    I changed this recipe from the way I made it on the program to serve it in a glass rather than unmoulding it. This makes for an even more lovely creamy finish.

    METHOD

    Heat cream, milk and zest (if using) in a small saucepan so it is hot but bearable to touch and definitely not boiling. This is important, as boiling will cause the mixture to separate and lose its beautiful creamy consistency. Remove from stove.

    Soak the gelatine leaves in cold water for 30 seconds, squeeze out any excess water and whisk into the hot cream and milk mixture. Run the mixture through a sieve to remove any lumps and the zest. Mix in the orzata and pour into martini glasses or bowls and refridgerate for at lease three hours or overnight.

    To make the lychee cream, whisk the cream, icing sugar and lychee liquor to emulsify. Pour over the set panna cotta and serve.

    INGREDIENTSServes 4250ml pouring cream150ml milkzest of 1 lime (omit if pairing with lychee cream)100ml orzata3g gold gelatine leaves (see note below)

    Lychee Cream250ml thickened cream2 tbs icing sugar30ml lychee liquor

    Note:Gelatine leaves come in different grains; titanium, bronze, silver, gold and platinum; depending on their strength. Platinum is the strongest.

    Could I substitute the orzata for amaretto? That is an almond liqueur.

    You can substitute gelatin leaves with equal amounts of Agar Agar. Agar is available flaked, powdered or in bars. Agar is a gelling agent derived from cooked and pressed seaweed. - team poh

    Hi Kat, Thanks for your review. Definitely not vegan as this recipe contains milk, cream and gelatin which are animal products.

    This recipe looks amazing! I was trying to get the ingredients and I got somehow confused... I thought Po has used chinese Almond powder, which I guess is replacing orzata here. And also, does anyone know where can I buy gelatine leaves?

    Orzata is an Almond syrup and you should be able to find it is supermarkets or speciality stores.

    orzata is sweet almond syrup, I think she replaced the almond powder with this

    Orzata is an almond based syrup. You could probably find it in liquor shops. As Poh states, she changed the recipe for a different finish. Where she added almond powder in the show, she substituted orzata on the website
