A deep respect for the site’s authenticity and environment were the driving factors behind the Coquillade estate’s major restoration and construction work, both architec-tural and ecological.

The buildings have been developed according to eco-logical standards (with energy reduction) and a geother-mal system (heating and cooling through the ground). Multiple everyday gestures also enabled Coquillade Village to obtain the European Ecolabel in 2012.

THE HOSTSSwitzerland natives Carmen and Werner Wun-derli set down their roots in the Luberon several years ago. It is on this ground that they dedicated all of their heart and energy to create Coquillade Village.

THE STORyThe oldest walls date from the 11th century and, according to legend, the ham-let was founded by the Cistercian monks of the Abbey of Sénanque. Two centuries later, the vines began to be developed.

Passionate about architecture and design, Carmen and Werner R. Wunderly cleverly blend big names, such as Frey, Manuel Canovas and Rubelli for ma-terials, Starck for sanitation, local craftspeople for the woodwork, natural stone, coating, or the famous chandelier brand, Mathieu Lustrerie.

Decorated in a contemporary and warm style, while respecting the Provençal spirit, the rooms feature natural materials: exposed stone walls, paintings in the ocher colors of Roussillon.

Exceptional products such as spring vegetables, herbs, flowers and spices enrich their menus with surprising flavors.

We are what we eat, and what we eat contributes to our health. As a result, the Chefs’ healthy cooking uses the herbs and extra-fresh vegetables grown in the vegetable garden, and the best products from partners and local producers. Subtly combining their respect for fresh produce with creative recipes, they create a cuisine that is authentic, delicious and light, based on our earth’s treasures.

The Chef takes his clients on a walk through the vegetable garden that allows them to discover the vegetable flavors and magnificent terroir of the Luberon. Its Mediterranean-accented cuisine is straightforward, constantly creative, and plays with seasonal products and care-fully selected aromatic herbs. The estate’s wine list features Aureto wines among a larger selection of recognized wines.

LE GOURMETGastronomic restaurant

THIERRy ENDERLIN Le Gourmet ChefAfter more than 12 years alongside Michelin-starred Chef Alain Ducasse, Chef Thierry Enderlin proved himself at the Gadus restaurant in Spain, where he received a star in the Michelin guide, and in Thailand, with the gourmet restaurant Bonjour, for which he obtained a 10 out of 10 rating. For him, cooking means respect for French cuisine tradition, and at Le Gourmet he revisits the great classics of our region to delight client’s taste buds.

In a relaxing vacation setting, Il Ristorante brings a traditional cuisine that offers antipasti buffets, crisp raw vegetables and delicious pizzas. In the evening, the restaurant offers refined and sophisticated Ital-ian cuisine. With a magnificent view of the Luberon from the terrace, clients can feast while enjoying the view.

A mix of modernity and poetry, Le Bistrot offers a breathtaking view of the valley. This convivial space shares a gourmet, generous cuisine with its guests. The summer version of Le Bistrot, Le Jardin dans les Vignes, opens onto an exceptional panora-ma in the heart of the vineyard. Peaceful and immersed in nature, the restaurant is terraced, or “en restanque”.

The menu changes regularly and the Chef cooks local and regional products from his vegetable garden. On the menu: extra-fresh products and flavors of the South. During the summer, the dishes follow the rhythm of the garden: a wood fire grill for Mediterranean wild fish and organically-farmed meat, accompanied by seasonal vegetables. Along with the seasonal menus, clients can also taste the wines of the Domaine Aureto.

Featuring the famous Swiss brand BMC, the Cycling Center is a 200m² showroom where clients can rent racing bikes, high-end mountain bikes for adults and children, road bikes, electric bikes, children’s bicycles, and carriages for the smallest children. Clients can also buy bicycles, equipment and accessories such as helmets, clothing and energy products. Finally, the workshop also offers services such as adjustments, maintenance and bicycle repairs.

VineyardsTHE AURETO

Nested in the heart of the vineyards, Aureto offers a unique panorama of the Luberon, its ocher colored villages and the Mont Ventoux. Surrounding Coquillade Village, the Aureto Vineyards have seen generations of local vineyards succeed each other in procuring wine since the 13th century.

Located near Roussillon, on the famous Route des Ocres, Coquillade was a place where migrating birds passed through, one of which being the crested lark (Couquihado in Provençal), which has lent its name to the establishment.

Between Luberon and Ventoux, the Aureto vineyards feature 36 hectares of vines in the heart of an authentic and protected environment. 28.5 hectares are located within the Ventoux appellation, six hectares in Luberon, and the remainder in the Indi-cation Géographique Protégée Vaucluse. The clay-limestone soil, with a mostly southern exposure, expresses itself in the wines.

In 2007, when the vineyard was restarted, the vines were completely restructured. Today, emphasis has been placed on trellising and renewing the vineyard (weeding, planting) in accordance with the rules of well-reasoned agriculture. The use of herbicide has been virtually eliminated, so the soil is worked mechanically.

THE SUBTLE MARRIAGE Of Ventoux and Luberon terroirs

AURéLIE JULIEN Cellar MasterOriginally from Apt, Aurélie Julien discovered the world of wine during a holiday in Burgundy after which she decided to learn all she could about oenology. Driven by a relentless passion for wine, she obtains a certificate in Viticulture and Oenology at the Lycée Macon Davaye, a Masters of Science of the Vine at the Institute Jules Guyot in Dijon, and a Degree in Oenology from the Faculty of Pharmacy in Montpellier.

With her diplomas in hand, she spent two years expending her knowledge in wine-making in France (Cave de Sylla in Apt and Cave de Tain l’Hermitage) and abroad (New Zealand and Argentina), before joining Aureto in 2009, alongside Werner Wunderli.

Cellar Master Aurélie Julien and her team invite visitors to discover the winemaking cellar, located a few meters from the hotel and built two-thirds underground.

Aureto offers courses of winegrowing paths to discover the whole vineyard and its excep-tional points of view.
