December at Riverside Club is a busy month. Next week begins many of the Riverside Club’s traditional Holiday festivities including:

• the Boat Parade; • the Golf Cart Parade; • Christmas Open Houses; • the Sun City Center Men’s Chorus Christmas Concert; and ends with • the New Year’s Eve Dance.

Of course, the Holiday season was kicked off by the lighting of Christmas Island on Thanksgiving Eve, which seems to get bigger, brighter, and better each year. Hopefully all of us who attended have now warmed up. The Hayes Bayou Clubhouse was decorated after the Potluck Thanksgiving dinner had settled. These events are scheduled early in the month so that all of us can enjoy them, particularly those heading out to spend the Holidays with family. All of these events would not take place without the dedication and work of many of our neighbors, who volunteer many hours of their time. We thank all of them.

Red Hatters Of Manatee …..Irene Renton

Lucy Lawrence founded the Red Hatters of Manatee chapter of the Red Hat Society 10 years ago. It became a very large group…too large. We split into two chapters and our sister chapter, the Riverside Rascals, was formed. The Manatees were joined by the Rascals on November 14th for a celebratory luncheon to honor 10 years of fun and friendship here at the Riverside.

The dining room at the Sandpiper Grille and Bunkers in Sun City Center had a very Red Hat festive flair. The tables were decorated with red and purple centerpieces, and feathered and sequined napkin rings. The pride of the table however, was the favors. Rita Belanger, Vice Queen of the Manatees, made a red and purple sequined wallet for each attendee. Really – red and purple sequins! Those wallets are soooo red had perfect. Of course, the best decorations were all the ladies in our red hat finery.

In her opening remarks, Sally Berg, Queen Mother of the Manatees, gave special thanks to Lucy and noted that Lucy had never attended a formal crowning ceremony. Sally placed a crown on Lucy’s head, proclaimed her an official Queen of the Red Hat Society and presented her with a bouquet of flowers. Shirley Riscile, Queen Mother of the Rascals, also spoke and presented Sally with a beautiful pin commemorating our 10 years . After a great lunch, Mary Lou Hill, our Herstorian and Donna Van Dreser, our Party Prima Donna, kept the party going with raffle drawings and door prizes. I must say, that when the Manatees and Rascals join forces, you know it’s gonna be a good time.

Recipe of the Month

This month will see cooks digging baking tins, and specialty appliances out of storage to get ready for the holiday season upon us. Good smells and sweet aromas will abound as we bake traditional cookies, cakes, and pastries and perhaps try a few new recipes, too! Here’s one that looks good!

Sweet Potato Christmas Pudding

Ingredients:

2 c grated raw sweet potato 1/2 c margarine, melted 1/2 c sugar 3 eggs, separated and beaten 2 c milk 1 c water All-purpose flour

Hard Sauce 1/2 c butter 1 c sugar 1/4 c brandy, bourbon or whiskey

1/8 tsp ground cinnamon or to taste 1/8 tsp ground cloves or to taste 1/4 tsp ground nutmeg or to taste 1/2 c citron 1/2 c raisins 1/2 c currant

1 egg white Freshly grated nutmeg

1. Preheat the oven to 350º F.

2. In a large bowl, cream the margarine and sugar together. Add the egg yolks to the sugar mixture, mixing well. Gradually add the milk and water, beating thoroughly. Add the grated sweet potato and mix well. Add the cinnamon, cloves and nutmeg.

3. Dredge the fruit in flour and add to the sweet potato mixture. Fold in the stiffly beaten egg whites. Pour into a greased baking dish.

4. Bake for 1 hour and 30 minutes. Serve with Hard Sauce.

7. Add the brandy and mix well.

8. Blend in the egg white.

9. Serve over the Christmas Pudding and sprinkle with nutmeg, if desired.

Healthful Hints for the Month ~ Enjoy “The Sweet Life”!

