re you feeling like I’m feeling? Like a little excited and a little like we’re almost out of

the woods and getting close to launching those boats for lazy sunset glides, opening up the pools, setting

out the lawn chairs and just going “ahhh…” So here we go, off on another collection of Lakeside adventures and the stories of the people who love Logan Martin, who live there and some of the interesting things going on in and around our own little para-dise. Photographer extraordinaire Wally Bromberg shares with us some of his fabulous lakefront photography. You may be more familiar with his well-known portrait work, but I’m here to tell you, Wally has the same out-standing touch taking photographs of the lake and its interesting inhabitants. As for our food section this month, we went Irish, it’s time to celebrate this segment of our heritage.Lisa and I both claim Irish roots, so maybe it’s a little self-serv-ing, but I do think even if you’re not the least bit tied to the Emerald Isle, you’ll like these dishes. My Irish stew was rich and everyone who tried it wanted more and Lisa’s Irish style potato pancakes were great but we wanted to add just a little more zest and made our recommen-dations. I actually made (well, with a little help from a friend!) an Irish cheesecake recipe that you’ll love. We’ll tell you about the plans in the works for Club Caribe on the Lincoln side of the water, where there are lots of things to look forward to as far as lakeside dining goes. Our kayaker took to the water from the River Oaks area, heading out on an unusually warm late February day to find lots of fishing fans out taking advantage of the day. And, you’ll see the whopper of a cat caught by Robert Garner of Cook Springs that will be used for a church fundraising din-ner.I’ll show you the rebuild done by one extra handy man Jack Pounders in Riverside, after the April 27 tornadoes sent a huge tree smashing through the home he shares with his wife Julie.

A It demolished the sunroom Julie especially enjoys for her bird watching, and Jack and Julie got together on the outcome they wanted and did it ever all come together. You’ll meet the winners of the annual Wild Game Cook-off, many of those who enter fish the waters of Logan Martin Lake for their ingredients. So whip up that cheesecake from this issue, have a spot of Irish coffee and enjoy this issue of Lakeside Living. We hope you do, as much as we enjoy gathering up the stories and meet-ing the people who make this lakeside community the unique place it is! And remember, please keep your story ideas and input coming! This is a magazine devoted to the people and things that make Lakeside Living so special!

he fish story wasn’t about the one that got away, it was about the one that was in the boat – or should we say that took up the boat.

“We’ve been getting some big ones on jugs,” said Nick Souleotes of Lincoln.

His fishing partner, Robert Garner of Cook Springs, reached inside the large plastic con-tainer with both hands.

When his hands surfaced from the cooler, Garner gripped two large catfish.

The men said they catch and bait their trotline with shad.

They had only been out for about an hour and a half that morning.

There was finally a break in the weather, and the sun appeared in the sky – no clouds, no rain, at least none that day.

The nice sunny day appeared to really bring out the anglers to Logan Martin Lake that morning.

Nick and Robert were the first of many fishermen I met while paddling my long yel-low kayak that Friday.

I left from Pat Tucker’s lake home in River Oaks and paddled south down the main river channel, on the St. Clair County side of the lake.

When I arrived at Pat’s home her “pooches” lined up at the gate to greet me, more like to check me out. I had dropped my boat off there the day before.

Pokey, who helps Pat, got the pack of dogs inside the house so we could open the gate.

I loaded my stuff into my kayak and was on the water in a matter of minutes.

It wasn’t long after I left the shore that I met Nick and Robert. The two fish Robert held in his hands were nothing com-

pared to what he was about to show me. Robert picked up a long graveling hook and lowered it into

the plastic container. He struggled, but finally lifted the brute up with the graveling

hook. There it was – a real monster cat. It looked like the Loch Ness monster, maybe a 50-pounder or

more, I thought.“He’s a limit fish,” Robert said. Nick said anglers can only land one fish 34-inches or longer.

This giant was half the size of Robert, so I would say, it was well over the 34-inch mark.

