Over 80 entrees can be found on the menu, including favorites such as crispy shrimp and mango tacos, sizzling fajitas, traditional combination plates and delicious burritos, plus an abundant selection of creative, healthy Mexican salads and vegetarian choices, and a full gluten-free menu.

Originally opened in 1980 in Old Town State Park, Diane Powers took inspiration from Juan Bandini – a Peruvian who immigrated to San Diego as one of early California’s first Dons – and Mexico’s early period of elegant living and dining to fill Casa de Bandini with beautiful art collections from Peru and magnificent gilt gold mirrors. Outside, many long-time diners may also recognize the Mexican Cantera stone fountain centered in the Talavera tiled pool as the same one from the original Casa

de Bandini. Powers found this magnificent, hand-carved piece in the late 1970s during a trip to Guadalajara.

In addition to authentic food and décor, Casa de Bandini hosts live performances from its famous mariachi group, Cielito Lindo. Diners are serenaded as these world-class musicians stroll through the restaurant, Wednesday to Sunday evenings.

Casa de Bandini also offers a fun, welcoming atmosphere for special events – all year round. Whether you are celebrating a small holiday party of 25 or a large office banquet of 125, this seasoned staff can turn any event to a vibrant fiesta! With custom event menus that offer a wide range of choices – includ-ing gluten-free, vegetarian and healthy dining selections – there is something for everyone in your party. Big John’s short history of the Tri-Tip steak

Warm up your holidays with Irish hospitality

Stop in for a proper pint at Hennessey’s Tavern in Carlsbad.

Those who know Big John know he has a great story behind every part of his business, but few are aware of the key role he played in the popularization of the Tri-Tip in California. John’s love for his German heritage, and passion for quality meat products, all contributed to making this delicious cut of meat a locals favorite.

In Germany, the Tri-Tip beef cut was very selective. It was called either Burger-meisterstück or Pastoren-stück and was only available to select members of society. Back in the day, it was not as popular in the United States, as Tri-Tip cuts were usually cut up and used in other dishes such stews or made in to cube steak. Enter Big John.

John Haedrich, owner and founder of Tip Top Meats, hails from 3 generations of passionate butchers. At age 27, he moved from Germany to the United States, bring-ing with him the traditions of Germany, his extended knowledge and degree in butchery he gained while living in Berlin and his love for Tri-Tip. In 1967, John

opened his first butcher shop in Glendale, where he perfected the cutting and preparation of Tri-Tip. Along with his elite staff of esteemed butchers, John masterminded the perfect technique to cut the Tri-Tip, which they affectionately named the “Wedgy.”

The perfect seasoning for a Tri-Tip was no acci-dent. John befriended Lau-rence Frank, owner of the famous Lawry’s Prime Rib on La Cienega Boulevard.

Mr. Laurence developed the now famous Lawry’s seasoning that can be found in just about every American kitchen. Haed-rich went on to process the “Wedgy” using some of the seasoning techniques learned from Mr. Lawry, developing his own unique blend of pepper, spices and burgundy to compliment his all-natural marinade. When word got out about the special cut and sea-soning, demand for the

Tri-Tip exploded. The rest is history.

John Haedrich moved his world class operation to Carlsbad in 1977 and brought with him the Tri-Tip cut “Wedgy.” When he moved here the Tri-Tip was relatively unknown and he introduced it to the area and made it very popular.

Today, Tri-Tip is one of Big John’s passions, and the Wedgy is one of the most popular cuts sold. Tip Top Meats carefully prepares

and sells 100’s of pounds of this special Tri-Tip every week.

John is excited to announce a new partner-ship with West Coast Prime Meats. Their motto “Always the Finest Quality”, which is Big John’s promise to all of his customers.

To this day, if you bring in your carving knife, the staff at Tip Top Meats will sharpen it perfectly within 5 minutes so you can better cut your meat at home. This was promoted in John’s shop in Glendale and is a great tradition he carries on today.

John’s philosophy is to buy the best, sell the best at the lowest possible charge and customers will beat your doors down. He is currently 90 years old and is happy and proud to be able to pass these great traditions on for future generations. New Village Arts has created a forum for laugh-ter, discussion, and deeper thinking in Carlsbad since 2001. Through educational programs, the Foundry Artist Studios, live music events, and unique the-atrical productions, NVA delivers artistic opportuni-ties and collaborative pos-sibilities that are crucial to a healthy community. In July, NVA began its eighteenth season of adven-turous artistic experiences, with six mainstage shows, a concert series, and commu-nity outreach events. NVA produces its seasons with

the support of the City of Carlsbad, the California Arts Council and local businesses like Jazzercise, Datron, and Nordson. For years, Carlsbad residents have looked to NVA to provoke important conversations in our community, and to provide the training ground for future generations of art-makers and art-lovers.

New Village Arts cele-brates our local community through the arts, supported by our corporate sponsor-ships and community partnerships.
