&The average time it takes for someone to be diagnosed with Coeliac disease is 13 years! Why? It seems that symptoms are being prematurely attributed to irritable bowel syndrome (IBS), even by doctors.

Part of the problem is that Coeliac disease symptoms are pretty varied and include common gut problems such as bloating, diarrhoea, wind and constipation; also fatigue, unexplained anaemia, mouth ulcers, headaches, depression and sudden or unexpected weight loss. Food intolerance symptoms can overlap with these, especially gut discomfort, diarrhoea and bloating.

Sarah Sleet, Chief Executive of Coeliac UK says: “Doctors should be following NICE guidelines which state that patients with IBS symptoms should be tested for coeliac disease first, but it seems some are too quick to diagnose people with IBS rather than arrange for a coeliac blood test.”

The society has found that around 25% of people with coeliac disease previously had an IBS diagnosis. The only solution is a strict gluten-free diet, so the gut begins to heal and the risks of serious health complications, such as infertility and bowel cancer, are reduced.

Cooking to get the best from your food

You probably spend a lot of time and money shopping to get the best quality foods for yourself and your family but what you do with them next can make or break their nutritional value.

Cooking foods fast at high temperatures can create harmful substances such as heterocyclic amines or trans fats in oils, and cooking foods for too long can reduce their health-giving properties dramatically. This doesn’t mean that everything has to be consumed in its raw state though! Raw is great, but steaming, stir frying and poaching are all fabulous methods of preserving the moisture and maintaining the nutritional value of foods.

The key with foods cooked this way is to make them zing with flavour. A spritz of citrus juice (orange, lemon or lime) with freshly grated ginger and some crushed garlic is enough to light up anyone’s palate and delight the senses. Balsamic syrup (a reduced form of balsamic vinegar) gives an oil-free, sweet edge to any salad, whereas mashed avocado with mustard and lime juice makes a fabulously savoury creamy dressing.

Tomato is the exception to the cooking/nutrient-loss rule; lycopene, a powerful antioxidant phytochemical, is concentrated by cooking, so use passata to make fresh flavourful salsa or combine with onion, garlic and a variety of herbs to make a tomato sauce that’s just right for your dish.

A word to the wise on using garlic and onion: when you’ve chopped them, leave them for five to 10 minutes before adding them to your cooking. The health-giving properties of these wonder-veg rely on the mixing of phytochemicals that are normally held separately in the plant; chopping or crushing enables these phytochemicals to mix and impart their goodness.

I promise you that once you start to explore with natural fresh flavours you won’t want to go back to oil, salt and sugar-laden overcooked foods.

The story behind the

brand

Baldness link to prostate cancer

Men’s Health

A new study has found a link between early-onset balding and prostate cancer in African-American men. Although previous studies have examined the link between baldness and prostate cancer, the research team claim that this is the first to focus on African-American men, a group with a high risk of contracting the disease.

The University of Pennsylvania study involved 318 men with prostate cancer and 219 men without it. The findings showed that baldness was linked with a 69% increased risk of the disease. Furthermore, those men with frontal baldness were more than twice as likely to have been diagnosed with advanced prostate cancer. The connection was also stronger among men who had been diagnosed before the age of 60. The researchers believe that the link could be dihydrotestosterone, or DHT, a type of testosterone which is associated with both prostate cancer growth and early pattern baldness.

f you’ve resolved to lose weight for your holiday it’s important to give yourself enough time to reach your goal. “A mad rush to create physical change simply creates stress and

the greater likelihood of dropping out of your programme altogether,” advises personal trainer Dax Moy (www.daxmoy.com). “Instead, start early, four to six weeks out, and give yourself the space to build the new habits into your life instead of forcing them in.”

Getting the balance right The next thing to take on board is that calorie counting won’t help – “they are a red herring when it comes to getting into great shape,” says Dax. “The reality is, it’s all about your hormones, and your hormones are best balanced through clean eating and making sure that you’re getting plenty of nutrients through a great variety of

foods. Without this, your best efforts at fat loss are doomed from the start. Clean eating means no wheat, dairy, caffeine, alcohol, processed foods or sugar. Sounds like there’s nothing left, right? But you still have all fruits and veggies, meats and fish, poultry, nuts and seeds. That’s plenty to choose from!”