“We can catch one more (this size),” Nick said. The anglers said they were catching fish around boat ramps

and piers from their 20 or so “noodles.” They set the bait anywhere from 2 to15 to16 feet deep.Nick and Robert say they are donating the fish they catch for

a fund-raiser dinner for Prescott Baptist Church. That’s mighty admirable. It was good meeting Nick and Robert, but I had to move

down the river. We said our goodbyes, and I continued on my trip.

It was a gorgeous sunny day. The wind was calm, and the tem-

Ronnie Phillips and Joe Gillen try their luck at the Sundance Marina fishing pier.

perature was warm. Further down the river, I also met Mark Coggin of Moody,

an avid bass angler. Mark hunts in the fall and winter, but he fishes a lot in the spring.

While we were talking, his cell phone rang.“That’s my partner,” Mark said. “I have to go pick him up.”I saw a lot of birds on this trip, mainly the large herons and

black coot ducks. There was a big cover of coots in this one slough I paddled

into. It’s neat to watch them take off when you get a little too close.

The coots looked like they were on tiptoes moving across the top of the water, splashing a path away from me. It’s a beauti-ful lakeside sight, and there are plenty of beautiful sounds and sights on the lake.

I was finishing my trip at Sundance Marina when I met Ronnie Phillips of Talladega and Joe Gillen of Camp Winnataska.

The two were fishing on a pier at Sundance Marina.Joe said it was only the second time they fished there. “I caught about 17 cats,” Joe said. No wonder the two men were back fishing on the pier, enjoy-

ing a peaceful, wonderful day on the lake.I can’t wait to get back there myself, and maybe on my next

trip I will have some time to see if I can catch dinner. So until then have a safe and wonderful time on the lake.

With Wally, the Work IsAll WorthwhileFrom shooting portraits to taking pictures of Logan Martin’s beauty, Wally Bromberg does it all

allace Bromberg is the man behind the camera. After taking countless pictures, whether on

Logan Martin Lake or in his Pell City studio, Bromberg says his hobby is turning into a fulfilling

career one click at a time.Bromberg first took an interest in photography at 15 years

of age.“I liked photography. I thought it would be neat to take it

and develop it in a dark room,” Bromberg said.He remembers his first camera, an Argus 03.“I got my first camera at a garage sale,” Bromberg said. “It

was considered a sophisticated camera. It was popular in the 40s and 50s.”

Although he did not have a darkroom of his own, he used those of friends and neighbors.

“I went to Auburn and I had an allowance I was living on and I saved every penny I could and I got a Minolta SRT101 camera, a 35 mm,” Bromberg said.

Soon after, he got paid for his first roll of film, and spent most of all of his free time in the darkroom in Auburn’s stu-dent union.

“You’ll be immersed in it and you’ll do a print and it may not be what you want,” Bromberg said. “Next thing you know, the sun is going down instead of going up.”

After college, Bromberg went into the family business, National Woodworks, and put his photogra-phy on hold.

Bromberg had a brief stint in insurance sales and spent some time in politics before the family business closed.

“I was like ‘why not resurrect something you love and something you have skills in?’” Bromberg said. “I’m enjoying what I do now more than anything in my whole life.

“This area has been very good to me.”

Since 2009, Bromberg has shot everything from personal por-traits to prom and student photos in his studio in Pell City.

“I’m really a minimalist,” Bromberg said. “When I do a por-trait, I really like to key in on my subject.

“I also try to make the portrait like I see them. I try to catch the subject’s personality.”

Bromberg said he likes to first study the subject, their face, their characteristics, and mannerisms.

“Most people are not comfort-able when they get in front of the camera, they’re very cautious and very critical,” Bromberg said.

However, Bromberg said he always makes sure that the person is able to see themselves in their portrait.

“I think that’s what’s so impor-tant in portraiture,” Bromberg said.

Children have proven them-selves to be his favorite sub-jects, and the photos he takes of them serve as a way to capture a moment in time.

“What they provide for their families is being able to bench-mark the growth and maturity of that child,” Bromberg said. “That’s

“We Make Dirt Look Good”

why I love my job, that’s why I really love what I’m doing.”

