Rukola (rikola, rikula) Eruca sativa, eng. Rocket salad

Prvenstveno je salatna biljka, ali se koristi i kao začin. Ova biljka, naoko skromna, ima veoma dugu istoriju. Još u starom Rimu predstavlja drag-ocjen začin. U Italiji, list rukole se dodaje salatama, jelima od tijesta, u picu, rižotima svih vrsta, u sosovima se može koristiti umjesto bosiljka ili origana. Bogata je alkaloidima i fl avonidima. Hemijski sastav rukole još nije potpuno poznat. Ono što se zna jeste da ima 100 miligrama askorb-inske kiseline, P-aktivne materije, do 76 mg karotina, glikozide, posebno tip sinigrin, biljno ulje. Prava je riznica vitamina, posebno C, kao i joda, povećava nivo hemoglobina u krvi, a izbacuje višak holesterola, pomaže kod profi lakse zloćudnih tumora.

Rocket Salad Eruca sativa

Primarily used in salads, it can also be used as a spice. This plant may appear common or simple, however, it has a very rich history.Even the ancient Romans considered rocket salad a valuable addition to food. Therefore, in Italy, this plant continues to be used not only in salads, but also in pastas, pizzas and other baked goods, risotto, and in sauce preparation it can be used as a substitute for basil or oregano.Chemical properties of rocked salad have not jet been determined in their entirety. But, in accordance to what is known, it can be considered is a real vitamin and mineral treasure. For example, it is rich in vitamin C, it increases the levels of hemoglobin in the blood, it lowers cholesterol, and some experiments have proven it to be a vital part in the treatment of certain types of malignant tumors.

Bosiljak Ocimum basilicum eng. Basil

Osjetljiva jednogodišnja bilja iz porodice Lamiaceae, velikih ovalnih svijetlo zelenih listova punih biljnim uljima. Jedan je od glavnih začina mediteranske kuhinje. Bosiljkom se začinjavaju juhe, umaci, salate, nadjevi, paštete, kobasice, svježi sir, kozice, jela od jaja, idealan je začin jelima sa rajčicom, dobro se slaže sa češnjakom i kaparima, s pinjolima i maslinovim uljem. Čest je začin u azijskim kuhinjama u pučkom ljekarstvu. Poznat je kao antiseptik i sredstvo protiv glista, upotrebljava se u aromater-apiji, tjera insekte.

BasilOcimum basilicum

A sensitive, annual plant from the Lamiaceae family, with oval, bright green leafs rich in vital oils and minerals. It is one of the most prominent and widely spread Mediterranean spices. Basil is an aromatic plant used to fl avor soups, sauces, salads, pâtés, sausages, cheeses, shrimp, etc. Basil also works phenomenally when combined with garlic, cappers, olive oil, pine nuts, or as an addition to any tomato based dish. Basil is an important ingredient in Asian traditional medicine as well. It is know as an anti-septic, cure for tape warms, and it is also used in various aromatherapy treatments and as an insect repellent.

KorijanderCoriandum sativum engl. Coriander

Korijander je jak antiseptik, dobro djeluje na živčani sustav. U narodnoj medicini koristi se kao sredstvo protiv želučanih i crijevnih tegoba. Režnjeviti donji listovi služe kao sastavni dio currija, chutrije, umaka i u salatama.

CorianderCoriandum sativum

It is a strong anti-septic, with benefi cial effects on the nervous system. In traditional medicine coriander has been used to tread gastric and intestinal pains and uncomfort. The leafs also serve as addition to curry, and other, sauces, chutneys, and salads.

Nana Mentha sp. engl. Mint

Daje svježinu jelima. Čest je začin u engleskoj i američkoj kuhinji. Njome se začinjavaju mladi krompir, rajčica, mrkva i grašak. Poznat je i umak od mente koji se poslužuje uz ovčetinu i teletinu. Najvažnija upotreba metvice je za slatka jela, voćne salate, čaj, uvarak i kakao, a naročito čokoladu i bombone. Salatni preljev na bazi jogurta često sadrži metvicu, a glavni sastojak mnogih likera (mohito) i sirupa.

MintMentha sp.

Most often used in English and American cuisines. It is used to fl avor new potatoes, tomato based dishes, carrots, and pea dishes. Also, an essential ingredient in the world famous veal and lamb chop dry rub mixture. It is used in certain yogurt based salad dressings, and as a main ingredient in various liquors (mohito) and syrups. Mint is, however, predominantly used in sweets (chocolate, mints, etc.) fruit salads, and tea.

