ForewordAlthough Malaysia enjoys summer all-year round, who’s to say we can’t be extra-excited over it this season? The team at Starhill Gallery are feeling particularly sunny and chose Gaya Island Resort, off the coast of Kota Kinabalu in Borneo, as the backdrop to showcase the latest beach- and luxe resort-worthy looks to sport this season. We hope it proves inspiring.

Summer looks aside, our thoughts are equally preoccupied with the latest offerings post Milan’s annual design and décor fair, the amazing Salon Internazionale del Mobile. Horological enthusiasts would also know of Starhill as the place for the finest timepieces in the world. As such, we pay tribute to the genius that is maverick watchmaker Richard Mille, who personally unveiled his new concept boutique here recently, as well as the legendary maison of Jaeger-LeCoultre, which celebrates its 150th anniversary this year. Summer also means taking time off for a few days of sun, sea and sand. It’s good, then, to know that London’s Truefitt & Hill has also opened up at Starhill Gallery, making it the perfect spot in which city gents may ensure their grooming is faultless… pre- and post-beach break.

Well, at the newly-launched Starhill Culinary Studio, you might just get to hone your skills in the world of food and beverage or, perhaps, even discover a talent you never knew existed. The great Julia Child might have once quipped that “in France, cooking is a serious art form and a national sport”. The launch of the new Starhill Culinary Studio might just make that quote applicable to Malaysia as well. Located on the Muse Floor of Starhill Gallery, the shiny new 12,000 sq ft of space, specifically dedicated to the art and pleasures of cuisine, is designed to be a source of delight and knowledge for gourmet enthusiasts, fanatical foodies as well as those wishing to impress in the heart of the home.

Divided into five main spaces – the Wine Studio, Wai’s Kitchen, Dining Studio, Baking Studio and Pastry Studio – guests are able to experience the length and breadth of the world of fine food and wine. A wide range of classes are offered, including wine appreciation classes and tastings, macaroon-making, special cooking classes by Starhill Culinary Studio’s roster of professional chefs, including the renowned Executive Chef, Wai Look Chow, as well as visiting guest chefs, and even classes for budding junior masterchefs. “Epicures will

certainly be inspired by this new culinary space,” said Jeremiah Tan, Director of Autodome, the F&B arm of Starhill Gallery, during the launch event held at Shook! Kuala Lumpur. “Our team of experts are on-hand to lend their expertise to get one’s creative juices flowing with fun, engaging classes, all of which work, ultimately, to enrich our daily lives.”

“It’s about providing a culinary experience like no other,” points out Chef Wai. “We use the freshest of ingredients to create magic in each class, delivering insights into a whole world of different cuisines all in one place. What we do at Starhill Culinary Studio goes beyond cooking and preparing dishes – it’s about coming together in an environment that fosters friendships through a common love of good food.” His legion of fans will be pleased to know that, among the classes in Chef Wai’s timetable, are lessons on knife skills as well as the secrets behind his most famous

signature dishes, particularly his Marseilles Bouillabaisse and Dancing Prawns.

Private cooking classes for individuals or corporations may also be arranged, complete with bespoke themes or menus, while the entire space may also be utilised for events and parties. The only limit is your imagination. “We really felt there was a need for such a venue in Kuala Lumpur,” added Tan. “There is always a market for new enriching experiences that will enhance one’s lifestyle and, with Starhill Culinary Studio, we feel we’ve created the perfect space for it.”

Renaissance LadyAward-winning lyric soprano and judge of the popular One in a Million reality television show, Syafinaz Selamat, shares her favourite things about Starhill Gallery.

Syafinaz Selamat appreciates the fine quality and beauty of Bedat & Co and Van Cleef & Arpels' creations.

A music degree graduate from MARA University of Technology, Malaysia’s renowned lyric soprano S y a f i n a z S e l a m a t

released her first album, Syafinaz, when she was only 16. In 1999, she won a gold medal at the prestigious World Championships of Performing Arts in Los Angeles. Currently a lecturer at the MARA University of Technology, The National Arts Academy and advisor and vocal master of The National Choir of Malaysia, she shares with Starhill magazine her favourite things and memories about the luxury retail gallery.

In 2011, I performed at the prestigious watch and jewellery showcase, A Journey Through Time. I invited a group of young talented singers called Putra to sing with me for the King and Queen of Malaysia, the guests of honour, at Shook! restaurant.

