7 QUART DUTCH OVEN
INSTRUCTIONSPLACE CHICKEN AND LIQUID FROM CANS INTO DUTCH OVEN.
BREAK UP CHICKEN WITH A FORK. ADD SALT, CONDENSED SOUP, ENCHILADA SAUCE, CORN, OLIVES, ONIONS AND WATER TO MAKE A SAUCE. HEAT TO SIMMER AT 225
DEGREES FOR 15 MINUTES, STIRRING OCCASIONALLY. REMOVE ABOUT 3/4 OF THE SAUCE INTO BOWL OR POT,
LEAVING A LAYER IN THE DUTCH OVEN.
SPRINKLE A LAYER OF CHEESE OVER MIXTURE REMAINING IN DUTCH OVEN. LAY TWO TORTILLAS ON
CHEESE. SPREAD 1/4 OF THE SAUCE FROM THE BOWL OVER THE TORTILLAS, THEN SPRINKLE CHEESE,
THEN 2 MORE TORTILLAS. REPEAT SAUCE, CHEESE AND TORTILLAS UNTIL TORTILLAS ARE GONE.
END WITH SAUCE AND CHEESE ON TOP.PUT LID ON DUTCH OVEN AND BAKE AT 350 DEGREES FOR 30 MINUTES.

TO A LARGE MIXING BOWL ADD CHICKEN, BROCCOLI AND 1/2 CUP ALFREDO SAUCE AND TOSS TO COMBINE. ADD A SPOONFUL OF ALFREDO SAUCE TO THE BOTTOM OF A 9”X13'' PAN. FILL SHELLS WITH A LARGE SPOONFUL OF CHICKEN AND BROCCOLI MIXTURE AND PLACE IN PREPARED PAN.
POUR REMAINING ALFREDO SAUCE EVENLY OVER THE SHELLS. SPRINKLE WITH REMAINING 1/2 CUP MOZZARELLA CHEESE.BAKE AT 350 DEGREES F. FOR ABOUT 25 MINUTES OR UNTIL WARM AND BUBBLY.

ADD THE STOCK, STILL WHISKING TO PREVENT CLUMPS, AND REDUCE HEAT TO LOW. SIMMER GENTLY FOR 5 MINUTES AS THE SAUCE THICKENS AGAIN.
WHISK IN CRÉME FRAÎCHE. RESERVE 1/3 CUP OF CHEESE FOR THE TOPPING, AND ADD THE REST TO THE SAUCE BY THE HANDFUL, STIRRING SLOWLY AND WAITING UNTIL THE CHEESE IS MELTED BEFORE ADDING MORE. ADD 1/4 TSP. EACH OF PAPRIKA, ONION AND MUSTARD POWDERS, AND SALT & PEPPER TO TASTE. THE SAUCE SHOULD TASTE A BIT SALTY AT THIS STAGE - IT WILL BECOME BALANCED WHEN MIXED WITH THE COOKED PASTA.

INSTRUCTIONSSLICE THE TOFU IN 1/4-1/2 INCH SLICES FROM THE SHORT END. IN A BOWL OR 9×9 PAN, MIX THE FLOUR, BAKING POWDER, GARLIC POWDER, CHILLI POWDER, ONION POWDER, SALT AND GROUND PEPPER. POUR THE SOY CREAM INTO A BOWL. DREDGE THE TOFU SLICES IN THE FLOUR MIXTURE, COAT WELL. DIP THE FLOURED TOFU INTO THE SOY CREAM. MAKE SURE THE SLICES ARE FULLY COVERED. DREDGE THE TOFU IN THE FLOUR MIXTURE AGAIN. HEAT OIL IN A HEAVY POT APPROPRIATE FOR FRYING (LIKE A DUTCH OVEN) OR DEEP FRYER TO 360 DEGREES. SHAKE OFF THE EXCESS FLOUR AND DEEP FRY THE TOFU SLICES UNTIL GOLDEN BROWN ABOUT 2-3 MINUTES. ADJUST FRYING TIME AS NEEDED. REMOVE THE TOFU FROM THE FRYER AND PLACE THE HOT TOFU ON A WIRE RACK THAT HAS BEEN PLACED OVER SOME PAPER TOWELS. DON'T LET THE TOFU SIT ON THE PAPER TOWELS AS IT WILL BECOME SOGGY.
