About the Chefs

Stephanie Brown, Executive Chef/Owner SeaGrass Bistro, Yarmouth

SeaGrass, at home in Yarmouth for seven years and awarded 5 stars from the Portland Press Herald, presents a new philosophy on dining out. In this American style bistro Chef/Owner Stephanie Brown will offer the freshest local ingredients with some Asian, French, and Tuscan influences. But Chef Brown doesn’t want to restrict her clients to a menu, she wants to combine her passion for great food with the unique tastes of her customers. “I shouldn’t tell you what to eat,” says Brown, “a menu is a just a guide-line to what’s on offer. You’re paying me for a service.” And at SeaGrass that service is personal and individual, not mass produced. So in a departure from this culinary era where celebrity chefs rule, Stephanie Brown wants to give the dining experience back to the people. “My ultimate goal,” says Brown, “is to get to the point where a server just tells me when you come in. Then I take the day’s ingredients and, using what I’ve learned about your particular tastes, I can create something amazing just for you.”

Jonathan Cartwright, Executive Chef The White Barn Inn, Kennebunkport

Jonathan Cartwright has been at the White Barn Inn Restaurant since 1994. He began as a Sous Chef and became Executive Chef in 1996. His talents were quickly recognized, and he and the restaurant began to receive critical acclaim. Chef Cartwright has twice been invited to cook at the prestigious James Beard House in New York City and, most recently, at the Versailles Palace in France, an honor accorded only to the greatest chefs. The White Barn Inn Restaurant has had its share of honors, too, receiving hospital-ity’s highest accolade, a 5-Star rating from Forbes Travel Guide, consecutively from 2006-2012, and AAA’s Five Diamond Award consecutively since 1992. “I believe that my menu creations are influenced by a love of European-style cooking acquired from my experiences,” says Cartwright. “This is fused with the many culinary and cultural inspirations of my present home, coastal Maine”. In addition to his responsibilities as Executive Chef, Cartwright is chief operating officer of US Hotels New England, part of the family-owned business that owns the White Barn Inn and a collection of six further hospitality properties in New England, the most recent acquisition being the Windham Hill Inn in West Townshend, Vermont. Most recently, Chef was appointed Group Chef de Cuisine of Grace Hotels, a sister hotel group, where he has opened a second restaurant, Muse by Jonathan Cartwright in the Vanderbilt Grace hotel in Newport, Rhode Island.

Sam Hayward, Executive Chef & Co-Owner Fore Street, Portland

Sam Hayward is the 2004 winner of the James Beard Foundation’s Best Chef- Northeast award, and in 2011 he was named Sustainer of the Year by the Chefs Collaborative for his career-spanning work encouraging local, sustainable agriculture and fisheries. Since its opening in 1996, Fore Street has twice been named one of the Top Fifty Restaurants in the U.S. by Gourmet Magazine (2001 and 2006), and has been a finalist for the Beard Foundation’s national Outstanding Restaurant award (2010). Sam also serves as Executive Chef for the Cobscook Bay Company in Trescott Township, Maine. He currently serves on the boards of MOFGA and the Bowdoin International Music Festival.

Ken Thomas, Fore Street Kitchen ManagerKen Thomas has been the kitchen manager at Fore Street Restaurant for 12 years. Previously Ken was at the Harraseeket Inn. Ken is from the west coast originally and sailed into Portland some twenty years ago. Ken’s position at Fore Street allows him to work with some very interesting people and he is constantly amazed at the bounty of food products that Maine and New England have to offer.

Nate Nadeau, Fore Street Sous ChefNate Nadeau is the long serving sous chef at Fore Street in Portland, Maine. The first place Nate stopped on the way home from being born was his grandfather’s fish market. He’s been in the business since. He is an enthusiastic outdoorsman and a recovering touring musician.

Lee Skawinski, Executive Chef & Co-Owner Cinque Terre & Vignola, Portland

Lee Skawinski has earned an increasingly influential slot on the nation’s culinary map, in no small part due to his “old school” approach to Italian cuisine. GQ sums it up best: “In all of eating, there is no better idea than Lee Skawinski’s: Apply the principles of small-town Italy to an American restaurant.” Known as much for his longtime commitment to the nation’s increasingly influential Farm-to-Table movement as for his authentic, Ligurian-inspired cuisine, Skawinski continues to catch the eye of the food and wine press ranging from Gourmet, The Washington Post, and Wine & Spirits, to StarChefs.com, Food Network and USA Today. After graduating from Newbury College’s Culinary School, the aspiring chef traveled throughout Europe to learn firsthand about seasonal cooking and top-tier wines. He went on to make a name for himself by cooking at Boston’s Four Seasons Hotel before moving on to chef at Freeport’s Harraseeket Inn. A two-time presenter at The James Beard House, Chef Skawinski is actively involved in the Maine Organic Farmers and Growers Associa-tion (MOFGA), the Slow Food Movement, and in Gruppo Ristoranti Italiani, a highly regarded national group of influential restaurateurs dedicated to elevating the perception of Italian food and wine throughout the hospitality industry.

About the PSO Wine DinnerThe PSO Wine Dinner and Auction has been a fixture on the Portland calendar of “must do” events since 2002. It was the brainchild of Jeff Kane, a Portland Symphony Orchestra board member and CEO of National Distributors. Along with Sam Hayward, Fore Street owner and chef, and nationally known food guru, they conceived of an event in which a selected winery would choose wines for each course and the participating chefs would create a dish to complement the wine.

Typically the wines in any given year are from the same country or region and have included New Zealand, Portugal, Italy, Chile, California, France, Sicily, Sardinia, Australia, Spain and Argentina.

We have been lucky enough to have had the support of many of the area’s finest chefs. Be part of an Italian hands-on cooking experience and fine wine tasting at “Casa di Kane”

Be ONe OF THe 12 LUCKY PARTICIPANTS ON SUNDAY JUNe 3RD (3:30 Pm)

Join Judy and Jeff Kane and Kathy Bechtel for an intimate June evening discovering the foods and wines of Northeastern Italy. You will begin with an antipasti and prosecco aperitif, and then move on to a fun, hands-on cooking class where you will let Italy inspire your cooking, using fresh, local Maine ingredients to create some simple, yet wonderful dishes. Possibilities include some wood-oven pizzas with new twists - taleggio cheese, figs and honey; prosciutto, pear and ricotta; followed by grilled steak with balsamic glaze with wood-fire cooked polenta. You will then sit and enjoy a delightful dinner, savoring the fruits of your labor and experiencing some of the wonderful, but often overlooked wines from the Veneto, Trentino-Alto Adige, and Friuli-Venezia Giulia.

Instructed by Kathy Bechtel, Culinary Director of Italiaoutdoors, a small guide team that designs and leads active (bike, ski, walk, and hike) adventures in Northern Italy. Kathy is a trained chef, food blogger (www.chefbikeski.com), and wine aficionado, special-izing in the foods, wines, and cuisine of the Northeastern regions of Italy.

You’ll figure out what tasks need to happen when, and who will do what. Then people volunteer for tasks, and the dishes they would like to cook. Then you get to work -- some people really want to participate and they take on the bigger tasks, some people just want a little job, some people just want to visit and drink -- everyone does what they want. You don’t have to be a cook to attend, you can leave that to your spouse or friend –you may just want to come and enjoy the process, the dining experience and of course learn about and taste the wines from Northeastern Italy.

The event will be held at Judy and Jeff Kane’s house in Falmouth. Jeff will have his wood-fired oven working at 600+ degrees and will of course have an amazing line-up of fine wines from several Northern Italian wineries.
