Then listen again (go to link) For Lunchtime favourites this Saturday (08thOct), Maria was at the home of Fylde Coast Musician, Paul Dobie (pictured) Well known for playing gigs at venues all around the North West and beyond, his fan base even includes royalty, as Paul has played to Prince Albert of Monaco on a number of occasions. Although Paul plays popular music at his gigs, he also writes his own tunes , and has just completed a song (“Beauty and the Peace”) for the Alzheimer’s Society. “Lunchtime favourites” recipe Lins’ chicken soup 1. One medium chicken (uncooked) 2. 2 chicken stock cubes (Put into a stockpot or large saucepan) 3. Add two medium diced onions 4. Add five or six carrots peeled and chopped 5. Add four or five sticks of celery chopped 6. Add three or four bay leaves 7. Throw in Two large handfuls of pearl barley Cover with boiling water - cook on the hob - bring to the boil - reduce to a simmer - cook for approx one hour. ( keep adding boiling water if the level drops much below the top of the chicken) You know that it is cooked when the chicken starts to fall apart. The chicken meat should appear white and cooked. Then, using two large forks, lift the whole of the chicken onto a waiting plate. Scrape the skin from the chicken and remove the white meat from the chicken bones (this should come away easily) Return the meat to the pan - simmer for 5 to 10 mins, add salt and pepper to taste Serve with hot crusty bread Great winter warmer and cures man -flu!