I love the typical Arabian dish hummus in Tarbush, made from cooked and mashed chickpeas, blended with some healthy oil and garlic. The low calorie count is the reason why I keep coming back for more.

I like the watch I am wearing now from Bedat & Co. It’s simple yet elegant. I have fond memories of the brand because of an award I received from its Portraiture project, which recognises women who have excelled in their respective fields, back in 2011.

T h e re ' s t h i s d e ss e r t f ro m Fisherman's Cove that I love but, unfortunately, can’t recall the name. I remember it being extremely sweet with cashew nuts or almonds on top.

this voucher from Kanebo Spa, which I didn’t get to use as it had already expired when I finally found the time to go. That was awful.

I find shopping at Debenhams to be the best part of Starhill Gallery as it always promises an enjoyable shopping experience.

I load my shoe closet with Sergio Rossi whenever I visit Starhill. Design and comfort are the features that I look for in a shoe.

For clothing, I prefer dresses from Valentino because of the soft contours. It’s really feminine and accentuates the figure of anyone who wears it.

I once wore Van Cleef & Arpels pieces for an event and fell in love with the beautiful floral motifs. Though vintage, it carries a contemporary touch, which is a plus point, and the craftsmanship was perfect.

Right now, I am in the process of renovating my house. The first thing on my list is the bed, which needs to be comfortable, cosy and high quality. If XZQT has what it takes, why not?

Wow-erhaus!change from day to day. We can’t wait till it all comes together! Pop-up stores are a great way for us to introduce ourselves to the Malaysian market. We aren’t planning any permanent retail spaces as we want to continue being an online store. But we would also never say ‘never’ as well.

Do you have any favourite materials or stones to work with?We love pearls and have a fascination for what we call ‘rebel’ pearls. We see beauty in irregular pearls, like Keishi and baroque, as opposed to flawless ones. For us, individuality is everything and we want each piece to have its own special characteristics. Those two pearls would definitely be our favourites.

Both you girls are also always incredibly chic and dressed to impress. What is your personal definition of style and who do you think epitomises ‘chic’ best?Being chic is all about having the confidence to have fun. We are particularly inspired by (renowned fashionista and creative consultant/editor-at-large for Vogue Nippon) Anna Della Russo for her ability to always inject a touch of humour in all her looks. Her natural style is also so full of colour and drama. We can’t think of anyone who epitomises ‘chic’ the way Anna can.

species spending hours fanatically collecting shells, leaves or whatever it thinks might attract a worthy mate, Australian jewellery and accessories brand Bowerhaus makes a much-anticipated appearance this season at Starhill Gallery in the retail guise of a pop-up store. For those not familiar with the brand, Bowerhaus was founded by sisters Elizabeth and Shentel Lee, for whom having their own jewellery label was a natural progression, having spent years collaborating with jewellers in Sydney and Hong Kong to create their own collection of one-of-a-kind pieces. As both had graduated with design degrees and were experienced in designing for others, it didn’t take long for Elizabeth to moot the idea of starting a business together with her sister. “With years of designing for other companies, it was fun to turn the tables around. Creating Bowerhaus came naturally for us,” shares Shentel.

We understand the Bowerhaus pop-up store will be located on the Indulge Floor of Starhill Gallery, next to the Dior and Omega boutiques, for the entire month of July 2013. What can we expect from this exciting retail adventure?We are creating modules at the moment so the look of the store can

Richard Mille shares his thoughts on his watch brand's

newly-opened boutique in Starhill Gallery and his

passion for Asia.

The Place To Be

Since Richard Mille founded his very own brand in 2001, he has built up a formidable reputation as a maverick inventor of some of the world’s most innovative timepieces. Drawing inspiration from high-tech sectors

such as Formula 1 and the aerospace industry, Richard Mille has based the DNA of his brand on three core elements: the best in technical innovation, the best of artistry and architecture, and the best of the heritage and culture of fine watchmaking with hand finishing.

Upon first sight, there’s no denying that Richard Mille’s new 1,600 sq ft concept boutique at Starhill Gallery was designed to emanate every facet of the brand’s unique DNA. One will not fail to notice the massive sculpture of a watch movement flanked by display cases containing Richard Mille timepieces on the exterior of the boutique. Inside, visitors are greeted by a voluminous interior emphasised by the curved surfaces and the contrast of the dark wooden panelling against cool beige carpets. A glass atelier allows visitors an immersive view of a Swiss watchmaker’s workbench. “Just as my watches are efficient and uncompromising, no detail has been spared in the architecture and purveying of the new Richard Mille boutique experience,” he declared.

