Dahl is a classic Indian dish, and a very healing food according to the principles of Ayurveda, as it aids digestion and balances the doshas.

The spices are very healing, especially the turmeric for its anti-inflammatory properties that become even more powerful with a pinch of

black pepper. It’s a one-pot wonder and is very versatile. You can change it up by mixing in whatever seasonal veggies you have on hand.

DAHL - SPICED LENTIL SOUP

:INGREDIENTS

1.5 cups red or dahl lentils

2 tbsp extra virgin coconut oil

1 tsp mustard seeds

1 tsp fennel seeds

1 tbsp turmeric [fresh, if possible]

2 small green chilies, left whole

1 onion, thinly sliced

4 garlic cloves, minced

1 tbsp fresh ginger, grated

1 carrot, grated

1 medium kumara, small cubes

2 tomatoes [optional]

1/2 cup fresh coriander, chopped

1/4 cup fresh parsley, chopped

Plain Mahoe Farmhouse yogurt

:DIRECTIONS Soak lentils overnight in warm filtered water with a piece of kombu or 2 table-

spoons of yogurt; this maximizes nutrient density by mitigating the effects of antinutrients

[particularly phytates and enzyme inhibitors] that legumes naturally contain.3 Drain and rinse well.

Add coconut oil, mustard and fennel seeds to a large pot over medium heat, then put lid on. When

the seeds start popping, add onion, garlic and ginger and sauté until softened [3-4 minutes] before

adding the dried spices. Sauté for further 1 minute to release the spices’ essential oils.

Then add turmeric, chilies, carrots, kumara and tomatoes: stir and add filtered water to generously

cover. Lower the heat and let simmer until the lentils are cooked. This will turn to an orange-y

mush, and you can add more liquid as necessary so that it doesn’t clump or stick to the bottom of

the pot. You can add more liquid to make this more of a soup, or keep it thick and eat on its own,

or serve over a bed of brown rice or quinoa. Just before serving, we like to add cauliflower, spinach

and/or broccoli for some extra cruciferous anti-inflammatory power.

Serve with rice or quinoa [or go nuts and make your own roti or naan with spelt or rye flour… but

that’s for another newsletter].

Top dahl with fresh parsley, coriander + plain unsweetened yogurt.

Raw choco-coco FUDGE

Coconut-y, chocolate-y treats can be

good for you: if you use creamed

coconut, raw cacao powder,

immune-boosting spices, and a few

dates for sweetness!

One of the many benefits of high-

quality organic coconut is its power-

ful antibacterial, antiviral and anti-

fungal agents4: perfect for winter,

especially, but great for any time of

year.

:Bonus creamed coconut tastes

:INGREDIENTS

2 cups creamed coconut, softened

12 large Medjool dates [or 24 small dates -

choose very soft ones], mashed

2/3 cup raw cacao powder

1/2 tsp chili powder/cayenne pepper

1 tsp cinnamon powder

1/2 vanilla bean, scraped

1/2 tsp Himalayan sea salt

Make sure creamed coconut is soft; stir if needed.

Add mashed dates and salt and mix well; a hand-held

blender works well—unless you want the work out!

Then add cacao, chili and cinnamon.

Press into a square or rectangular ceramic dish,

smooth top over and put in the freezer for at 30 min-

utes.

Keep in the fridge… If it lasts.
