Speaking from a foodie standpoint,indulgence was the theme thisChristmas. Seriously. From the
prime rib, pasta, bread pudding andcoconut haupia cake on Christmas Eve tomore prime rib, turkey, mashed potatoes,brownies, chocolate cake and coco puffson Christmas Day, my stomach cantake no more. Talk about a majorkanak attack.
So, while my tummy is stilldigesting these feasts, it’s time toget back on track and start the newyear with a clean slate. Ahi is theanswer, and the Islands’ mostwidely observed New Year's tradi-tion at that. Believed to bring luck,ahi is the prime indication that anew year is upon us.

Owned andoperated by the husband-and-wife teamof Kit and May Yiu, Kit n Kitchen hasbeen attracting diners for the past 11years with a myriad of eclectic fare,ranging from the most tender of meatsand savory seafoods to decadent pastasand so much more.
Dining Out recently caught up withMay — who also serves as executivechef of the restaurant — over superla-tive fare and conversation. An inde-pendent soul, May shares her passionfor cooking, food and travel. For May,food is the essence of life, and it’s herworldly experiences that have helped tosustain the success of this most sought-after restaurant and will continue to doso for years to come.
DO: Have you always had a passionfor cooking?
Yiu: Yes, I’ve always had a passionfor this. I grew up in Montreal, Canada,and I loved to watch my mom cook.Then, as I got older, I lived on my ownso I had to cook for myself.
DO: When in the kitchen, what isyour favorite style of cuisine to create?
Yiu: Definitely Eurasian. When youcombine European fare with Asian fare,it just complements each other perfect-ly. Chinese cooking has so much flavorto it, but requires the use of a lot of oil,and I don’t necessarily like that. And inEuropean cooking, a lot of things aresimmered, making the food relativelyhealthy. So, I like to combine the two. Ilike healthy food with a lot of taste.
DO: What is your favorite ingredientto work with?
Yiu: Vegetables. That is my primaryingredient that I use when I cook.There’s so much flavor in vegetables.
DO: Please explain some of the best-selling dishes here at the restaurant?
Yiu: There are so many, but I’ll tellyou about some of the most popular.Garlic Pork Chop Chimichurri ($13.95)features bone-in pork chop withchimichurri sauce served over spaghettiwith garlic olive oil, and accompaniedby mixed vegetables. We’re known forour chimichurri sauce and sell it on itsown here at the restaurant as well.
Scallop, Bacon, Spinach Spaghetti($15.95) is another extremely populardish, and presents seared scallop withspinach and crispy bacon over spaghet-ti. It’s a really good combination and

customers can choose their own sauce,be it olive garlic oil, tomato sauce, rosepink sauce or pesto cream sauce.
Then we have Sizzling SeafoodPaella ($14.95), which consists of a bedof toasty rice seasoned with sun-driedtomatoes, saffron and butter, toppedwith a seafood medley of shrimp, mus-sel and squid.
And for the best value, we recom-mend Four Course Meal ($20.95) — aset meal. For the first course, patrons
can select from Garden Saladwith homemade ginger dress-ing, Milano Tomato Soup,Creamy Corn Soup or CreamyMushroom Soup. The secondcourse follows with SpinachLamb Roll — lamb roasted withherbs, mozzarella and pesto inflaky pastry baked to goldenperfection — Grilled Beef withChimichurri and Garlic BasilShrimp. Then select an entreefrom the entree selection, andfinally end on a sweet note withchocolate cake, ice cream,crème brulee or cheesecake.You can add a wine pairing toyour meal for $10 more.
DO: Have you created anynew dishes for customers to try?
Yiu: Yes, I’ve recently addedMoroccan Lamb Stew to the
menu. It’s very, very spicy. It featureslamb marinated with spices and herbs,such as cumin, paprika, saffron, cinna-mon clove and fennel seeds, braised in arich tomato sauce. The spice in the dishis very intense, so I’ve also added insome cranberries for a hint of sweet-ness. Lately, I’ve been playing with a lotof spices, so it’s nice to see the finishedproduct.
DO: That sounds incredible! Do youlike spicy foods?
Yiu: Yes, I love spicy food! I makemy own habanero sauce.
DO: Kit n Kitchen has always beenknown for its Eurasian-style cuisine, butrecently, there have been additions tothe menu, highlighting other ethnic fare.Tell us about this.
Yiu: I really enjoy tasting all kinds offood from around the world, and I’vebeen loving spices. I love to travel, and Irecently had the opportunity to visit Indiaearlier this year — that trip really inspiredme in the kitchen. I visited a local familyand had many dinners with them. As aresult, I learned new cooking techniquesthat I’m able to incorporate into the cui-sine here at Kit n Kitchen. MoroccanLamb Stew is an example of that.
DO: Kit n Kitchen has always beenable to maintain its outstanding cuisine.As executive chef here, what are yourplans for 2013?
Yiu: I hope to travel more andimprove on my cooking techniques. In2013, I would love to go to Cambodia. Iheard it’s beautiful there, and I want toexplore and try all the cuisine. My tastesare constantly changing and I love to trynew things.

