ORIGIN: Wairarapa
CLIMATIC CONDITIONS: Cool spring causing a late
start to the season while a long and dry summer/autumn
ensured ideal ripening conditions.
DATE OF HARVEST: 27 April & 4 May 2010
HARVEST & VINIFICATION: Hand-picked and
100% de-stemmed. Fermentation in stainless steel vats
and maceration for 3 weeks. Aged in 35 % new and 65%
used French Oak barriques for 24 months.
DATE OF BOTTLING: 19 June 2012
ALC: 14.0% VOL
TASTING NOTES: Deep purple. Lively sweet plums and
black fruit with freshly ground white pepper, wild herbs
followed by some liquorice, roasted gamy meats and
smoky minerals. On the palate plums and boysenberries,
freshly ground white pepper, dark chocolate with layers of
smoked meat and Jalapeño pepper. Good concentration and
rich, vivacious acidity, beautiful purity with smooth but
present tannins. A wine with a long lasting finish.
DRINKING TEMPERATURE: 16-18 ºC
CELLARING: 5-10 years