Focus on protein “Most people don’t eat protein regularly enough,” adds sports nutritionist Matt

Lovell (www.fourweekfatloss.com). “Protein will help to preserve your lean mass whilst cutting calories and it keeps you full so you are less likely to overeat. Focus on eating more protein like fish and lean meat, and fewer high GI carbohydrates such as wheat. Eating low GI carbs such as oats and rye will keep your blood sugar levels low to help you avoid sugar cravings.

Grains, particularly wheat, can make getting lean difficult due to additional detrimental effects associated with intolerances. Wheat can lead to water retention, digestive bloating and sluggish digestion. It’s not uncommon to eat a wheat-based cereal for breakfast, a sandwich for lunch and pasta for dinner – and even some biscuits in between, so stay strong and focus on protein!”

The importance of alkalising Maria Zaretti, a nutritional therapist working with Pascoe (www.cressuk.com), shares her tips on maintaining the correct pH balance in your body, which may help you lose weight and shape up so you are your healthy, confident best on the beach.

“Your body has a buffer system to maintain your blood pH at 7.35 (very mildly alkaline),” explains Maria. “This buffer system neutralizes excess acid which then passes through your body, minimising any harmful effects. The Western diet high in meat, sugar and alcohol has a depleting effect on the body’s buffer system and causes acid-alkaline imbalance. What’s more, our buffer systems need constant replenishment and a lack of vegetables and fruit is another factor that promotes acid-alkaline imbalance.”

What has this got to do with shaping-up? “Your kidneys respond to excess acid by increasing nitrogen excretion which indicates muscle breakdown,” Maria continues. “With less muscle you’ll look less toned and flabby. What’s more, it’s thought that excess acid can be stored in fatty tissues such as your hips, thighs and belly, keeping it away from your vital organs. So if you are overly acidic you may look less toned and experience problems losing weight.

The great news is that an alkalising diet appears to help enhance muscle tone. It may also encourage your body to let go of hard-to-shift weight.

To maintain acid-alkaline balance in your body, the most important thing you can do is to increase your consumption of green leafy vegetables, salads and fruits that typically cause an alkaline effect when eaten. This, as well as cutting meat, sugar and alcohol, will help lower acid levels.”

Maria suggests trying an alkalising smoothie such as celery, cucumber and spinach. Also, swap your meat sandwiches for a hummus, avocado, lettuce and tomato wrap and add an extra portion of green vegetables to dinner. A good quality alkalising food supplement may also help restore your body’s acid-alkaline balance more quickly.

Train hard – train smart“In the run-up to your holiday, time your training to maximise fat burning,” advises Matt. “Simply train when your blood sugar and insulin levels are low. These are lowest when you first wake up as this is the longest period the body goes without food during the 24-hour feeding cycle. This will encourage more calories to be burnt from fat, and also promotes favourable hormonal release.”

W e may think of inflammation as something that happens on the surface of our skin, often as the result of injury or infection. Inflammation causes swelling, localised redness

and the inflamed site may be hot and painful. In fact acute inflammation is the cornerstone of the body’s healing

response, providing nourishment and immune activity to the area that requires healing. However it’s becoming increasingly clear that inflammation that persists inside our bodies causes untold damage and is the root cause of ageing and many serious illnesses including heart disease, arthritis, irritable bowel disease, chronic fatigue syndrome, many cancers and Alzheimer’s disease.

Chronic internal inflammation arises from many factors including poor diet, stress, toxin exposure like tobacco smoke, lack of exercise and genetic predisposition.