Seafood and Steak, the firstthing you’ll notice is itsmesmerizing decor. Thesecond thing you’ll realizeas soon as you sit down, isthat the menu boasts animpressive selection ofitems that everyone canenjoy.
The ceiling ofthe restaurant is aship’s frame, sur-
rounded by lights that mimica starry evening — you’llforget you’re still in Waikiki.
“We like to think of our-selves as friendly with verywarm service, in a fancy,aquatic-themed restaurant,”says executive general man-
ager Steven Matsuno.Located in the middle
of Waikiki on KalakauaAvenue and surrounded byretail shops, the restauranthas been in business since2006.
“Waikiki is bustling rightnow, and it’s a great timeto rediscover it,” sharesMatsuno.
For a limited timeuntil the end of theyear, Atlantis Fillet,the restaurant’s filletmignon is only $49(usually priced at$59). Cooked to yourliking and served withthe vegetable of theday and a baked pota-to, Matusno says thisdish remains a favoritewith tourists andlocals.

Few things in this worldcompare to the simplepleasure of biting into a
freshly baked loaf of breadthat’s still warm from theoven. Or, experiencing anartisan panini that has beencrafted from the same loafand, wow — life couldn’t getbetter!
While most people arecaught up in the hustle andbustle of the daily grind,Fendu Boulangerie chef andowner Niel Koep is slowingdown the pace to masterfully
prepare the best in home-made breads, brick-oven piz-zas, fresh pastries and gour-met sandwiches.
Take the bakery’s FrenchSourdough ($5.25, regular;$3.50 petit), for example. It’snot a bread that gets muchattention here in Hawaii,mostly because its prepara-tion involves a lengthyprocess of cultivating wildyeast and bacterial cultureinto the perfect mixture forbaking.
“It’s the oldest form ofbreadmaking,” explains
Koep. “We are spoiled bygoing to the store and buyingyeast. Well prior to that, peo-ple still made bread, but thesourdough process is whatthey used.”
To craft his European-styleloaf, Koep nurtures his yeast-culture mix by “feeding” itflour and water throughoutthe day. “It’s like having apet,” he says with a laugh.“Some people have a cat anda dog; I have a sourdough.”
The process is certainlyworth it for the wonderfully
crisp crust that results, aswell as a soft, chewy interiorthat boasts a mild sourdoughflavor. The bread is bestwhen accented with butter orolive oil, or toasted up in themorning.
The eatery also is knownfor its mouth-watering sand-wich menu, which includesan impressive selection ofbreakfast paninis (availablefrom 7:30 to 10:30 a.m.).Koep suggests indulging inBacon, Egg and CheesePanini ($7.25), which startswith house-made FrenchBread, of course. Good Golly, Miss Molly… Little Richard isback in the Islands,
thanks to impersonator, tributeartist and entertainer GarryMoore. A local boy raised inHaleiwa, Moore currentlyresides in Mililani and takesthe stage in Legends inConcert Waikiki tonight andtomorrow night performing asthe outrageous “Architect ofRock ’n Roll.”
In the meantime, however,Moore fueled up for hisupcoming shows by partakingin a meal at Panya Bakery,Bistro & Bar, as he takes thespotlight in this week’s DiningWith the Stars.
Moore and I escaped thehustle and bustle of the post-holiday rush and paid a visit toPanya’s Ala Moana Centerlocation, where we were greet-ed with a host of the restau-rant’s signature dishes, includ-ing six-piece Gyoza, Laksa,
Steak Salad and Steamed SeaBass. Best known for its eclec-tic Euro-Asian fare, Panyamade a great first impressionon Moore, who was beyondexcited about this new diningexperience.
“The food here is veryunique. My favorites have tobe the Sea Bass and Laksa,”says Moore. “The Laksa isawesome, I’ve never had any-thing like this. The first bitewas absolutely delicious andthe spice is so good, it justcreeps up on you. I’ll definite-ly be back for more.”
A house specialty, Laksa is aMalaysian-Singapore-inspirednoodle dish. Its soup base is ablend of coconut milk, chili oiland chicken broth, and amound of noodles and a med-ley of seafood complete thedish.
“The gyoza also pairs wellwith the noodles. I’ve hadgyoza many times before, but
this one stands out,” he adds ofthe plump dumplings filled withshrimp, pork and vegetables.
Moore also had nothing butgood things to say aboutPanya’s Steamed Sea Bass.Presented on a bed of tofu andserved with a bowl of rice, thesea bass is soaked in a flavor-intense shoyu sauce and gar-nished with chives.
“The fish is really good. Youwouldn’t think to pair it with
tofu, but it works very well,”Moore exclaims.
And for a healthy alternativeto any meal, Moore highly
recommends the eatery’sSteak Salad, which featuresmorsels of ribeye steak atopfresh greens splashed with aginger lime dressing.
After an A-list meal likethis, Moore is more than readyto rock on! And you can besure that when this celebritytakes center stage jaws willdrop and Little Richard fanswill be in awe. Moore beganhis tribute to Little Richard in1990 when he performed onthe Jerry Lewis MuscularDystrophy Telethon. This wasthen followed by performanc-es throughout the Islands,which led to future interna-tional gigs.
“I’ve been impersonatingLittle Richard for more than20 years and it’s always fun tobe a part of Legends inConcert in Waikiki.
“I had to study LittleRichard’s character, and ittook me about three years toperfect it,” Moore explains.“It’s very important to capturehis (Little Richard) sound.You have to hear it. It’s thesound and the music that willcapture audiences and giveyou chicken skin. I’ve evenhad the honor of performing
with Little Richard himself.”Legends in Concert Waikiki
is a family-friendly, live musi-cal celebration and concert.The show runs Tuesdaysthrough Sundays at 8:15 p.m.at Royal Hawaiian Theater,and transports guests to magi-cal times when classic super-stars ruled the airwaves.Ticket prices start at $40.50(kamaaina rate).