Bromberg works with children as young as 3 or 4 years old.

“Not all of my shoots go well,” Bromberg chuckled. “I’ve got the skill sets to catch the light, I’ve got the skill sets to compose the picture, but the kids are just gorgeous.”

He also does photo restoration for those who may bring in an old worn photo of a loved one, and that is the only photo they have to remember them by.

But when Bromberg is not in the studio he is on Logan Martin Lake enjoying Mother Nature.

He uses a boat to go out on the lake just before the sun comes up.

“If you’ve never been out on a lake before the sun comes up — it’s just beautiful, it’s just a beau-tiful time on the water,” Bromberg said.

When the sun does come up, he marvels in the way the first peek of light hits the water.

“I love nature stuff, I love going on the lake,” Bromberg said. “We have a tremendous popula-tion of Great Blue Herons and egrets.”

He is often accompanied by his Border Collie, Shady, a dog he adopted from a shelter.

Asked what makes a good photo, Bromberg thinks long and hard.

“That’s a big question that a lot of books have tried to answer,” Bromberg said. “It depends on your mission.”

Bromberg said one of the first things he learned was to decide what the subject was first and then remove all the obstacles.

“Some people say a good photograph is some-thing where the focus is clear and crisp but that’s not always true,” Bromberg said. “It depends on what I’m trying to do; the answer is going to move depending on what you’re doing.

“If you don’t tell a story with your picture, it has no value.”Bromberg took this photograph at Coden Bayou at Bayou LaBatre in Mobile County.

Wild Game Cook-off brings out the wild in some great cooksBy ELSIE HODNETTPhotos by BOB CRISP

It’s a Wild Thing, This Cook-off

here was gumbo and stew aplenty, as well as moose, elk, bear and even antelope.

And despite very cold weather, this year’s cook-off brought people out in record numbers as more

than 30 teams dished up their best at the Seventh Annual Alabama Army National Guard/Alabama Wildlife Federation Wild Game Cook-off.

Teams from across Alabama gathered at the Talladega Superspeedway competing in the game, fish and fowl categories for the chance to move ahead to the state championship later this year.

“We had almost double the number of cook teams as last year,” said Tommy Tidwell, Wild Game Cook-off coordinator for the Alabama Wildlife Federation. “And the cook-off prob-ably raised about $15,000-$20,000 for the AWF, which will go

toward conservation efforts.”There were many returning teams, as well as some who

decided to try their hand at a wild game cook-off for the first time.

The Deer Sisters team of Pam Mills and Debbie Ponder were back for more this year. The duo, who hail from the Talladega/Munford area, took Best Overall the past two years with Wisconsin black bear dishes.

Mills said the team has a delivery service from Wisconsin—a friend who brought them a hindquarter of black bear when they attended the October race at the Superspeedway.

This year featured Bar-Bear-Que with a homemade bar-becue sauce made from Mills’ husband, Coy’s, secret recipe—quite tasty even though it didn’t win the big prize this year.

Also returning were Camp Callers, who competed as Cletus Classic last year. The team, made up of Johnny Ponder, Clark Carpenter, Coy Mills and Donnie Gallahar went with a gumbo this year.

Ponder said the gumbo had wild turkey, wild hog, shrimp, crab—you name it, it was in the pot.

“There is no exact recipe to the gumbo,” he said. “Just season it ’til it tastes right. I use Tony Chachere’s Creole seasoning, garlic, bay leaf, lemon juice, fresh ground black pep-per is crucial and other seasonings. I could make it with my eyes closed.”

The Choccolocco Critter Getters, from the Anniston/Oxford area, were back for the third year. The team, made up of Jim Keat, Keith Pope, Elijah Pope and Jamie Mays, created fish tacos (with fresh trout from the gulf) and deer sliders.

Keat said the team normally competes in barbecue competitions.

“This is more fun,” he said. “With the barbecue competitions, you cook for the judges. Here, you get to cook for the people—this is the best time there ever is. It’s a lot of fun.”

