SOUND BITES: STUART FOX, HEAD CHEF

Tell us about the Manchester food scene

"It’s booming and very quickly becoming the go-to city outside of London to experience amazing food and service, and it’s so diverse which is really exciting".

What’s your favourite thing on the menu?

"My favourite ingredient has got to be the chicken, simply cooked in our rotisserie. I have used Johnson & Swarbrick Goosnargh chicken throughout my career and their founder Reg Johnson was a celebrity amongst chefs. It’s so important to have an understanding and knowledge of where your produce comes from".

The Sunday roast is pretty popular here too, describe your dream roast

"Simple! Roast rib of beef on the bone, from our award-winning butcher Aubrey Allen,

crispy roast potatoes cooked in beef dripping and lots of garlic and thyme. Seasonal green vegetables, Yorkshire pud and a rich gravy made from the juices from the meat and a good amount of red wine."

CRAFT BAR MENUAVAILABLE FROM 11AM

A TASTE OF MANCHESTER THREE RIVERS GINAh, gin. If there’s one

thing we all agree on here at Store Street

Exchange it’s gin. We’ve been expanding our menu with some of the finest gins on offer to reflect our love and respect for the juniper-tinged tipple.

Needless to say, we also love Manchester and it’s vibrant heritage, so we’ve scoured the city to find the best gin it has to offer, and we think we’ve found it.

The multi award-winning Manchester Three Rivers Gin is named after Irwell, Irk, and Medlock, the three rivers which fuelled Manchester’s illustrious industrial revolution, and is a smooth and satisfying spirit. Turning its back on boisterous citrus flavours, this incredibly smooth gin instead infuses velvety vanilla, cinnamon, almond and oats rounding out on a long spicy black pepper note. Altogether creating a well-balanced

and rather drinkable finished product!

Master distiller Dave Rigby makes the gin in Manchester city centre’s first ever gin distillery, the City of Manchester Distillery, in the Green Quarter, using a beautiful 450 litre custom-built Still called ‘Angel’, which perhaps explains why this divine drink is so heavenly.

GREAT, BRITISH AND CLASSIC. THE STORY OF THE SUNDAY LUNCH

There are few things as quintessentially British as a Sunday

roast with all the trimmings and it has been enjoyed in UK households for many centuries – it’s origins as we know it today can be found in William Kitchener’s best-selling cookbook ‘The Cook’s Oracle’, published in the early 1800s. This food bible – which also contained an early recipe for crisps and several recipes for tomato ketchup, gravies and sauces, is also full of recommendations for a healthy diet such as three kilos of meat, two kilos of bread and a pint of beer to be consumed daily.

Kitchener recommended roasting your preferred meat on a spit or other hanging devices for four hours on a Sunday, which in most cases demanded a rather sizable fireplace. For those without the means and who would be unable to cook it in their

insignificant fireplaces in any case, Sundays offered an alternative. As the day of rest, bakers would not be baking, so regular townspeople could pop their more modest cuts in the cooling bread ovens on the way to church and pick them up later.

Thanks to the baker’s ovens, many people were able to gather their families to eat together after church and hence the Sunday lunch as we know it was born. Nowadays things are much simpler, as you can come here to Store Street Exchange and have our chefs rustle you up a delicious lunch while you get to work on your daily beer.

versions also available.

GOT BEEF? ALL ABOUT AUBREY ALLENQuality is important to

us, and we know it’s important to you too.

That’s why we source our fresh ingredients from the finest suppliers in the country.

The award-winning butchers Aubrey Allen – named after the man himself - is no exception. Used by Michelin star chefs across the UK, their meat is ethically sourced and prepared by a team of master butchers.Allen, an orphan who was born in the back of a butchers

shop, founded the company in 1933 in Coventry. He was an innovative businessman and cared deeply about the profession. Following advice from several well-known chefs, Raymond Blanc included, he travelled abroad to learn more about butchery, and returned ready to impart his new-found knowledge.

Today the team still follow Allen’s philosophies of integrity, education and experience. Many have worked at the butcher’s for

more than a decade, and in recent years they have received many accolades, including Butcher’s Shop of the Year and Britain’s Best Butcher’s Shop.

These days, their natural grass-fed beef is sourced from areas of outstanding natural beauty where it can really thrive and is matured to ensure it maintains its natural goodness.

The team says they still follow Allen’s mantra that if the product comes first, the

quality speaks for itself, and having tasted their delicious meat we couldn’t agree more.

BREWING ON THE BRIGHTSIDE

What good would the Store Street Craft Bar be

without some cracking local craft beer on the menu? Well, fear not, because Manchester’s award-winning family-founded microbrewery, Brightside, is now a fixture on our craft beer menu.

The Radcliffe bakers turned beer-makers ditched the bread back in the 2009 recession, instead embarking on an exciting new endeavour. Of course, perfection takes a while

and it was two years after their first efforts with a home brewing kit that they achieved a significant breakthrough.

Since then, Neil and Maxine Friedrich and their grown-up children Lance and Carley haven’t looked back. They produce fourteen beers, have won numerous awards, and you can now find their products in many bars, pubs and restaurants across the country – including ours.