Rabe se listovi, koji imaju blag miris na luk, kao ukras i zacin u salatama, umacima, mekim sirevima i juhama. Jestivi cvjetovi čine dekorativni dodatak salatama.Lagani je antibiotik, poboljšava probavu, čisti krv, snižava krvni pritisak.

ChivesAllium schoenoprasum

Cultivated for it’s leafs that have a faint onion aroma. Used to fl avor and decorate salads, sauces, soft cheeses, and soups. The eatable fl owers of this plant serve as delightfully unique garnish. Chives have some antibiotic properties, cleanses the blood, and lowers blood pressure.

Matovilac Valerianella locusta engl. Corn salad

Začinska salata ukusnih sitnih pljosnatih listova.Matovilac je biljka za popravljanje krvne slike, sadrzi više željeza od špinata i vitamina C i folijat, bogat je izvor kalija s vrlo malo natrija.Zahvaljujući dobrom sastavu folne kiseline matovilac je izvrstan salatni prilog za žene, a ostali vitamini B kompleksa i vitamin C daju mu antistresnu podlogu i korist za zivčani sistem

Čili Capsicum angum eng. chili

Upotrebljava se svjež, začin, sušen, mljeven, kao umak, pasta i ulje, te u začinskim mješavinama.Ljutina čilija je od alkaloida kapsacina,sadrži vitamin C i mag-nezij, što stimulira protok krvi i probavni sistem, pomaže u odbrani od prehlade.Čili se upotrebljava za začinjavanje mnogih jela od mesa, ribe, povrća, sira te za suhomesnate proizvode

Used fresh, dried, grounded, or in spice mixtures. Also popular are chili oil and chili paste. Spiciness of this plant comes from alkaloid capsaicin, it contains vitamin C and magnesium, which in turn results in better blood circulation and renders the chili plant benefi cial to the gastric tract. It can also be used to fi ght certain fl u symptoms. Most widely used to add spice to meat, fi sh, vegetables, chesses, and smoked meat products.

Timjan, Thymus vulgere eng, thymet

Majčina dušica (timjan, vrisak) je kraljica provensalskih začina. S njom se začinjavaju juhe, umaci, nadjevi, marinade, povrće, tjestenina, kobasice, i svježi sir.Nezamjenjiva je za perad i divljač, dinstanu u vinu. Svježim listićima začinjavaju se omleti, salate, leće i jela od paradajza.Sadrži aromatična i antiseptička eterična ulja. Lijeći bolesti želuca i pluća. Kupke s uljima majčine dušice poboljšavalju cirku-laciju. Pomaže pri probavi masne hrane.

It it’s fresh state it is used to fl avor omelets, salads, and tomato based dishes.Thyme contains aromatic and anti-septic oils. It treats certain stomach and lung ailments, and it helps in digestion of fatty foods. Thyme etheric oils are used in bath foam products which improve blood circulation.

MajoranOriganum majorana eng. sweet marjoram

Miris mu je vrlo ugodan, a okus mu je topao, pomalo sladak s po-zadinskom notom gorkoće. Jedan je od najpopularnijih evropskih začina, naročito u kuhinjama Francuske i Njemačke.Majoranom se začinjavaju salate, meso, perad i divljač. Izvrsno se slaže sa mrkvom, kupusom i krastavcima. U Sredozemlju se stav-lja u umak od paradajza i druge umake za tjesteninu. Kako pri kuhanju ne bi izgubio svojstva majoran se stavlja u jelo pri kraju kuhanja. Cherry paradajzpikolo paradajz lycopersicum lycopersicum

Kultivar paradajza sitnih plodova velicine cca 20gr crvene i zute boje mnogo jaceg okusa sa blagim tonom kiselosti nasao je primjenu u kuhinji prvenstveno kao dekoracija na tanjiru, a zbog jakog inteziteta okusa postao je nezamjenjiv u salatama pastama i varivima.

Origanum vulgare eng. wild majoram, oregan origano je jedan od temeljnih zacina talijanske i grcke kuhinje. glavni je zacin pice.origano se izvaredno slaze s gljivama, paradajzom i patlidzanima. origanom se zacinjavaju juhe od povrca, umaci, krompir salate, salata od hobotnice, jela s plodovima mora, jela od mahunarki itd. Aroma se pri kuhanju brzo gubi, pa se dodaje pri kraju kuhanja origano je jedan od rijetkih zacina koji jaci suhi nego u svjezem stanju caj od origana pomaze kod prehlade, probavnih i zivcanih tegoba.

Aroma of this herb looses intensity as it cooks, thus it is recommended to add oregano in the fi nishing stages of the dish.