The Mule Lot Hunting Club, from the Talladega/Munford area, served up a selection of moose and smoked catfish. The team consisted of Tony Bishop, David Thompson, Terry Ledbetter and Alan Colliet.

Diana Bishop, Tony’s wife, said although it wasn’t planned, she ended up on the serving line.

“This is their first year to enter,” she said. “Tony smokes all the time—we have three smokers and smoke anything that will cook.”

Thompson said the team motto is “kill it and we’ll try to grill it.”

Grant Lynch, chairman of the Talladega Superspeedway, said the track had worked with the AWF to get more teams to participate—and it was very successful.

“We had about twice as many teams as last year, and I think there are more people here than last year,” he said. “On a day as cold as it is, it’s a testament to people coming out to support an organization that fights to conserve our natural resources. That’s what today is all about.”

Pull up in your boat or your car for a fabulous selection of great foodBy CHRIS NORWOODPhotos by BOB CRISP

Club Caribe is Coming Soonto the Offerings of Lakeside Fare

he late and lamented Boondocks in Lincoln may be gone for good, but it will soon be replaced by Club Caribe and Marina, owned and operated by Diane and Bobby Smith, who also own Montana Steak House in

Lincoln.“We’re hoping to be open by May,” Diane Smith said.

“We’re trying to do all different types of foods, but with a Caribbean theme. We’ll have things like coconut shrimp, crab legs, tuna dip, all of the foods that make you think of summer-time. We’ll also have sandwiches, calamari, crab cakes, grouper and a fresh catch of the day. It will be a completely different feel from Montana’s.”

There will be some similarities, however. “We want people to be able to come in and get a nice cut

of meat at night, and we will be reopening the bar. It will be age 21 and up only, and it will be a private club, although any one can join. We’ll have a monthly membership fee for couples available, too.”

Daytime dining will be “more casual,” Smith explained. “We’re going to be putting in a pool. We’re boaters ourselves, and we wanted a place somebody could come up to by boat. We felt there are not a lot of places to eat and drink, so we wanted to make this a destination. We’ve got palm trees outside, and we plan on being a place where a boater can relax and maybe have

a couple of drinks. We’re even going to put in changing rooms and showers.”

Smith said she worked in a bakery all through college (“I learned a lot from that,” she says), and that she and her husband have been running Montana’s for a decade now. The new res-taurant fills the need for a boater’s destination.

“We’ve lived out on the lake for 20 years now,” she added. “This is the kind of thing we enjoy doing ourselves.”

Once it opens, the new club will likely do business Thursday through Sunday, from 11 a.m. to 10 p.m. Menu pric-ing is still an ongoing process, but sandwich and lunch entrees will probably fall in the $8 range, while “a nice steak will be more than that. “But I don’t want any of the food to be more than $20.”

Club Caribe and Marina will be located at 84 Blue Eye Road West in Lincoln, just after the Embry Crossroads Exit.

Club Caribe is in the former location of Boondocks and is undergoing a huge renovation.

The tornadoes did their damage, but Jack Pounders has made this home even betterStory and Photos byLAURA NATION-ATCHISON

ack and Julie Pounders loved their sunroom that looks out over Logan Martin Lake; it was Julie’s favorite room in the entire house.

It’s where she could bird watch, a pursuit she’s passionate about, along with enjoying the peaceful lake setting — a good place for keeping an eye on her three little grand

