5. Then bend the peel so it releases oil onto the lighted match, igniting a flame that will settle on the surface of the drink

Tom Collins The first Tom Collins recipe was written by the father of modern cocktail making, Jerry Thomas. It's a simple mix of gin, lemon and sugar syrup, shaken over ice.

Bloody Mary This vodka cocktail has endless variations. You can add chilli, Worcestershire sauce, Tabasco, herbs... even bacon. It's up to you!

Equipment

• A shaker or stirring glass • Long glass

Ingredients

• 2 parts Grey Goose vodka • 4 parts organic tomato juice • ½ part fresh lemon juice (to taste) • 4 dashes of Worcestershire sauce • 4 dashes of Tabasco (or hot pepper sauce) • Pinch of fleur de sel (or sea salt) • Pinch of black pepper • Some cubed ice • To garnish: Celery, ground black pepper and fresh

aromatic herbs

How to mix

1. Add plenty of ice and all of your ingredients to a shaker or stirring glass

2. If you’re using a shaker, tilt it backwards and forwards a few times to mix the ingredients without making the drink frothy. If you’re stirring, you can do so vigorously

3. Pour the mix into a glass. Top up with fresh ice if it’s not quite full

4. Add your garnishes. Any fresh herbs and a celery stick work well

5. Tabasco tip: if you’re making Bloody Marys for a group of people, make a jug without spice and let people add their own Tabasco. Some like it hot, others not so much!

Ingredients

• 1 parts Bacardi Oro • 2 wedges of lime • 2 parts cola • Cubed ice

How to mix

1. To create this legendary cocktail, fill a glass with lots of ice

2. Squeeze and drop 2 lime wedges into the glass, coating the ice well with the juices (it all makes a difference)

3. Pour in the Bacardi Oro, top up with chilled cola and stir gently

Zombie Named at a time when a lot of booze went into this drink, our version is lighter with two kinds of rum rounded off by the tropical fruit flavours.

Equipment

• A shaker • Some cubed ice • A strainer • Long glass

Ingredients

• 2 parts Bacardi Carta Blanco • 1 1/3 parts Bacardi Oro • 1 part Triple Sec Liqueur • 2 parts sweet and sour Mix • 2 parts orange juice • 1 part grenadine (or Blue Curacao) • Cubed ice • To Garnish: A Cherry and an orange slice

How to mix

1. Put lots of ice and all of the ingredients except the grenadine/Blue Curaçao into a shaker. Remember you can make sugar syrup with equal parts water and sugar or simply buy it pre-made.

2. Shake for about 20 seconds to chill the liquid really well, then strain the mix into the glass over ice (you could fill your glass with ice and pour the mix straight in, or – to look flash – strain it over ice separately and then add to a glass containing fresh ice)

3. Pour a little of the grenadine/Blue Curaçao over the drink so it floats on top – gently does it!

Daiquiri There may be endless varieties of Daiquiri (strawberry Daiquiri being the most famous) but get some good rum and you can't beat the beautiful simplicity of the original.

• 3 parts Bacardi Carta Blanco • 1 part lime juice • 2 tsp sugar • Cubed ice

How to mix

1. Chill your glass (the easiest way is to fill it with ice) 2. Add the lime and sugar to your cocktail shaker and

stir until the sugar dissolves 3. Put lots of ice and the remaining ingredients into the

shaker and shake hard for about 30 seconds to chill and dilute the mix

4. Strain into the glass. You don’t need a garnish for this drink, but a lime wedge or pinwheel (a pinwheel is just a thin slice) won’t go amiss

Pina colada First made in Puerto Rico back in 1952, with this rum, pineapple and coconut cream cocktail in your hand all you'll be missing is the sand between your toes.

