    1. A commercial site is an establishment, such as arestaurant, where food and beverage businesses

    compete for customers.2. An on-site facility is an institutional or

    noncommercial establishment, such as ahospital or corporation, that provides meals for

    people involved with that property. All food service establishment must consider

    market, location, atmosphere, concept, andmenu to be successful.

    The commercial segment encompasses a wide rangeof restaurants Full service restaurants are destinations for customers

    where they sit at a table, order from a menu, and are

    served at their table.Offer a variety of menu styles with items cooked to order.

    Can range form formal to casual.

    Fine diningestablishments distinguish themselves by price,service, ambiance, location, and menu offerings; each course is

    carefully prepared with attention to detail; and restaurants planambiance or atmosphere by choosing the right location andappropriate interior and exterior design.

    Casual diningestablishments attract diners who seek a relaxedatmosphere with reasonable prices; speed of service and efficiencyare most important; and they are the fastest-growing segment in the

    food and beverage industry.

    An independent has a local owner who is often well-known and respected in the community. Creates its own image with its menu, ambiance, and style

    of service.

    On-Site Facilities

    On-site facilities provide meal options primarily forcustomer directly involved with a property, such asemployees and volunteers. Food is not the primary service the organization provides

    but it serves as a convenience or source of revenue for thefacility.

    Types of on-site facilities include:School and universities;

    South America Tourism

    Although South America has a great variety of touristattractions, it accounts for less than 5 percent of worldtourism. Tourists to South America also stay for a short amount of time,

    averaging only 4.2 days.

    Visitors to South America are more often visiting for business thanvisitors to other regions of the world.

    South America contains outstanding beaches (Brazil),excellent skiing (the Andes), cities of great cultural diversity(Buenos Aires), and archaeological sites (Machu Picchu). But, there are several reasons that account for South Americas

    inability to attract tourists:1. Tourism industry is largely undeveloped;

    2. It is far from the main tourist-generating regions: N.A. and Europe;

    3. There are many countries that are both closer to Canada and the U.S.and less expensive; and

    4. Potential tourists pay perceive the service as poor and certain areas as

    unsafe.

    Fidgeting with hands and feet is impolite.