girls who love to come for visits. The sunroom opened out to a large deck that was built around a huge water oak, prob-ably five or six feet in circumference, and the tree was a treasure to the Pounders. But when the tornadoes ripped through St. Clair County April 27 of last year, they took with them the Pounders’ sunroom, the great water oak slamming down on top of their Riverside home. It basically destroyed the sunroom, which is situated at the rear of the home, and the Pounders decided not only to replace it, but to enlarge it and make lots of changes. While they loved their home as it was and they miss their beautiful tree, now, the Pounders are thrilled with the changes they made and love this space even more, Julie said. It was primarily her husband who made it all happen. “It’s really incredible the job that he did,” she said. “I just love it.” Pounders did the majority of the work himself, and he and his wife worked together on the outcome that they wanted. Pounders used stacked stone as a base for the room and for the pillars that support the room, topped with cedar posts and added cedar shakes to the upper exterior. There’s a gabled roof now which provides lots of storage space and below the room, a covered stor-age area along with a storm shelter. Thankfully, no one was home when the tornado hit and no one was hurt when the grand old tree surrendered to the horrific storms. It took about six months to rebuild, partly because of working through the process of insurance claims, but Pounders has produced a space that has a character and style all its own. The new addition has a bar seating area and cabinetry, room for a sofa bed for company on one end and space for a desk and chair. The floor-to-ceiling panels of windows are great for Julie’s bird watching and there’s room for a wicker dining table and four chairs along with space for a full sized couch and rocking chair. The changes included adding a new deck across the back of the house where the Pounders have placed a series of colorful Adirondack chairs for enjoying the waterfront view.

The new sunroom includes a spot for a table and chairs for dining or even doing a little paperwork. Julie Pounders’ love of birds who call the lake home shows up throughout the Pounders’ home.

Inside the sunroom, Jack used cedar for the walls and ceilings and created a herringbone type design along the walls. He said “it just came to him” for the design. The floors are done in large tile in tones of grey and beige and the windows are left undressed to allow an outstanding view of the water. Jack’s handiness goes way back, he said he used to build tree houses as a kid. He spent his career in creating prosthetic pieces for people who had lost their limbs, eventually having his own business in Pell City, Alabama Prosthetics.

The Pounders met when they were both working at the New York State Rehabilitation Hospital in West Haverstraw, N.Y., he as a prosthetist and she as a physical therapist. They moved to Alabama when Jack accepted a position with Spain Rehabilitation Clinic in Birmingham. Julie worked there for a while as well, but then took a position as a physical thera-pist for the Alabama Institute for Deaf and Blind. She retired in 1998. She continues to work part time for the school in its Early Intervention Program, making home visits to children age 3 and under. After the rebuild, the exterior of the Pounders’ home took on

Granddaughters Rory and Avery love going to their grandparents’ lake home in Riverside where they kayak, swim and collect all manner of things from the shore.

a tradesman style look with the cedar, stacked stone and cedar shakes. Originally built by the late A.J. Blake, a long-time member of the Alabama State Legislature, the Pounders bought their home four years ago. Another change that followed the devastation from the April tornadoes is an attached balcony that opens from the sunroom. That was the perfect place for hanging a swing and placing a pair of Adirondack chairs for yet another spot to bird watch or just relax. Grand girls Avery and Rory will quickly tell you what they love about coming to gramma’s and granddad’s. “I like the kayaking and the jet skiing, too,’ said 8-year-old

Rory. It’s much the same for Avery, who also likes finding “trea-sures” along the shoreline with her grandparents. It’s her tree limb she found and saw such beauty in that is now decorated with fish ornaments that greets guests at the back door. They, along with their older sister Molly, also love the rope swing granddad fashioned for them on a large oak that survived the April storms. For Julie, it’s awfully nice having such a handy guy as her hus-band, Jack. And the grands feel exactly the same way.

Pounders added a deck that travels from the sunroom around the back of the house and to the pool.

Dish It Up! With Lakeside

By LAURA NATION-ATCHISONFood photos by BOB CRISPDessert photos by LAURA NATION-ATCHISON

How about a little of the Emerald Isle for dinner?

