    Made Mangku Pastika spoke o

    the islands eorts to become a

    green and eco riendly province.We hope someday tourists will

    come to Bali not only or the

    culture and beautiul nature, but

    also or healthy living with organic

    products, he said. Currently 325

    armers groups are afliated with

    Simantri, but the governor hopes

    this will rise to 1,000 groups. With

    approximately 100 armers in each

    group, it would mean 100,000

    armers were practicing organic

    agriculture. I think organic Bali is

    not just a dream, Pastika he says.

    Increasing numbers o restaurants

    on the island are turning to the

    organic arms o the mountainous

    hinterland to source produce,

    some such as Gado Gado even

    have their own arms. Others are

    incorporating sustainable social and

    environmental practices in every

    aspect o their business, including

    eco riendly bamboo buildings. The

    rustic, open air restaurant Bodag

    Mailah sits in a sea o rice felds in

    the hills o Ubud, its ounder, Nila

    was at the oreront o the organic

    movement in Bali. Horrifed by the

    heavy use o pesticides, she told

    armers, I you give rice something

    to grow ast, you will also die ast.

    She decided to show the way by

    creating the S ari Organic Centre,

    basing its practices on air trade

    standards. The arm specialises

    in growing organic vegetables

    and rice and also produces jams,homemade wines and cheese, all o

    which are available in Bodag Mailah

    which adjoins.

    The guiding philosophy is to show

    that organic ood is not limited to

    greens and leaves. Founder Heinz

    Alberti, a naturopath and che

    the boutique resort, Desa Seni is

    a model or sustainability, with its

    vintage wooden houses flled with

    antique urnishings and extensive

    organic gardens that supply 80% o

    the restaurants produce. We want

    to support the local community

    by working with as many small

    local businesses as possible, says

    ounder Tom Talucci.

    Up in the hills o Mambal are two

    urther, magnifcent examples o

    sustainability. The Sakti Dining

    Room at the inspirational Five

    Elements, Puri Ahimsa, is a show

    piece or bamboo design, a ree

    owing structure overlooking

    the river and rainorest. The raw

    dining menu is one o the most

    stimulating and inventive I have

    ever experienced. Talented Che

    Made Punatha tells me, We select

    the fnest organic ingredients tohonour the earth and ourselves.

    Nearby, the impressive Bamboo

    Chocolate actory makes organic

    raw chocolate rom cacao grown

    on the island. Rising rom a tropical

    orest this is the biggest commercial

    bamboo structure in south east

    asia. Long beore deciding

    to build a chocolate actory in

    Balis heartland, Big Tree arms

    were dedicated to working with

    local armers to produce organic

    ingredients such as salt and pepper,

    vanilla, cashews and honey. When

    it came time to build the chocolate

    actory, bamboo was the logical

    choice, claiming, Its sustainable,

    beautiul to look at and soothing to

    work in.

    There is still a long way to go in the

    re-greening o Bali, but a step in

    the right direction is always a good

    With a name like Glove and Stove you could be

    orgiven or thinking this was a pub, rather than a side

    walk restaurant specialising in ribs. However, there is a

    certain air o English pub gets a tropical makeover inthe dcor, with a dark red eature wall at the back hung

    with paraphernalia, like a Jack Daniels blackboard,

    ornate mirrors and an illustrated sign Beer, helping

    white men dance since 1867. Sloping ceilings are

    draped in creamy abric, and long wooden benches

    provide seating.

    The amily run Glove and Stove is cute and cosy with a cheerul

    atmosphere. Manager Dina is all smiles as she welcomes us and

    is soon plying us with ood. The Pork Ribsare deservedly popular,

    tender and juicy and smothered in a smoky slightly sweet

    barbecue sauce, with sweet chili and hot chili sauce on the side.Other items cooked on the sidewalk grill include sausages and

    lamb chops. The restaurant supplies all the meat or the Arican

    Barbecue at the Night Saari Journey at Bali Marine Saari Park,

    so we know we are in good company. I you have spent the day at

    the Saari Park hold on to your wrist band and you will get a 25%

    discount at Glove and Stove.

    Aside rom grills, the menu oers international avours,

    rom Japanese dishes such as Seafood Teppanyaki, to

    Chinese Peking Duck, and western avourites like Roast

    Turkey. We choose Chicken Satay rom the Indonesian

    section, a good dish with chicken coated in a spicy

    peanut sauce, and ollow with a Green Burger, a tasty

    vegetarian burger made with deep ried tempeh, egg,

    lettuce and tomato, with ries on the side. For dessert

    there is a generous Banana Split, and dish o vanilla ice

    cream flled with crushed almonds, known as Crunch the

    Nutsserved in cute bowls shaped like an ice cream cone.

    I also try my frst everSoursopjuice which tastes a little

    like creamy pineapple. Soursop has been attributed

    many health benefts and Dina tells me that drinking a

    concoction rom boiled leaves helps fght cancer cells.

    Her uncle, Jasin, started the restaurant last year and has

    also produced an interesting HD video guide to Ubud

    which Dina happily plays or us on the big plasma screen.