1. Their rich orange color indicates that they are high in carotenoids like beta carotene and other carotenoids, which is the precursor to vitamin A in your body. Carotenoids help strengthen our eyesight and boost our immunity to disease, they are powerful antioxidants that help ward off cancer and protect against the effects of aging.

2. Sweet potatoes are naturally sweet-tasting but their natural sugars are slowly released into the bloodstream, helping to ensure a balanced and regular source of energy, without the blood sugar spikes linked to fatigue and weight gain.

3. They are a good source of vitamin C. While most people know that vitamin C is important to help ward off cold and flu viruses, few people are aware that this crucial vitamin plays an important role in bone and tooth formation, digestion, and blood cell formation. It helps accelerate wound healing, produces collagen, which helps maintain skin’s youthful elasticity, and is essential to helping us cope with stress. It even appears to help protect our body against toxins that may be linked to cancer.

4. Sweet potatoes are a good source of manganese, which helps maintain normal blood sugar levels and optimal thyroid function.

5. They are high in vitamin B6. Vitamin B6 helps reduce the chemical homocysteine in our bodies. Homocysteine has been linked with degenerative diseases, including the prevention of heart attacks.

They are a source of potassium, one of the important electrolytes that help regulate heartbeat and nerve signals. Like the other electrolytes, potassium performs many essential functions, some of which include relaxing muscle contractions, reducing swelling, and protecting and controlling the activity of the kidneys.

6. Sweet potatoes are a good source of magnesium, which is the relaxation and anti-stress mineral. Magnesium is necessary for healthy artery, blood, bone, heart, muscle, and nerve function, yet experts estimate that approximately 80 percent of the population in North America may be deficient in this important mineral. They contain Vitamin D which is critical for immune system and overall health. Both a vitamin and a hormone, vitamin D is primarily made in our bodies as a result of getting adequate sunlight. You may have heard about seasonal affective disorder (or SAD, as it is also called), which is linked to inadequate sunlight and therefore a vitamin D deficiency. Vitamin D plays an important role in our energy levels, moods, and helps to build healthy bones, heart, nerves, skin, and teeth, and it supports the thyroid gland. Sweet potatoes contain iron. Most people are aware that we need the mineral iron to have adequate energy, but iron plays other important roles in our body, including red and white blood cell production, resistance to stress, proper immune functioning, and the metabolizing of protein, among other things.

BONUS! There are versatile. Try them roasted, puréed, steamed, baked, or grilled. You can add them to soups and stews, or grill and place on top of leafy greens for a delicious salad. Grilling them with onions and red peppers can make for amazing sandwich or wrap ingredients. Puree them and add to smoothies and baked goods. And then there’s MY favorite! Sweet potato fries---sprinkle with cinnamon and bake instead of french fries.

Much as we don’t like to think about it, the season of giving is upon us. And holiday shoppers sometimes take the form of thieves—availing themselves of carloads of presents, purses unattended while pumping gasoline, and even entering homes where easy, out-of-sight access is found.

So, ensure you and your family will have a safe, successful holiday season by locking up windows and doors at night and when away. The best defense is an offense---BE AWARE OF YOUR SURROUNDINGS! And let’s all have a happy safe Christmas, Hannukah, Qwaanza, and happily ever after, etc.

Did you KNOW? for the Month

Make Emergency Candles from Crayons

In case of a power outage, you may be able to get a crayon to burn between 15-30 minutes. When matches were used, several tries were necessary. It is recommended to use a striker (long-handled butane lighter) available at stores like Dollar Tree, drug stores, grocery stores, and discount department stores.

Materials Needed: 1. Butter or margerine 2. Toilet Paper or paper towel 3. Something to poke a hole (like a toothpick or skewer) Cut the stick of butter into as many pieces as desired. One Tablespoon of butter should burn for about 1 hour. Using a 4 Oz stick of butter (8 Tablespoons) cut in half gives you two 4-hour candles of 4 Tablespoons each. You should have 2 halves with the exposed butter side facing upward. NOTE: Cut the stick of butter with the seam at the top to minimize the paper from ripping as you cut

through the block. Also, the colder/firmer the butter is, the cleaner your cut will be.