Cooking It Up Irish!

pril Fool’s Day is truly my favorite holiday and for those of you who know anything at all about me, I think it’s apparent as to why. But next to that, this month brings another favorite

and I’m sure you’ve already guessed what it is. So this month, the Lakeside cooking duo brings you Irish food and hope you have a chance to give these dishes a try. Pretty good stuff, although as usual, my partner and I did make some adjustments and in one particular recipe, wished we had, but we’ll share those with you. While I have a love of all the different cultures and tradi-tions the people of our great country have—and I think that’s

our uniqueness, Americans are truly from all over—we have a richness of cultures from all over the world, my own, I have declared is of Irishness. There’s just no way I can’t be, there are just too many things Irish that I love running through my veins. I have no real “proof,” other than what I am getting ready to tell. First of all, I love land, the outdoors and just feeling the earth underneath my feet. Remember Scarlett and Tara? It’s sort of like that. Next comes the horsey thing, I’ve loved horses since I was big enough to get on one and even though I’m usually not one

to brag, I was a darn good horsewoman. The Irish are known for their horsemanship, and still make a strong showing with their Olympic Equestrian Teams. Then there’s the potato thing, I could live on them. Take all the cakes and pies and cookies you want, I’d rather have a potato anytime, and any way you can fix it. In my younger days when my metabolism could still tolerate it, I would go into a restaurant and order a plate of all potatoes, from potato salad to mashed to fried and any other way they were available. Now to the part that’s not so good, in my younger days, a little “imbibement” was also pretty high on my list. I have since put a stop to anything but maybe a little wine, but the Irish are also known for their favor of a stop at the pub. And there’s nothing like a stout bloody Mary or some steam-ing Irish coffee on a chilly horse show morning when you’re sitting on top of 1,000 pounds of horse who really just wants to take off for the wild blue yonder. And oh yeah, the fair skin, blue eyes and hair that wants to be red no matter how much I dye it, that’s sort of a giveaway, too. So anyway, having “proved” my Irishness, I can tell you that my kitchen partner, Lisa, knows her lineage and she’s absolutely got the Irish thing going on.So here we go on an Irish cooking adventure we hope you enjoy and come St. Patty’s Day, we wish you the luck of the Irish in every way! Even if you’re not Irish! I chose to make an Irish stew, and lo and behold, it didn’t call for potatoes! So I took the liberty of adding both Irish and new potatoes, being the potato freak that I am. Is there a potatoes anonymous out there anywhere?

Irish StewWhat you need:

Two pounds of stew meat or beef tips (I used beef tips, less

fat, you know, and a much more manageable size)

Three medium onions, chopped as you prefer

Six carrots, sliced fairly thinly and on the diagonal (It makes it

prettier!)

A cup of Irish beer (I used Guinness and you could add more,

really, for a richer flavor)

About three medium sized Irish potatoes

Four or five, depending on size, red potatoes

Chop the potatoes any size you prefer

A clove of garlic, minced

A little more if you love garlic like I do

Fresh ground pepper to taste and the same for the salt

A dash of cayenne pepper—or to taste

A cup or so of flour

Half a small can of tomato paste

What you do: Mix flour, salt, pepper and cayenne pepper with the flour in a large mixing bowl. Set aside. Heat two to three tablespoons of oil—I used olive oil—and simmer LOW in a Dutch oven (I scorched my first try!) with garlic until lightly browned.Dredge meat in flour mixture, and add to the Dutch oven, keep temperature about medium. Once the meat is browned, add beer, tomato paste, vegetables and simmer on medium heat until veggies are done.

Irish Boxy is a quick traditional potato side often enjoyed by the Irish.

And that’s it! Serve with some really great crusty bread and over rice if you wish. I taste tested this recipe on my 90-year old father-in-law who happens to consider himself a gourmet cook…he asked for it two nights in a row and usually does not care for “leftovers!” OK, here’s Lisa’s contribution, which we found to be a little bland, although it is a popular traditional Irish side dish. I will give our suggestions on making it a little tastier, of course!