• Sling glass • Cocktail shaker • Blender

Ingredients

• 6-7 chunks of pineapple • 1 teaspoon sugar • 1 tablespoon coconut cream • 50ml Bacardi Carta Blanco • 50ml fresh pineapple juice • Ice • To garnish: A pineapple triangle

How to mix

1. Place all your ingredients into the blender (apart from the garnish!) and blend until a smooth consistency

2. Pour into a chilled (or even better, frozen) glass, then add your garnish and serve

Grey Goose le fizz A super-simple, refreshing vodka cocktail with an aromatic edge of elderflower. Great for welcome drinks at parties.

Equipment

• A Champagne flute • A shaker • A strainer

Ingredients

• 1 ½ parts Grey Goose vodka • 1 part St. Germain elderflower liqueur • 1/4 of a lime • 2 parts soda water • Cubed ice

How to mix

1. Pour all the ingredients apart from soda water in a mixing glass and top with cubed ice

2. Shake hard for about 20 seconds to chill the liquid really well then strain into a chilled flute

3. Top with chilled soda water

Ingredients

• 1 ½ parts Bacardi Carta Blanco • ½ part Cointreau liqueur • ¼ part lime juice • 1 ½ parts pineapple juice • 1 ½ parts orange juice • 1 dash grenadine • 1 part Bacardi Carta Negra • Cubed ice • To garnish: Lime wedge & mint

How to mix

1. Put lots of ice and all of the ingredients into a shaker and shake for about 20 seconds to chill the liquid really well

2. Strain the mix over ice (you could fill your glass with ice and pour the mix straight in, or – to look extra flash – strain it over ice separately and then add to a glass containing fresh ice). If you still have the limes you squeezed earlier, use a wedge as a garnish with some mint

Irish Trash Can Ingredients:

1/2 oz gin 1/2 oz light rum 1/2 oz vodka 1/2 oz peach schnapps 1/2 oz Blue Curaçao Liqueur 1/2 oz triple sec 1 can Red Bull

Preparation:

Fill a Collins Glass full of ice, then add liquors and stir. Add full can of Red Bull. It will float and slowly seep down the glass.

Long Island Iced Tea Ingredients:

15 ml Bicardi 15 ml Dry Gin 15 ml Vodka 15 ml Triple Sec 15 ml Tequila 15 ml Sugar Syrup 15 ml Fresh Lime Juice 15 ml Fresh Lemon Juice Top up with Cola

Preparation:

Shake first 8 ingredients with ice and strain into and ice filled Glass. Top with Cola, stir and server with straws.

Garnish with a slice of lemon.

• 1 1/2 ounces tequila • 3/4 cup orange juice • 3/4 ounce grenadine syrup • Orange slice, for garnish • High-quality maraschino cherry, such as Luxardo,

for garnish

How to mix In a highball glass filled with ice, pour in the tequila and orange juice. Slowly pour the grenadine into the glass over the back of a spoon or by drizzling it down the side of the glass, allowing it to settle at the bottom. Garnish with an orange slice and maraschino cherry.

Moscow Mule A Moscow mule is a cocktail made with vodka, spicy ginger beer, and lime juice, garnished with a slice or wedge of lime. It is a type of buck and therefore sometimes known as a vodka buck.

Ingredients

• Ice cubes • 1/4 cup vodka • 1 tablespoon fresh lime juice • 1/2 cup chilled ginger beer • 1 lime wedge

How to mix Fill tall glass with ice. Add vodka and lime juice, then ginger beer; stir to mix. Garnish with lime wedge

Brandy Alexander With cream, crème de cacao and brandy, classic is a creamy, indulgent delight. With many details of its origin unknown, the Brandy Alexander became popular in the early 20th century. Try this cocktail as a decadent after-dinner sipper.

Ingredients

• 2 oz Cognac or other fine aged brandy • 1 oz Dark crème de cacao • 1 oz Cream

How to mix

Add all the ingredients to a cocktail shaker and fill with ice.

Shake, and strain into a chilled cocktail glass.

Garnish with freshly grated nutmeg.
