Bring the Heat

Pepper Jack Queso

The rise in popularity of Latin and Asian cuisines has brought with it a growing love of chiles and fiery

flavors. So don’t be afraid to bring the heat this year with everything from the sweet heat of jalapeño

margaritas to giving a classic like mac-and-cheese a spicy kick.

Ingredients

1⁄2 gal Hot water (180°-190°F)

Crushed red pepper flakes (optional for additional heat)

1 bag Foothill Farms® Pepper Jack Cheese Sauce Instant Mix (#322T)

1 lb Shredded Extra Melt White American Cheese

Preparation

1. Pour hot water and red pepper flakes into mixing container.

2. Pour Cheese Sauce Mix (15.5 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.

3. Add cheese and whip until melted. Serve with chips.

Flavor Without the Fat

Parmesan Grits & Grilled Shrimp

Consumers continue to be health conscious, but what this means exactly, varies from diner to diner. That’s why

many restaurants are now offering a DIY approach with options for everyone from vegans to gluten avoiders to

low-fat eaters, switching out dishes as health fads come and go.

Ingredients

4 1⁄2 qts Hot water (180°-190°F)

9 c Instant grits

1 bag Foothill Farms® Classic Alfredo Sauce Instant Mix (#090T)*

108 16/20, peeled & deveined, tail off, raw Shrimp

1 1⁄8 cups Foothill Farms® Bourbon Sauce Instant Mix (#S075), prepared per package instructions

Preparation

1. Pour hot water into mixing bowl. Add grits and Sauce Mix (19 oz) to water while vigorously stirring with a wire whisk. Stir until well blended. Allow to sit 5 minutes to firm.

2. Lightly spray shrimp with pan spray. Grill to order.

3. Top 1 cup grits with 6 shrimp and drizzle 1 Tbsp of Bourbon sauce.

Going (More) Global

Sweet & Spicy Thai Mayo Sauce

The ethnic cuisine trend continues to evolve with dishes from far-flung locales appearing on mainstream

menus as well as ethnic ingredients finding their way into non-ethnic dishes. Demand is up for sophisticated

and adventurous items, including authentic and regional explorations.

Ingredients

1⁄2 gal Hot water (180°-190°F)

1 bag Foothill Farms® Sweet Thai Chili Sauce Instant Mix (#V442)

2 1⁄2 c Mayonnaise

Preparation

1. Pour hot water into mixing bowl. Pour Sauce Mix (14.1 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.

2. Add mayonnaise and mix until well blended.

3. Allow to cool. Serve as a condiment on a chicken sandwich with julienne green onions and carrots and thinly sliced cucumber.

Preparation

1. Using a food processor or blender, puree mangos until nearly smooth.

2. In a large mixing bowl, add pureed mango, minced peppers and Ranch Dressing Mix (3.2 oz) to buttermilk. Mix well with wire whisk or electric mixer at low speed.

3. Add mayonnaise and continue mixing at low speed about 2 minutes until smooth.

4. Refrigerate 3-4 hours so dressing will thicken. Stir before using. Store in refrigerator.

NOTE: This dressing can be made "light" or "fat free" by using 3 qts. buttermilk and 1 qt. light or fat free mayonnaise.

Reinventing Ranch

Mango Habanero Ranch

All-American and well-loved, the unique flavor of ranch has ushered it into today’s spotlight. With creamy

dairy and notes of fresh herbs, it’s a familiar starting point for flavor innovation. Just add chiles, fruit,

sriracha, avocado or even regional barbecue sauce. The possibilities are endless.

Ingredients

1 qt Frozen mango chunks1⁄4 cup Deseeded, minced habanero pepper

1 qt Buttermilk

1 bag Foothill Farms® Ranch Dressing & Seasoning Mix (#V400 or #V402)

1⁄2 gal Mayonnaise

Whole Grain

Cilantro Lime Whole Grain Brown Rice

Whole grains are flourishing today—from familiar basic brown rice, to super grains that are a bit more

exotic, such as quinoa, amaranth, millet, buckwheat, and beyond. Enhance the global appeal of these

grains with ethnic flavors.

Ingredients

21⁄2 lb Rice, brown, long grain, parboiled

1 bag Foothill Farms® Cilantro Lime Rice SeasoningMix (#S162)

31⁄2 qt Hot water (180°-190°F)

3 oz Butter (optional)

Preparation

1. In a full-size hotel pan, combine hot water, rice, Rice Seasoning (6 oz), and butter. Stir well.

2. Cover with foil or pan lid and bake in a 350°F convection oven for 40-45 minutes or until water is absorbed.

Heirloom Tomato Salsa

The trend of menus featuring locally grown and sourced ingredients is evolving in 2015 to hyper-local. It’s all

about ingredients that are artisan, house made and farm branded. Tell an authentic story that makes dishes

special by using local ingredients in your condiments, sauces and dressings.

Ingredients

6 1⁄2 lb Diced heirloom tomatoes

1 bag Foothill Farms® Salsa Seasoning Mix (#V425)

Salt (to taste)

Preparation

1. In a large bowl, add tomatoes and Salsa Seasoning (5.8 oz). Stir until well blended. Cover and let sit at room temperature for 30 minutes.

2. Add salt to taste. Stir prior to serving. Store in refrigerator.

1 bag Foothill Farms® Beef Gravy Instant Mix (#325T)

12 lb Fries, IQF

48 oz Cheese curds

Preparation

1. Pour hot water into mixing container. Add Gravy Mix (14 oz), into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and gravy is smooth.

2. Cook 6 oz of fries to order and put on to serving dish. Top with 4 oz of gravy and 2 oz of cheese curds.

Mocha Frappé Smoothie

Today’s operators offer a bevy of beverages to stand out from the crowd. Made with exotic fruits, energy

boosts, candy-flavored liquor, and coffee, smoothies can play across the menu as a drinkable snack, a fun

add-on, or a meal replacement. Create a drink destination that leaves your patrons thirsty for more.

Ingredients

1⁄2 c Cold-brewed, medium-roast coffee1⁄4 c Whole milk

2 Tbsp Dark chocolate sauce

1 packet Frostline® Simply Smoothies™ Base Mix #D620-Y6010 (or 2 scoops of #D620-B5010)

1 c Ice

Preparation

1. Put coffee, milk and chocolate sauce in blender. Add Smoothies Base Mix. Then add ice. Blend until completely smooth; approximately 30 seconds. Finished smoothie should be smooth and thick with no detectable pieces of ice.

2. Pour into serving glass and top with whip cream and drizzle with more dark chocolate sauce.