Irish BoxyWhat you need:

One and a half cups grated potatoes

One cup all purpose flour

One cup leftover mashed potatoes

One egg

One tablespoon skim milk

Salt and pepper to taste

One fourth cup olive oil

What you do: Toss the grated potatoes with the flour in a large bowl. Stir in the mashed potatoes until combined. In a separate bowl, whisk together the egg and milk and mix into the potatoes. Salt and pepper to taste. Heat olive oil in large skillet over medium high heat. Drop in the potato mixture forming patties about two inches in diameter. Fry on both sides until golden brown, about three to four minutes on each side. Drain on paper towel lined plate and serve warm. Calories: 227. Fat: 10.3 grams. Cholesterol: 36 mg. Now this is the recipe we found to be a little on the bland side. Food snob and I agree that adding some chopped onions, some grated cheddar and maybe a touch of garlic would kick them up a notch. And then, there’s always the possibility of dotting them with some light sour cream…I’m liking this now.

Bailey’s Irish Cream Cheesecake (If you don’t try anything else from this collection of recipes, I promise, you won’t be disappointed with this creation! Being pretty much a non-baker, I called in some help for this, my good friend Betty really knows her way around a kitchen and I

asked her to put it together. I did decorate it, seeking her advice throughout the process. I know I’m always all about watching fat and calories, but…St. Patrick’s Day only comes around once a year!)Prep time is about two hours

What you need:

One and a fourth cups sugar, divided

One cup crushed vanilla wafers (approximately 30 cookies)

One fourth cup butter, melted

One envelope unflavored gelatin

One fourth cup water

Two eight ounce packages cream cheese, softened

One eight ounce container of whipped topping, thawed

One fourth cup plus two tablespoons Bailey’s Irish Cream-or

Emmett’s Irish Cream

Optional: Whipped cream and strawberries for garnish…I

decided to use whipped cream and pecans, too, along with

dark chocolate and Andes candy shavings…good choice!

(see picture on the content page)

What you do: Mix one fourth cup sugar, the wafers and butter. Press it firmly into the bottom of a spring form pan by hand. Place water in a small pan. Sprinkle gelatin over top and let stand for one minute. Cook on low heat and stir constantly for one minute. Mix cream cheese and the remaining cup of sugar until

well blended. Gradually add the gelatin mixture and Bailey’s. Refrigerate until slightly thickened. Gently stir in the whipped topping and pour over the crust. Refrigerate several hours or until firm. Garnish and serve! Goes great with Irish coffee, coffee and Bailey’s or try my favorite “spiked coffee,” with an ounce of Frangelica hazelnut liquor and a splash of Bailey’s topped with a little whipped cream, a sprinkle of cinnamon and a dash of nutmeg…it’s to die for. Just make sure your guests are in for the night or have a designated driver!

Beef, Mushroom and Guinness PieWhat you need:

Three tablespoons olive oil, divided

One pound beef stew meat

Two slices of bacon, chopped

One onion, chopped

One carrot, chopped

One third pound crimini mushrooms, sliced

One clove garlic, crushed

One teaspoon sugar

One and a half tablespoons all purpose flour

One cup Irish stout beer-such as Guinness

One and a fourth cups beef stock

One half teaspoon ground thyme

Two bay leaves

One half teaspoon cornstarch, or as needed

One teaspoon water

One sheet frozen puff pastry, thawed

One egg, beaten

What you do: Heat two tablespoons of olive oil in a large pot over medium heat, and brown the stew meat on all sides, about 10 minutes, and set aside. Heat the remaining one tablespoon of olive oil and cook the bacon just until it begins to brown, stir in the onion, carrot, mushrooms, garlic and sugar. Cook the vegeta-bles until soft and browned, 10 to 15 more minutes. Stir in the flour until smoothly incorporated, and gradually mix in the Irish stout beer and beef stock. Mix in the thyme,

bay leaves and the cooked beef. Cover and bring the mixture to a boil, reduce heat to a simmer until the meat is tender, about an hour and 15 minutes and stir occasionally. Remove the cover and turn the heat up to medium and let the stew boil until slightly thickened, about 15 minutes. Stir occasionally, and remove the cover and turn up the heat to medium and let the stew boil until slightly thickened, about 15 more minutes. Mix cornstarch with water and stir into the stew. Let simmer for 30 more minutes to blend flavors. Remove from heat and discard bay leaves. Preheat oven to 350 degrees. Spread the filling into a nine inch pie pan, trim the puff pas-try into a 10 inch circle and place on top of the filling. Pinch and crimp the edges of the pastry with a fork , sealing it to the dish and cut two steam vents into the pastry with a sharp knife. Brush the top of the pie with the beaten egg. Bake in the preheated oven until the crust is browned for 30 to 40 minutes. We hope you enjoy these Irish recipes, and look we look for-ward to coming up with those brunch dishes in April!

