    Sorry Poh. Mine really didn't work out. Took 1hr and 15 minutes for the sago tocook, didn't taste great and the egg went patchy in the mixture. Maybe I didsomething wrong?

    METHOD

    Boil water and rain in sago, stir immediately to separate grains. Add pandanleaves and cook until the pearls are completely translucent. If there is still themost miniscule dot of white at the centre, it will be fine by the time you drainthe sago. Do make sure they are tender by having a taste, to see if the grainybit in the centre is not prominent. Drain, remove pandan leaf and washthoroughly with cold water. Fold half a beaten egg white and a couple of dropsof pandan aroma pasta through. Scoop the sago into individual moulds thathave been lightly greased or into one large one. Cover with plastic wrap andrefrigerate to chill.

    On medium heat, melt palm sugar in a small pot with a tiny drop of water. Setaside to cool to room temperature. If using canned coconut milk it may be tothe boil and if necessary water down with cows milk so it is consistency ofpouring cream. Allow to cool to chill in fridge.

    To serve turn out the sago from mould/s and spoon over palm sugar and

    coconut milk to taste.

    INGREDIENTS

    1 cup sago

    2 litre water

    3 pandan leaves shredded byhand and tied into a knot

    OR 1/2 tsp pandan aroma pasta1 egg white, beaten to soft peaks

    3/4 (150g) cup dark palm sugar,chopped or shaved

    1 1/2 cups coconut milk (if verythick, water down)

    1/4 tsp salt

    I tried to make this dessert tonight, but I failed with the palm sugar syrup :(

    The palm sugar syrup definitely needs at least 1 cup of water in order to havePoh's consistency.

    Hi Poh,I love this dessert as I cook it every weekend already. It is so simple, quick, cheapand so so yummy!

    Could you let me know why you need to add the beaten egg white to the sago? (Ididn't really like the look of it because you can see the egg white colours betweenthe green sago).

    This turned out very delicious - a lovely light dessert. I thought the recipe neededmore water added to the palm sugar than stated otherwise the palm sugar justcaramelizes and becomes rock hard.