Some foods contain components, for example lectins and gluten found in grains especially wheat, that may damage the gut lining. Repeated exposure to these foods results in holes in the gut barrier causing leakage of partially digested foods into the blood circulation. Over time, a leaky gut along with chemical signals from lifestyle factors continuously triggers the immune system and internal inflammatory responses. This leads to unnecessary attacks

So how can you stop this destructive cycle? Firstly, love your gut! Reduce foods that may trigger leaky guts like processed foods packed with chemicals and processed grains, including refined wheat products such as biscuits and breads. Natural, plain probiotic yoghurts and gut bacteria supplements provide beneficial bacteria, which support the gut barrier and reduce the body’s inflammatory response.

Enjoy a daily rainbow colour mix of fruits and vegetables for their protective phytonutrient, antioxidant and fibre content (but not tomatoes, peppers or aubergines because of high lectin content). Antioxidants, such as vitamins C and E, from foods and supplements are important for mopping up the damage caused by inflammation. Turmeric and ginger also contain antioxidants and powerful anti-inflammatory nutrients.

InflammatIon and omega-3 “It is well known that a diet rich in omega-3s reduces the body’s overall burden of inflammation,” says Dr Geoff Hayhurst, founder of Paradox Omega Oils (www.paradoxoil.com). “Recent ground-breaking studies have shown how fish oil works inside a cell to produce its anti-inflammatory effects. While studying acute inflammation in animals, scientists noticed the production of small molecules released in response to inflammation, especially in the presence of high levels of omega-3 fats. These molecules had a dual set of actions. First, they sent out a ‘stop signal,’ quickly putting a stop to runaway inflammation and then they triggered the active resolution of inflammation.

It is important to note that acute inflammation is beneficial to the body. Without it, wounds and infections would never heal. The whole system works beautifully under normal conditions of acute inflammation. But with chronic inflammation, something goes wrong. Instead of controlled resolution, inflammation continues to jog along at a reduced level. Studies have shown that people with diseases that involve chronic inflammation have reduced levels of pro-resolution molecules and increased omega-3 in the body seems to activate these anti -inflammatory molecules.”

IncreasIng scIentIfIc, medical and commercial interest in the bacterial populations of the human gut has led to awareness that the ecosystem living inside us plays a major role in health and disease. Common digestive complaints, including bloating, griping, wind, constipation, diarrhoea and Irritable Bowel Syndrome can be tell-tale signs that harmful bugs are ruling the roost, but symptoms may even spread to allergies, poor immunity and complications which may persist for years, unless the bad guys are controlled.

Gastrointestinal-diseases are often very distressing and impact on quality of life. Many problems start with simple disturbances of the hundreds of species of bacteria which inhabit the gut, some of which are beneficial, and others which can be harmful if they predominate. Importantly, it is the relative balance of ‘beneficial-microbes’, which harmoniously

support wellbeing and ‘pathogenic’ microbes which predispose infections and undesirable symptoms.

Stress, food or water contamination, medication (antibiotics/laxatives), food intolerances, vomiting and diarrhoea and travelling can introduce opportunities for pathogenic strains to colonise the gut as they overgrow. Consuming foods and supplements containing ‘friendly-bacteria’, or probiotics can tip the balance back into favourable conditions, by excluding the ‘bad guys’ as they compete for space and food inside the gut. Probiotics restore harmony by controlling the overgrowth of harmful species, rather like removing unruly squatters from a home by bringing back an orderly family.

For the salad

2 stale pitta breads

20 radishes, quartered

2 large tomatoes, chopped

½ cucumber, peeled and chopped

2 shallots, thinly sliced

150g feta cheese, crumbled

2tsp sumac or Zatar seasoning

For the dressing

1 small clove garlic, crushed

15 mint leaves, chopped

Juice and zest of a lemon

4 tbsp olive oil

small bunch flat leaf parsley, chopped

salt and pepper

Serves: 4

1 Mix all the dressing ingredients with some salt and pepper in a small bowl.

2 Toast the pitta and tear into bite-sized pieces. Tip all the salad ingredients, apart from the sumac, into a large bowl. Pour over the dressing and toss well so all the salad is coated in dressing.