“Starhill Gallery is the place to be,” adds Mille. “Previously, we were lacking in terms of space so we took this fantastic opportunity to enlarge our boutique; we now have a bigger showroom and VIP rooms,” He allowed himself a roguish grin: “Of course, if we could have a bigger space we would have taken it, but this is very nice and I’m very happy about it.”

Asked about the inspiration behind the design of this unique concept boutique, Mille says: “The first boutique was too dark and small, so that was a problem. I wanted to bring out different shades of colour to make it more refreshing and less terrifying. So, we’re using more glass and more open spaces with round shapes to give a greater sense of volume.” He then stabbed a finger heavenwards: “I also always hated lights shining down directly on you; it really kills the atmosphere. That’s why, in the showroom and our display towers, all the lights are indirect.”

As for why the brand selected Malaysia as the second country in the world to host such a unique and innovative concept boutique, he explained: “We know Malaysia well and have many friends here; such as the former King of Malaysia, quite a few Prime Ministers and, of course, our brand ambassador Tan Sri

Michelle Yeoh. So, Malaysia feels like a home market for us.”Richard Mille is further marking this milestone expansion in Asia with the release of two limited edition models: the RM 030 Black Carbon and RM 022 All Gray Carbon (see sidebar). These two timepieces are exclusive only to Asia and were launched on the same night as the grand opening of this boutique. “People in Asia are not afraid to be trendy and the consumer habits are very sophisticated,” Mille shares. “They have a fantastic watch culture and know exactly what each brand is doing, their positioning in the market and if they are pioneers. So, when I launched my brand in 2001, people were not afraid to buy timepieces that cost a few hundred thousand US dollars without knowing if we would still be around in a year’s time.”

So, how does Richard Mille continue to create avant-garde timepieces such as RM 056 family of tourbillons and the automatic sports RM 011 timepieces equipped with flyback chronographs? “There is no limit to what we can create,” Mille insists. “Since our founding, we have developed new functions with the focus on extreme techniques as our common denominator. There will always be new sources of inspiration for us and our clients will never grow tired of what we create.”

Jaeger-LeCoultre’s 180th anniversary this year is a rich tapestry weaving human spirit and ingenuity. And, as its story shows, this

brand is far from done in revolutionising high horology.

Masters of Invention

Le Sentier, about an hour’s drive from Geneva, is a quiet mountain township located at roughly 1,000m above the sea. In spring, the air is crisp under blue skies. Winter, however, is a hugely different prospect: a biting chill that

gnaws at the bone. In this contrasting land of beauty and desolation, one finds the Manufacture Jaeger-LeCoultre. The brand’s story is a reflection of an indomitable and expectant spirit of men and women who have entered into

he began a life of husbandry, starting a small community in one of the Jura Mountains’ most inhospitable regions.

When 1833 arrived, Antoine LeCoultre, the 10th generation of the Vallée de Joux’s first settler, founded his first workshop on the farmland of his predecessors. There was a touch of clairvoyance to this founding. In gathering the necessary skills and people in horology to create instruments for Switzerland’s timepiece makers, Antoine LeCoultre alluded to an ‘original plan’, a vision of his own workshop eventually producing complete movements.

With its founder’s inventive streak and apprenticeship in metallurgy, inventions sprung forth from this workshop. His Millionomèter of 1844 was the first instrument capable of measuring the micron (a thousandth of a millimetre) and, in 1847, horology was advanced by

this watchmaker’s history, each of them contributing their talent, determination and enterprise in their patient hope for spring thaws and success.

The origins of Jaeger-LeCoultre begins in the 16th century, when a persecuted Huguenot by the name of Pierre LeCoultre fled France for Geneva – which was the centre of the Calvinist movement – and later to the nearby Vallée de Joux, an alpine forest home to bears and wolves. Here,

Before long, destiny would deal another card to this Grand Maison of the valley. A Paris-based watchmaker was seeking collaborators who could develop and produce the ultra-thin movements that he had envisioned for pocket watches. It fell to Jacques-David LeCoultre, the grandson of the founder at LeCoultre & Cie, to decide on the path of the company his grandfather started. He did not hesitate. The oral retelling of this episode describes Jacques-David cycling to nearby Vallorbe – about a two-hour ride in the present day – to make a phone call to a certain gentleman by the name of Edmond Jaeger, who had placed the advertisement for watchmaking collaborators in the newspaper.