Buffets are popular in part because of the varietyof dishes offered, which makes it easier to pleaseyour whole party. But do you really want the sameold buffet line fare?
Definitely not the same old thing, the concept atKai Market, located on the ground floor of SheratonWaikiki overlooking Waikiki Beach, is to harken
back to Hawaii’s plantation days and the food thatresulted from the blending of ethnicities, offering afarm-to-table dining experience that changes nightly.And if you choose not to eat meat or fish, unlikemany buffets, you’ll not have to settle for the typicalvegetable-based dishes that seem to be almost anafterthought. Why not eat fresh and local?
At Kai Market, island-fresh vegetables and meat-
free dishes also take the spotlight. Executive chefDarren Demaya, who is thrilled to utilize quality,local products in his cuisine and is locally grownhimself, recommends a couple of his favorites fromthe nightly offerings (dinner prices are $55 for adults($58 Friday and Saturday; $35/$38 for seniors age62 and up), $25 for children age 13-16, free for chil-dren under age 12 with a paying adult, one child peradult).

the winds change direction,Odoriko JapaneseRestaurant has proven thatserving a quality menu withchoices for all sorts of cus-tomers coupled with excep-tional service are keys towithstanding the tests oftime.
Odoriko is celebrating its40th anniversary after open-ing its initial location atIlikai Hotel in 1972. The
original eatery was calledMaiko, which led to its sisterrestaurant — Odoriko —opening in 1978, and whilethe original location closedin the mid-1990s, the latterstill remains in its King’sVillage locale in the heart ofWaikiki, away from the hus-tle and bustle.
“We’ve withstood the bighighs of the Japanese eco-nomic bubble, the low timesof that bubble bursting, andalso the American econom-ic bubble bursting, butwe’ve tried our best to standour ground,” says HiroTakei, general manager ofOdoriko, whose restaura-teur father opened theeatery four decades ago.“We’ve predominantly had
Japanese nationals comeand visit our restaurant, butin the past five years or so,the growing attraction ofJapanese cuisine and thefact that more people aretraveling have brought uscustomers from around theworld, as well as more ofour local friends.”
Takei explains that he andthe talented chefs at Odorikostrive to integrate locallygrown and produced prod-ucts and produce wheneverpossible. That effort can be
seen in one of the eatery’smany fresh seafood dishes,including Big IslandAbalone Sashimi ($15 forsmall order, $25 for largeorder), which is available asa special menu item.
Odoriko also offers akamaaina lunch specialmenu designed for thoselocal customers looking fora hearty, inexpensive mealthat can be enjoyed quickly.Some of the special itemsserved from 11 a.m. to 5p.m. include Odoriko Don($7.50), a rice bowl dish fea-turing maguro, salmon andika, as well as NakaochiDon ($7.50), which includestuna atop the rice bowl pre-pared either mild or spicy.
“We introduced a
kamaaina lunch menu sothat our industry friends andother workers, such as thoseat the nearby hotels, couldcome here to enjoy lunch,”says Takei. “They’re on therun, so they need to eat andgo quickly. So, we cater tothem with a menu that’saffordable and quick, andI’m happy about that.”
For dinner, customers canorder a la carte items, as wellas selecting from a host of
Wateishoku (JapaneseDinner Set) selections.Additionally, diners canindulge in the interactivecooking experience of shabushabu, or hot pot cooking,where food is delivered on aplatter and cooked in adesired broth, includingTonkotsu (pork bone broth),Shoyu (Japanese-style sea-weed broth) or SpicySesame.
Chanko-nabe ($16.50 for
one person at lunch, $76 fortwo people at dinner and $38for each additional diner)features a large platter ofOdoriko’s finest meats,seafood and vegetablesincluding crab legs, shrimp,salmon, squid legs, clams,thinly sliced beef, shiitakemushrooms, green onion,bak choy, tofu and shiratake(long rice noodles).