From Laura and Lisa, an Irish toast to you and yours and a wish for “the luck of the Irish” this year!

his premiere waterfront home is many things. It is a bed and breakfast for the entrepreneur, a recording studio for the celebrity, a garage for a NASCAR owner, a retreat for the business execu-

tive. With 14,000 square feet and more than 500 feet of water-

front property on Logan Martin Lake, this home is whatever its owner needs it to be.

Built in 2007, the home boasts seven bedrooms and six and a half baths.

The first floor includes a large master bedroom with a sitting room, three closets and custom drapes.

The master bathroom includes two vanities, two toilets, a large jetted bathtub, a chandelier and a marble shower with heavy glass doors.

Also on the first floor are formal living and dining rooms with ceiling molding.

A den includes a gas log fireplace, a mirror over an extra large mantle, three ceiling fans and hardwood floors.

The large main kitchen has an eating area and an abun-dance of custom cherry cabinets. The kitchen is finely detailed with granite countertops, a granite sink, a tiled backsplash, Kitchenaid appliances, a built-in refrigerator, a double oven and

a large pantry. The home also has a second butler kitchen with a half bath. This floor also features two sunrooms. The first sunroom has

a view of the lake, tiled floor, custom blinds and four ceiling fans. The other is finished with a tiled floor and crown molding.

The second floor has four extra large bedrooms, each with a full bathroom and walk-in closets.

Upstairs is also a 34x64 foot dance hall with a full kitchen and a large room that could be used as a recording studio or media room.

The second floor is completed with a 20x34 library with a fireplace.

The luxury continues outdoors with a 160-foot, no mainte-nance wraparound deck with composite floor and vinyl railing.

Two covered gazebos offer fantastic views of the lake.Five hundred feet of waterfront access are completed with a

boat launch, seawall and a 30-foot pier and sundeck. The well-landscaped property includes an underground

eal estate isn’t just a job for The Realty Pros realtor Diane Williams – it’s a community service.“Being involved in the community is an important part of this job,” Williams said. “Every community

must meet the needs of its citizens, and one of the most important needs and decisions people have is finding the right home.”

Williams said helping clients locate that perfect house is a rewarding experience.

“Seeing the smile on their face when you hand them the keys is incredible,” she said. “When they walk into their home for the first time, it’s like you’re literally watching their life move forward. It’s hard to explain unless you’ve experienced it yourself.”

With 17 years of real estate under her belt, Williams said her favorite part is still getting to interact with people.

“When I moved to Pell City, I was looking for a way to get involved in the community,” she said. “I chose real estate because it’s a good way to make a living and get to know a lot of people. I really enjoy working with and get-ting to know everyone. You’re constantly involved in what’s

going on, and you’re also helping people at the same time.”Williams said her approach to meeting a client’s

needs is to keep an open line of communication during the entire process.

“It’s important to listen and communicate,” she said. “It’s hard to get a home that fits everything they want, but you hope to find one that satisfies the things clients find most important.”

Williams especially enjoys selling lakefront homes on Logan Martin, which she said has the “most beautiful sun-sets and sunrises.”

“When you buy a home on the lake, you’re not just buying a house, you’re buying a lifestyle,” Williams said. “It’s like a vacation without leaving home. You come home, put dinner in the oven and go sit out on your dock until time for bed. Just throw your cares away.”

Williams said what makes selling homes fun is help-ing people in her community make the biggest decision of their lives.

“There is a part of me that is really satisfied by help-ing people find the home that is perfect for them,” she said.

A Place to Call HomeHelping clients find the perfect home is still exciting for Diane Williams after 17 years in real estate