In four years from that fateful bike ride and phone call, Jaeger-LeCoultre would have produced the Calibre 145, the world’s thinnest movement at the time. The year 1925

At this point in Jaeger-LeCoultre fate, a key component lay in the sizeable workshop, a space that enabled many craftspeople to share their skills and expertise. Unlike the many other individualistic cottage-type setups, this workshop was a place of knowledge and ideas. With this amalgamation of minds and spirit, greatness beckoned.

Imagine that, in the days of 1888, more than 500 people were already employed here, at what was termed as the Grand Maison of the Vallée de Joux. In this cauldron, savoir-faire, determination and innovation were all stirred in. Bubbling forth from this brew were wondrous achievements – over 350 different calibres, with half of them being complications: 99 different repeater mechanisms, 128 chronographs and 33 that combined the two functions, all of which had happened by the turn of the 20th century.

saw the invention of the Duoplan watch, a reconciliation of technical excellence and elegance with a movement built on two levels. This prompted a witty ad from Lloyds of London, who could now more easily repair any damages to the Duoplan’s movement, to say: “You won’t have time to finish your cigarette before your watch is repaired.”

Next was the Atmos of 1928, a historic realisation of perpetual motion where a one-degree fluctuation in temperature provides enough energy to power the clock for two full days. This translates to an energy consumption that is about 60 million times less than a 15-watt electric bulb. Other inventions quickly followed: the 1929 Calibre 101 set the world record as the smallest mechanical movement. Weighing in at barely a gram, the record for this 14mm-long calibre is unbeaten to this very day.

The lush polo grounds of India, circa 1931, saw the birth of the iconic Reverso – a timepiece that satisfied the demands of British army officers who could indulge in their favourite sporting pastime with a robust and refined timepiece strapped to their wrists. In the period following the Second World War, Jaeger-LeCoultre marched on, unveiling its first automatic calibre, the Calibre 476, in 1946. An automatic winding timepiece with a diver’s alarm showed up as the Memovox Deep Sea in 1959.

By 1994, after the world of mechanical timepieces recovered from the nasty bout of the quartz crisis, Jaeger-LeCoultre was ascendant once more, creating Grande Complication wristwatches with innovative refinements. In the 2004 Gyrotourbillon I, the enigmatic tourbillon is reinvented to gravitate on two axes, combined with a double retrograding perpetual calendar, a running equation of time and a power reserve of eight days. The conductor of this majestic symphony was the breathtaking 679-part Calibre 177. The Reverso Gyrotourbillon 2 later ushered the world’s first spherical tourbillon, taking horology to a level of precision expressed by fractions of a second.

In the present day, manufacturer Jaeger-LeCoultre resides in the very same location, surrounded by the same lazy rivers and snow-capped peaks as its original workshop was 180 years ago. The difference is, of course, that over 1,200 people now work in an ultra-modern space, specialising in, among others, design, assembly, production, gem-setting and enamelling. In all, over 180 watchmaking skills are concentrated in this cooperative space, a much grander manifestation of Antoine LeCoultre’s initial effort. As for the founder’s “original plan” of eventually producing his own complete movements, one only has to look at the number of calibres in Jaeger-LeCoultre’s museum to realise that it is a prophecy that has been fulfilled: 1,242 times at last count.

high-heeled footwear gets a shiny new space at Starhill Gallery.

A status symbol among well-shod women the world over, Sergio Rossi’s inimitably sexy brand of footwear has long paid tribute to femininity with its high-heeled shoes’ signature curvaceous silhouette. Its

recently-unveiled concept store at Starhill Gallery was the first of its kind in the country and a celebration of womanly beauty and power.

Working in tandem with the creative talent of London-based design company Studioilse, the brand’s creative director Francesco Russo dreamed up a vision of a store that encapsulated the Sergio Rossi woman – strong, sexy and stylish. A closer look at the interiors would have you realise that the ambience, in fact, is a subtle nod at the sleek lines and curves of the classic high-heel, long regarded as a symbol of seduction.