Odoriko also offers a vastselection of sushi and sashi-mi choices, and also featuressmaller dinner sets, such asthe Trio Sampler Set($32.50). The dinner setshowcases the diverse tastesand preparation styles, andincludes butterfish, garlicshrimp, kalbi, salad,edamame, rice and misosoup.
“We offer a dining expe-rience that’s laid back,where loud bursts of laugh-ter and excitement are wel-comed, not frowned upon— this is a place where youlet loose,” Takei explains.“You kick back, have adrink — typically alco-holic, if you’re of age —and you eat pupu-style. Forexample, each individualorders two or three pupu-style dishes like garlicshrimp, butterfish or friedchicken, and another per-son would get grilled squidskewers and whatnot, andthen they share. But,because we have a lot offamilies visiting us, ourmenu is more comprehen-sive, and includes a fullsushi menu, hot pot selec-tions and Japanese- and tra-ditional-style meal sets.”

Romano’s Macaroni Grill hasbeen wowing customers withits classic Italian dishes since
opening in 2005 in Hookipa Terrace atAla Moana Center. And it’s not justlocals the restaurant has been impress-ing. If anything can speak to the quali-ty of Macaroni Grill’s cuisine, it is thefact that Italians visiting the Islandshave been known to frequent therestaurant.
“I had a family come in visit-ing from Italy for a week, andthey came in four days out ofthat week to eat here,” recallslongtime staff member SheldonObra.
The restaurant’s cuisine, afterall, is inspired by various regionsin Italy. The menu features awide range of appetizers, pizzasand flatbreads, pastas, and meatand fish entrees — all served ingenerous portions that are per-
fect for sharing.As general manager Kunani Blake
puts it, the restaurant constantly tries tostay on the cutting edge, often intro-ducing new dishes.
“We like to try new and excitingthings for our guests,” he says.
If you haven’t been to visitMacaroni Grill lately, you might be in
When Romano’s Macaroni Grill firstopened in Ala Moana Center sev-eral years ago, there was a great
deal of buzz surround-ing it.
“It wasn't uncom-mon for us to have athree-and-a-half hourwait at that time,”recalls Sheldon Obra,a staff member whohas been at therestaurant since itopened. “It wasinsane.”
That might sound alittle extreme, but thebuzz certainly wasunderstandable givenMacaroni Grill’s suc-cessful track record.The first Macaroni Grillrestaurant opened inTexas, and has sinceexpanded to includeabout 240 locationsworldwide, includingGermany, Puerto Rico,Dubai and Okinawa.Not to mention thefact that excellence certainly seems to run in its genes, as its sis-ter restaurant is the ever-popular Ruth’s Chris Steak House.
While customers luckily won’t encounter such long waits thesedays, excitement about the restaurant certainly hasn’t waned.
“I definitely like to think that our staff — and our food — bringour guests back again and again,” general manager Kunani Blakesays.
Blake also attributes the restaurant’s success to its ability tocontinually evolve and improve.
“Macaroni Grill tries to keep moving and not be a stagnantcompany as far as redoing the menu and making other changes,”he says.
Just a year ago, in fact, the restaurant went through an over-haul — changing everything from its uniforms and plate wear tothe menu, adding a number of fresh, light dishes.
“Corporate Macaroni Grill has a team of chefs that is constant-ly creating new dishes,” Obra adds, explaining that these chefshave travelled to Italy to search for inspiration and new flavors.
But much of Macaroni Grill’s charm can be found closer tohome in its welcoming atmosphere and friendly staff.
“I think the restaurant has a nice, cozy, warm feeling,” Blakesays. And while that warm feeling certainly is immediately appar-ent in the restaurant's décor, it also extends to the welcomingattitude of the staff.
“We pride ourselves on great food and great service,” Blakesays. “Those go hand in hand.”

