RECIPIES USING COOKWARE AND SERVEWARE FROM SUR LA TABLE.What better way to prepare and host a dinner party than with the help of Sur La Table. Village Style has put together a list of the best recipies using Fall seasons most stylish ingredient, Butternut Squash. We are preparing our ideal menu starting with Butternut Squash Bread, followed by Butternut Squash Ravioli with Maple Sage Cream Sauce and for dessert Caramelized Autumn Fruit Stuffing Cups. Nothing says Fall like Butternut Squash and Sur La Table.

Ingredents:1 1/4 c whole wheat flour1/2 c unbleached bread flour1/4 c rolled oats1/4 c flax seed1/8 c wheat germ1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 TBS ground cinnamon1/2 TBS ground nutmeg1/4 c browned butter1/2c agave nectar2 large eggs1 1/2 c butternut squash puree1 tsp pure vanilla extract

Instructions:Preheat oven to 350 degrees. Grease and lightly flour one 9x5 loaf pan.In a separate bowl combine all dry ingredients and mix.Squash puree:1. Halve and clean squash.2. Brush with olive oil.3. Place squash (cut side up), on a lined baking sheet and roast at 425 until fork tender, about 30-45 minutes.Squash will easily scoop right out of peel when it is done roasting.4. Place in food processor and puree.Bread:5. In a mixer, combine browned butter and agave.6. Mix in eggs until well combined, about 1 minute.7. Mix in squash puree and vanilla until thoroughly combined.8. Slowly add in dry ingredients, a little at a time, until just mixed in. Do not over mix.9. Pour into pan and place on bottom rack of oven, and bake for 40-50 minutes, until toothpick inserted into center comes out clean.

Ingredents:1 recipe for whole wheat pasta doughRavioli Filling:2 Cups Butternut Squash1 Cup Summer Squash1 clove Garlic1 Tbs Olive Oil¼ Cup Caramelized Onions1 Cup Parmesan CheeseSalt and PepperSauce:1 Tbs Butter1 clove Garlic1 Tbs Flour2 Tbs Nuefchatel Cheese½ Cup Milk1 Tbs fresh Sage1 Tbs Maple SyrupSalt and Pepper to taste

Instructions:1. Preheat oven to 375˚. Peel and cube the butternut squash, dice yellow squash, and roughly chop the garlic. Toss squashmixture in olive oil and spread out on a sheet tray covered in tin foil. Sprinkle a pinch of salt and pepper over and bake for25-30 minutes until squash in tender. Place squash in food processor and let run until squash is pureed. Stir in Parmesancheese and onions, set aside.2. While squash is roasted, make one recipe of whole wheat pasta dough. Once pasta is ready to go, divide in half and roll out.each on a floured surface into a rectangles, 1/8” thick. Spoon 1 Tablespoon of squash mixture into rows on one piece of thepasta. Make sure as you create your rows you are leaving enough room to press the edges together. Once you have the first side ready, lay the second piece of pasta over the filling. press down lightly around each ravioli and then cut out squares.3. In a large pot, bring water to a boil.4. While waiting for water to boil, begin to make sauce. Melt butter in a small sauce pan and add in garlic. Saute until garlicbecomes soft and fragrant. Whisk in cheese, sage, and flour until mixture is smooth. Continue to cook for 1-2 minutes. Pourmilk into the pan while whisking and continue to whisk until sauce is smooth. Add in maple syrup and continue to whiskuntil sauce begins to think. Taste, add salt and pepper, then remove from heat.5. Once water in the large pot is boiling, add in ravioli, making sure to not crowd the pan. Let boil until ravioli float to the top.Remove with a slotted spoon, plate, and drizzle sauce on top.

Ingredents:1/2 butternut squash, chopped (about 1 cup)1 apple, chopped (honeycrisp recommended)1 pear, chopped (red bartlett recommended)3 tablespoons butter1/2 teaspoon salt1/2 tablespoon cinnamon3 slices whole wheat bread (Nature’s Pride)1/2 tablespoon brown sugar

Instructions: 1. Preheat oven to 350.2. Heat a skillet on medium heat and add 1 tablespoon butter. Once hot, add cubes of squash, apples and pears,tossing with cinnamon and sea salt. Stir a few times to coat and combine. Let caramelize, stirring occasionally, forabout 15-20 minutes.3. While the fruit is caramelizing, toast bread (if it is not stale already). Cut into cubes that are the same size as thefruit. Once fruit is caramelized, add to a bowl with bread. Mix to combine.4. Spoon stuffing evenly into 3 oven-safe bowls. Melt the remaining 2 tablespoons of butter, and stir in brown sugar. Spoon butter over stuffing in each bowl. Bake for 15-20 minutes.

Based in San Fransisco, Bridgeport Village is proud to be bringing you the first Margaret O’Leary boutique in Oregon.Margaret, you are clearly passionate about knitwear, when did this passion develop for you?

“At an early age I would sit by the fireside back in Ireland watching my mother with the two knitting needles and hearing them click. I remember that sound to this day and it was like music to me. My Mom knitted for all twelve of us kids and I would help her out. Starting from when I was three or four she would give me easier parts, like sleeves. Knitting was different back then. Keep in mind that in those days there was no TV in rural Ireland so people would

sit around the fire and knit together. Those are some of my earliest memories.”

When did you decide to make Margaret O’Leary into your life’s work?

“I immigrated to the United States in my twenties and came to San Francisco. A friend suggested that in this cold and foggy place people would wear a lot of sweaters. So naturally, I pulled out those needles and started knitting. I started in my apartment with one small knitting machine and I brought the sweaters to a few local stores.When they sold out I thought I might be onto something. One thing led to another and I decided to open my first store on Claude Lane in downtown San Francisco. That was 17 years ago now and we have been growing ever since!”

What is your favorite product?

“I love cashmere and in San Francisco you can wear it year round and it is so cozy. This season we have designed some beautiful ponchos in yummy cashmere and cashmere blends. These are some of my favorites.I am lucky in that I get to travel to Paris and Italy twice a year to find special things for our clients to go with our sweaters. I have fallen in

love with Fiorentini + Baker boots, Iro jackets and Epice scarves… and I bought them for all of our stores (and my closet, too!).”

What made you choose Bridgeport Village?

“We have been visiting dear friends in the Lake Oswego for years and we quickly fell in love with the beautiful area, the people and the vibe. Margaret O’Leary has been sold in various boutiques around Portland and developed a following so we couldn’t wait to have a fully featured store. Bridgeport Village is the ideal place for our first home in Oregon.”

What is your favorite aspect of Bridgeport Village?

“Bridgeport Village is clearly a destination of choice for the discerning area resident. The layout is welcoming, the selection is excellent and the food is another big attraction. It appears that there is something for everyone so who wouldn’t want a store there!”

What should we be wearing in the Fall?

“This Fall it’s all about ponchos, capes and knit blazers. A beautiful cashmere cape or wrap makes the perfect fall outfit when worn over a simple turtleneck. For evening, I love my cashmere twist-back dress with a pair of boots. These are the looks you will see on fashion-forward women in the Northwest this Fall!”
