1. Cut garlic bread in half diagonally.2. Place garlic bread slices on an unsprayed breadstick or Pan pizza pan.2. Top garlic bread with mozzarella cheese (if applicable).3. Sprinkle Breadstick Seasoning over garlic bread.4. Place in convection oven @ 450°F for 3 minutes or in pizza oven (half pass starting in centre) until golden brown.5. Using spatula, place garlic bread in basket with a red checkered liner (dine-in) or in appropriate box with an insert (takeout/delivery).6. If using as a pasta garnish, on edge of meal size pasta bowl.

1. Saute olive oil and chicken (if ordered) until it is slightly brown on the edge, then add sauce and Parmesan cheese and mix until sauce is bubbling.

OR

1. Reheat pasta noodles for 30 seconds and place into appropriate warm bowl.2. Saute sauce and Parmesan cheese until the sauce is bubbling.3. Place sauce over noodles with a twist.4. Garnish with Parmesan and parsley over the pasta.5. Serve with 1 slice of toasted garlic bread cut diagonally in half.

1. Weigh out the 4 cups of cold water into a bucket.2. Squeeze the sauce paste downward and away from seam.3. Cut the top completely off the pouch.4. Pour sauce paste into bucket and mix with water.5. Blend thoroughly with a wire whip and scrape sauce from bottom and side of bucket with a spatula.6. Label, MRD and refrigerate.

Meat Sauce

Emergency Thaw Procedures

1. Thaw sauce in thawing rack overnight for minimum of 12 hours.2. Thawing rach must be cleaned and sanitized once per day.

Prepping for the Maketable1. Open up to 4 pouches with Pouchmate and fill 12 qt. sauce bucket with thawed meat sauce: − Use Pouchmate to empty entire contents from pouch. − Sauce may be stored in walk-in up to 2 days.2. Pour sauce into a 1/6 (or ¼) insert pan and place near the end of the maketable.3. Place insert pan on the maketable: − Place #6 white handle disher for portioning and add sauce for Individual Pastas. − Shelf Life: 2 days

Tools: Large insert pan or poly container1. Place frozen pouch of sauce into a large insert pan or poly container.2. Place the container in the empty prep sink or 3rd compartment “sanitize” sink (if there is no prep sink): − Sink must be clean and sanitized before and after thawing procedure. − Do not place stopper in sink.3. Turn on cold water only and run in a slow continuous stream into container: − Cold water must always be below 70°F. − Product will thaw in approximately 60 – 90 mins.Note: Product in pouch must never exceed 40°F., while thawing using this process.4. Remove pouch from water, open pouch as needed or dry pouch with paper towel, label with MRD and place under refrigeration.