Taking your skewer or toothpick, poke a hole in the top at the center. The hole should reach all the way to the bottom. Next, take your piece of toilet paper and twist it tightly, to make a wick. Put a bend at the bottom of your wick so that when it stands next to the block of butter, only about 1/4" is exposed at the top.

Your butter candle is now ready for assembly. Using your skewer or toothpick, push the make-shift wick (twisted toilet paper) down into the hole until it touches the bottom. Give it a little twist to release, and pull the stick back out. If you did it right, you should only have 1/4" of the wick poking out of the center. The wick needs a little starter fuel, and that’s added by rubbing the wick tip down into the exposed butter at the top.

Time to light it! When you strike your match, hold the flame near the butter at the base of the wick. The butter needs to melt a little for the flame to become self-sustaining, so it may take a couple of seconds.

DIY Project of the Month

Dip Mix Ornaments! courtesy BubblyNatureCreations

Use a small light bulb shaped craft ornaments found at Hobby Lobby, or any small-sized (think half dollar in diameter) ornament for the same effect. Be sure to wash them out and let them thoroughly dry! They are perfecty sized to contain all spices needed. Also include instructions on how to make each mix into a delicious dip! Each mix uses either sour cream or a mix of sour cream, mayo or miracle whip…. very easy!

Instructions

1. Clean and dry each ornament, making sure they are completely dry before filling! Ornaments sometimes chip at the opening. It’s suggested to use a very small amount of scotch tape right around the whole rim of the opening (after the top is taken off) to prevent this

2. Mix spices and place in ornament using a funnel. Before closing ornament, wrap a small piece of foil at opening and then put ornament top back on. The metal wires will puncture the foil, but should not leave a big enough hole for spices to come through. Shake each ornament a little to see if your foil has a hole. If the contents remain, then you are good. If not, repeat the foil process.

3. Place a card with each ornament providing the directions on how to make each dip.

Fiesta Dip Mix

½ T. dried parsley ½ T. dried minced onion ¼ T. dried chives ½ T. chili powder ¼ T. ground cumin ¼ t. salt

Directions:

In a medium bowl, whisk together ½ C sour cream or yogurt, ½ C mayonnaise and dip mix. Refrigerate 2-4 hours before serving.

Bacon Dip Mix

1 T. Bacon Bits (imitation unless storing in fridge) ½ t. Beef Bouillon Granules ½ T. Minced Onion ⅛ t. Minced Garlic

Directions:

Using a hand mixer, combine the above ingredients with with ½ C sour cream until well-blended. Cover and refrigerate for at least 1 hour before serving. Serve with veggies, crackers and chips.

Dill Dip Mix

1 t. dill weed ¼ t. season salt 1 t. onion flakes 1 t. parsley flakes

Directions:

Mix ½ C. sour cream, ½ C. Miracle Whip, and dip mix in a small bowl. Refrigerate for at least 2 hours to allow the flavors to blend. This makes an excellent vegetable dip as well as one for chips.

Herb Ranch Dip and Dressing mix

2 t. dried parsley flakes 1½ t. thyme 1 t. dried onion flakes ¼ t. garlic powder ⅛ t. salt ⅛ t. coarsely ground black pepper

Directions:

Blend 1 ½ C. sour cream, ½ cup mayonnaise, and 2 t. lemon juice with dip mix. Cover and refrigerate at least 4 hours. Serve with assorted fresh vegetables.

Italian Dip Mix

1 T. Parmesan Cheese

¾ t. Garlic Powder

¾ t. Onion Powder

⅓ t. Paprika

½ t. Celery Seed

¼t. season salt

Directions:

Combine ½ C. sour cream with dip mix using a hand blender. Cover and refrigerate at least 2 hours before serving. Serve with veggies, crackers or chips.
