Editor’s Notes
I would like to say that we planned to make
this week’s magazine a health issue. But, I
would be lying if I did. Like most things with
this magazine, it happened naturally and I
decided to just run with it.
We have 2 healthy recipes provided by our
resident Food Junkie Tobenna. There’s a
Home Workout I found online that requires
no weights and one that does. Even The Desk
comic strip is getting healthy thanks to Nyx.
I think this is a good thing. I myself need to
get back into the habit of working out
regularly and I hope that this week’s issue
inspires a few other people to do the same.
I also want to say a warm thank you to all the
readers, contributors and guests of the
magazine. It’s so amazing to know that so
many great people are interested.
Over the next few months we will continue
with the development of the magazine and try
to find our stride and be a bit more focused.
This week we will begin to place
advertisements from our contributors or to
products and services that we endorse on the
site and we will start adding them to the PDF
version of the magazine from next week. We
still aren’t selling ad space just yet though.
We also have a mother’s day issue coming up
next week. That one promises to be fun. Will
also have an issue dedicated to poetry.
We haven’t had any real Tech Articles because
our Tech Writer has been swamped with work
and this magazine isn’t a paying gig. But to
make up for it we are planning an issue
dedicated completely to the use of technology
in the arts. (Please note my other contributors
are learning of this for the first time as they
read this and I may get tarred and feathered in
the coming days. LOL)
We will also be welcoming a new contributor
from next week.
So again, thank you all for your support thus
far and we invite you to continue on this
journey with us.

Fish en Papillote – By Tobenna Wells
4 servings, 341 cals per serving

This method of cooking fish is one which is
so straightforward and especially easy, as it is
versatile. You could switch up the vegetables
and herbs as necessary for them to suit your
own palette, and you could even add some. I
once had it with shitake mushrooms and I
absolutely loved it. Experiment with this one
and see what your own preferences are.
Ingredients
Four white fish fillets (Snapper for availability
in Barbados)
4 wedges of lime
½ cup onion, sliced
¼ cup carrots, chopped/diced
¼ cup celery, chopped/diced
4 tbsp thyme, divided into four portions
4 tbsp white wine
4 tbsp butter
4 tsp salt
4 tsp black pepper
Method
Preheat oven to 350 degrees
Fahrenheit.
Cut for sheets of parchment paper at
10 inches lengthwise and fold in half.
Grease one half of each sheet of paper
well with butter.
Divide all ingredients by four and
place them on the sheets of paper in
the order of: Fish, salt and pepper,
lime wedge, onions, carrots, celery,
thyme and white wine.
Fold over the paper to cover the fish,
and then fold the edges up towards
the top of the fish from one side to
the other, making creases all around.
Place onto a baking sheet and into the
oven. Cook for 30 minutes.
Serve in the packets of paper. The
dish is consumed straight out of the
pack which they were cooked in.

Vegetable Casserole – By Tobenna Wells

This is a basic vegetable dish cooked in a
cheese sauce. The base sauce used in the
preparation is called a “white sauce” (flour,
butter/margarine and milk.) to Barbadians.
What I find to be pretty interesting is that this
“white sauce” is called a Béchamel sauce in
French cuisine, and when cheese is added it’s
then called “Mornay sauce”. I could write an
entire article on this, but for now I’ll just get
to the recipe.
Ingredients
2 cups carrots, chopped
1 cup green/string beans
1 cup beets, chopped
2 cups potatoes, peeled, boiled until fully
cooked and sliced widthwise
½ cup butter/ margarine
½ cup flour
4 cups milk
2 cups cheddar cheese, grated
2 tsp salt
2 tsp ground black pepper
Method
Preheat oven to 180 degrees
Fahrenheit.
Blanch the carrots, beans and beets by
placing all of them in boiling water for
approx. 1 minute. Remove and place
in a bowl of ice water to halt the
cooking process.
Heat milk in a saucepan over medium-
high heat until its simmering (DO
NOT BOIL!).
Melt the butter/margarine in a
saucepan over medium heat. Add the
flour while mixing with a whisk to
avoid clumping. When it’s mixed
together well and has a blond color
slowly add the warmed milk a bit at a
time (Take care not to allow the flour
and butter mixture to turn to a color
any darker than blond.).
When all of the milk is added, remove
the sauce from the heat and stir in the
grated cheese a bit at a time.
Place all the prepared vegetables into a
casserole dish and pour the cheese
sauce over it.
Place the dish uncovered into the
oven and bake for 45 minutes, or until
the top is golden brown in color.
*N.B.* - This dish can be made with any
vegetable of your choice and preference.

Shape Up

Fitness Class
When this Magazine
was first
conceptualized, the
idea was to not only
feature various artistes,
but their products and
services as well. This
week we are going to
focus more on the
product and service
than on the person.
Many of you already
know Ramon
“Doddy” Dodson. A
member of Azman, an
actor and well known
model. On top of that, he’s a very down to
earth guy who’s easily accessible.
Doddy is also a very well-known personal
trainer. Part owner of Barefoot Boot Camp
(which we will be featuring in the coming
weeks), with his longtime friend and business
partner Corey Springer, and also the owner of
Fitness with Doddy.
Doddy is running a summer class called Shape
Up, to help people get started with their
fitness goals. It runs from
May 12 to July 10 (that’s
10 weeks of classes 2 times
a week) and comes with a
FREE MEAL PLAN. The
meal plan is worth the
price alone.
We promoted the class last
week but this week I got to
ask Doddy a few questions
about it.
How many years have you been running Shape Up?
I have been running my Shape Up classes off and on for about 2 years.
What motivated you to
begin Shape Up? I wanted to offer the average person an opportunity to transform their bodies and change their lives. I wanted to make what ordinarily is a luxury item, available and affordable.

Who is this class made for? Or is it for anyone? The class is for anyone who wants to improve their health, fitness and body image.
What can a person expect from each session? What type of workout? Give me a basic idea One can expect a dynamic blend of exercises from various fitness disciplines. Explain a little about the diet plan and is it easy to follow? The nutrition plan offers members of the programme a structured and calculated approach to organising daily meals towards their goals. It is easy to follow and more importantly SAFE! What are some of the emotions you feel when you see your clients success? I feel elated when a client is able to realise their goals. To see the fruits of their labour come to the fore fills me with indescribable pride and it is an inspiration to all persons who witness their transformations. I am humbled and motivated anew each time.

NB: I am not in any way a fitness professional. If you
are looking for a fitness professional, see the previous
article for Doddy. This is just an opinion from a
person who knows how hard it is to find time to
workout. Let’s get that clear from the beginning.
Sometimes it’s hard to find time to go to a
gym. With work, children, school and an
entire slew of other responsibilities, finding
time to work out just isn’t that easy. But
finding that time is very important to your
well-being.
Working out helps not only to keep you
physically healthy, but mentally healthy as
well. There’s tons of research pointing to the
fact that physical activity helps to fight stress
and depression.
It’s a great way to revitalize yourself and build
a new you.
Recently, I’ve noticed that with the right key
words, you can find some pretty good
workouts on YouTube.
Here are couple I found that I really like.
There are many more on the site and with the
right keywords you may be able to find one
that suits you better. Remember to always
check with you doctor before starting any
workout programme.