Divided into two distinct spaces – the Front Stage and the Back Stage – guests may explore and try on the store’s offerings in contrasting mise-en-scenes. The Front Stage is, naturally, in the spotlight, crafted with large brass and sculptural display cases and lit up by brass lights, which flank an array of brightly-polished multi-level display cubes and, should you wish to recline

a little to get a better view of your chosen heel’s visual allure, a classic red velvet chaise lounge. Alternatively, a smart black and white herringbone-patterned Italian marble floor has also been laid out to pick up the snappy, staccato-like click-clacks of the heels.

Meanwhile, the Back Stage is palpably more intimate and seductive, allowing the guest to embrace the creations of Sergio Rossi in a more private setting. A sweeping voluptuous blue curved velvet sofa invites one to try on more beautifully-crafted footwear in comfort and style, while a plush blue carpet, layered with exotic zebra skin, comforts bare soles before slipping on the next pair of shoes to try. Deep blue walls further add to the ambience, as does dramatic floor-to-ceiling curtains. Meanwhile, a wall of Franco Albini-inspired shelves display the men’s footwear collection in a decidedly more masculine atmosphere, complete with a console fumoir, a Bellini-designed CAB chair by Cassina and more Albini-esque étagères crafted out of wood. Extravagant and inviting, it seems perfectly fitting that Sergio Rossi has created such a fine temple dedicated to its footwear. After all, since we spend half our lives on our feet, it is therefore apt that we wear the best shoes money can buy.

MOROSOWhat: Founded in 1952 by Agostino and Diana Moroso, the Udine-based Italian furniture label is best known for its superstar collaborations, each one with household names from a veritable design wonderland. Sporting a buzz-cut, close to a dozen tattoos and with a decided penchant for flipping 250kg tyres as part of his fitness

regime, Tim Ross-Watson is the closest thing to a literal ‘iron chef’ as you can get.

Rebel With A Few Courses

Tim Ross-Watson isn’t the sort of chef you’d want to mess around with. Aside from having an arsenal of potential w e a p o n s ( n a m e l y

his chef’s knives) lying within easy reach, he’s also the sort who finds flipping 250kg tyres around easy-peasy and confesses to being an absolute “freak” about fitness. “I’m not a very conventional chef,” he admits, when we met at Starhill Gallery’s Shook! restaurant recently. “ I disl ike the term ‘molecular cuisine’ and I don’t bel ieve in signature dishes at all. After all, if one is a star, it sort of means your other dishes aren’t as good or are neglected. I believe every single ingredient, every dish on the menu, needs to be special.”

Having started working from the age of 15 at the luxury Selsdon Park Hotel in London and attending culinary school while still in his teens, Ross-Watson acknowledges the ki tchen was his preferred domain even as a child. “I could cook since the age of six,” he shares. “The reason behind that may sound a little lame but I have a sister who’s

four years older and she was always helping out our mum with the baking. And everything she could do, I wanted to do as well.” It didn’t take long for Ross-Watson’s competitive streak to emerge and, by nine, he was preparing Sunday roast dinners for the family and, at 10, was serving up full-course meals for family members and friends. “It helped my mum trusted me with the stove and her set of knives,” he grins.

Ross-Watson’s ski l l d idn’t go unnoticed either. During home economics lessons in school, he once impressed the teacher by coming to class with white wine, oranges and rice, and preparing a dish of flambéed chicken á l’orange with braised rice in the half-hour allocated for the lesson.

Currently based in Singapore and consult ing for numerous F&B establ ishments , Ross-Watson decided to close The Garden of Eden, his highly-regarded Neil Road restaurant, to focus on developing new dishes. “I, oddly enough, did very well in biology, chemistry and physics in school, so I’m putting it all to good use now. I also recently

read a 30-page report on the reactions of natural starches, so my little kitchen’s still a bit of a test lab. I might reopen the restaurant the year after but, in the meantime, I’ve still got a lot of testing and development to do.”

Guests who attended the three-night Starhill Culinary Series dinners recently would also realise the young chef’s penchant for quality ingredients and letting the essence of the flavours shine through. “I’m mixing classic with modern cooking techniques and concentrating on the strength of the flavour, showcased in

dishes like lobster gelée, foie gras, tomato consommé and a prawn miso dish. And, if the guests walked away smiling at the end of the evening, I know I’ve done my job.”

With his rock star-like style and natural swagger, it didn’t come as a surprise that, among the many celebrated establishments Ross-Watson has clocked up experience in, Gordon Ramsay’s was one of them. “I hated it, to be frank, and stayed for just five months. I was also quite the rebel but I think I’m a lot better now… although,” he adds with a grin, “I still don’t like being told what to do.”