when it comes to local,island-style fare. Pay a visitto the eatery on any givenday and you’ll notice thatthe restaurant is alwayspacked with kamaaina andvisitors alike who comehungry — and for good rea-son. Asahi Grill’s OxtailSoup has received ravereviews from diners, andTeriyaki Pork Chops ($9.75)top the list as well.

brought a wave of flavorful Mexican cuisine toHawaii. The eatery has occupied its MonsarratAvenue location fronting Diamond Head for threemonths now, and patrons have flocked there forquality, authentic Mexican food.
Chef Martin Gonzalez brings his experience tothe kitchen, and the native of Sonora, Mexico,infuses fresh, local ingredients with the traditionaldishes that he grew up with.
“The base of everything is authentic Mexicanfood,” explains manager Dustin Hara. “All therecipes are from Martin’s mom, so they’re the realdeal. Everything is made from scratch, fresh inhouse.”

The dish can be ordered with either beer-batteredor grilled fish, and pairs perfectly with one of fourhomemade sauces ranging from the mild greentomatillo variety to the red chile verde sauce,“secret” DH sauce and the sweat-inducinghabanero pepper blend made with island-grownhabanero peppers.
“We use fresh fish in our tacos, and they’re thebomb,” Hara says. “The beer-battered fish taco isprobably our best seller, while the grilled fish tacois a close second. We also make our sauces andsalsa in house, from scratch.”
For those looking to start the day on a highnote, Surf N Turf’s Breakfast Burrito ($7.50 to$8.95) offers up eggs, pico de gallo, seasonedpotatoes, beans and cheese wrapped up in a 12-inch tortilla with one’s choice of bacon, turkeybacon, Portuguese sausage, steak or vegetarianfilling.
Nachos ($7.95) are another popular dish at SurfN Turf, as the selection features a mountain of tor-tilla chips topped with beans, melted cheese, salsaand sour cream. Diners may add chicken, carnitas(slow roasted pork) or steak for just $1 more.
“This is Hawaii, and people love to eat, so ourphilosophy is to give people good portions ofauthentic Mexican cuisine at anaffordable price,” Hara says.
“There’s a definite need for authentic Mexicanfood on the island.”
Burritos ($6.95 to $11.95) also are specialties atSurf N Turf Tacos, and diners may choose from ahost of flavorful fillings including char-grilledchicken, carnitas, steak and fish to complementthe refried or black beans and rice wrapped up ina 12-inch flour tortilla. Also, for $1 more, onemay choose to add sauce for a wet-style burrito.
In addition to selecting their favorite a la carteitems, customers are encouraged to make the mealinto a combo (additional $2.99) with the additionof chips, salsa and a medium drink. Or, one can“make it a meal” (additional $3.99) by addingbeans, rice and a medium drink.
Customers are allowed to bring their own alco-holic beverages, and may enjoy these drinks for aminimal $5 corkage fee per party. Also, keep aneye out for Surf N Turf Tacos in Waikiki as theeatery is planning to open a second location in thenear future on Kuhio Avenue.