    An avid walker Jasin has flmed his avourite trails around

    Ubud, as well as the evocative rock-cut temples o Guning

    Kawi, the art and crat stalls o Tegallalang, and some o

    the villas and resorts in the area. It makes great watching!

    Ive always been curious about the world, explains Che

    I Made Runatha who was born in Tabanan but spent most

    o his adult lie abroad. As soon as he graduated rom Bali

    Tourism School, he went to work in Makassar. Returning

    to Bali in 1988 he joined Sahid Jaya Hotel as Che de

    Partie. I worked or Holiday Inn or seven years and they

    ew me everywhere rom China to Abu Dhabi or cooking

    workshops, says Che Runatha. In 2009, he was signed

    up by the management team at Fivelements Puri Ahimsa,

    a wellness and healing resort in Mambal, and sent to train

    at the Living Light Institute Caliornia, where he learned

    everything there is to learn about preparing raw ood.

    So when Sakti dining room opened at Fivelements, an

    Executive Che was in place, who is not just in love with

    vegetables but ully devoted to experimenting with raw

    ingredients. The body can heal itsel when given theright nutrition and care. Ater all, we are what we eat,

    he says.

    Karangasem-born Che I Nyoman Rai has always ancied

    himsel in white uniorm, so it was no surprise that he

    tried to enter the medical proession ater graduating

    rom high school. I tried a ew times but always ailed. I

    took it as a sign and decided to be a che instead. Ches

    wears whites too, right? says Che Rai jokingly (although

    he points out that in his current job his uniorm is black!)

    Ater graduating rom Balinese Tourism School on 1993,

    he worked various resorts in Bali beore joining Uma

    Ubud. Here he ound his passion or raw and healthy

    ood as the Executive Sous Che beore being transerred

    to its sister resort, Como Shambala. I decided to hop

    on board the Plataran team as the Executive Che in

    2012. The opportunity to develop my own creation o

    healthy raw ood is exciting, explains Che Rai while

    garnishing a plate o tamarillo jelly with strawberries. Hisnext challenge: the pre-opening o Patio Restaurant at

    Plataran Ubud in April 2013.

    Mujung Warung, or rice storage in old Balinese. I

    also have a plan to open a ull scale ood processing

    kitchen in Penestanan where we can cater or larger

    unctions and events.

    a: It is very exciting now, especially here in Ubud.I hope to see more organic arming techniques put

    into practice, like using compost to grow plants

    patiently and naturally. We got it right the frst time in

    Bali, so why not put the old ways into practice again?

    I still remember a time when I didnt even need to

    wash ruits and vegetables because they were 100%

    pure and chemical ree. The most important thing,

    and my biggest wish is that more restaurants will

    provide their customers with healthy and nutritious

    ood.

    2 teaspoons dried shrimp paste (terasi)

    cup palm sugar

    1 teaspoon salt

    1 tablespoon tamarind

    GaDo-GaDoINDONESIAN VEGGIE MIX SALAD

    MetHoD

    For the sauce: grind salt, dried shrimp paste, birds

    eye chilies, and palm sugar with a mortar and

    pestle until theyre smooth. Add fnely ground-

    roasted peanuts and mix well. I you use peanut

    butter instead, add less salt. Mix tamarind with

    cup o hot water in a small bowl. Add the juice to

    the sauce. Add cup o water and mix it well, put

    aside.

    Transer the blanched vegetables to serving plates .

    Add sliced hard-boiled egg and pour the sauce on

    top. Garnish with ried shallots, shrimp or emping

    crackers. Serve with steamed rice or lontong

    (banana wrapped rice cake, which can be purchased

    in traditional markets and ready to eat.)

    in an elegant glass siphon right at the table, and we sip

    the resulting smooth rich brew rom dainty glasses. He

    makes a great Cappuccino too, and there is also coee

    rom Ache, Timor and Papua, as well as Bali Rustica

    and Bali Peabody, all o which can be spiced up with the

    addition o cloves, cinnamon, ginger or cardamon.

    The menu oers Indonesian avourites such as Campur

    and Rendang as well as grills and pasta dishes. The Nasi

    Bamboo Kopi Kulturis impressive rice and vegetables

    steamed in a long piece o bamboo which is split open at

    the table releasing a wonderul aroma. Hal is flled with

    nutty 9 grain rice, the other a light and ragrant mix o

    colourul vegetables, fsh and chicken. The pies are also

    good especially the Apple with lots o cinnamon.

    The gallery currently has an interesting exhibition by

    the Eco deenders #Kudamacan, a local cyclist group

    who are passionate about protecting the environment,

    while the library shelves are flled with titles in Bahasa

    Indonesian, English and other languages. Set up as

    a space or the community, Wisnu Open Space has

    developed into quite a gathering place, a true melting

    pot o musicians and artists including locals, expats,

    and increasing numbers o tourists who are looking or

    cultural insight. We are also in luck as the Black Valentine

    community events gets underway just ater sunset and

    some great local bands take to the outdoor stage to belt

    out some good old ashioned rock n roll.

    What started as a simple restaurant review turned intoan inspirational experience, marked by excellent coee,