3 Transfer into a serving bowl or platter and sprinkle over the sumac.

Lebanese Radish fattoush salad

Try these tasty suggestions for treats to pack in your picnic hamper

Picnic time!

This deliciously simple salad is full of flavour and offers an alternative to picnic sandwiches

1½ cups organic, wholegrain flour

½ cup raw honey

1½ cups mashed or puréed pumpkin

½ cup Bragg organic extra Virgin olive oil

1 tsp baking powder

1 tsp spiceberry or allspice

½ cup pecans or walnuts, chopped

½ cup dried cranberries

egg replacer equal to 2 eggs

Serves: 8

Pumpkin Bread 1 Preheat the oven to 350°F. Combine the flour, puréed pumpkin, honey, olive oil, egg replacer, baking powder and allspice in a bowl. Stir just until combined.

2 Stir in the nuts and cranberries.

3 Pour the batter into an oiled 6x9-inch bread pan. Bake for one hour or until done in the centre.

4 Remove the loaf from the pan and allow to cool on a baking rack.

Weather forecaster and TV presenter Clare Nasir talks to Liz Parry about healthy living, meditation and mindfulness, plus how she overcame fibroids and fertility problems to have her ‘miracle’ daughter

You have faced a number of health challenges in the past, including fibroids and fertility problems. How did you cope with these issues?

Clare: I had fibroids for six years and had to have so many operations that my surgeon

said my womb was like a battlefield. I was told the chances of me getting pregnant were very slim. I underwent IVF and I also turned to acupuncture to complement the process – it was a bit like giving my body an MOT. I also took steps to reduce the stress my body had been under. My acupuncturist, Bernard Nolan, has had great success in treating fertility problems and I used to see him two or three times a week. Amazingly, against all the odds, I got pregnant and had my ‘miracle baby’ Sienna. Having her is the best thing I’ve ever done in my life. Everything else fades into insignificance when I think of my daughter.

Q Have you tried any other therapies?

Clare: I meditate a lot and have learnt some really good visualisation techniques to enable me to have a good mental, emotional and spiritual attitude towards my body. I really do believe that the mind and body are linked and that you can’t heal or help one without the

other. I meditate every day now and it’s a part of my daily life. I followed a course in mindfulness meditation which I find really helpful. It teaches you to meditate while you’re going about your daily routine and gives you a sense that you’re standing on this earth rather than being away with the fairies, or living in the future rather than in the present. The more I do it the more grounded I feel. When you are sick and things aren’t going well for you it’s important to remember that you are more than just your body. The mind has a powerful influence and you can do a lot to help yourself.

Q It’s been well documented in the media that you lost three stone in

weight after being photographed in an unflattering bikini. Can you give us an idea of how you went about losing the weight and keeping it off?

Clare: It was a couple of years ago now and I was always being criticised for my weight in the press. By the time my daughter was eight months old I’d lost a stone but when that awful picture came out it was a real turning point for me and I decided to go for it. In order to produce my workout DVD (Clare Nasir’s Boot Camp) I was helped by a trainer and nutritionist but, to be honest, no matter how much help you have, it’s up to you and it’s a really hard process. You have

to work at it every day, exercising and dieting, but the results are amazing and you feel so good afterwards. It certainly wasn’t a walk in the park though!

Q What sort of exercise did you do as part of your weight loss regime?

Clare: I did a lot of boxing. What I loved about it was that you don’t have to train for hours to get good results. Boxers, when they’re training for a fight, use up to 8,000 calories in a day purely through exercise. It’s called high intensity interval training where you do short, sharp bursts of intense exercise followed by less intense moves to enable your heart rate to come down a bit before repeating the process. For someone like me who has a very busy lifestyle it’s a great way of zapping the fat without having to put in a huge amount of time.

Q How did you manage to fit your workouts around work and looking

after your daughter?

Clare: I would exercise around three or four times a week for an hour and a half. I’d do that in my lunch hour or before work and at the weekends. I’d spread it out. The hardest thing was changing my bad eating habits. I used to love curries. I think when you have a young child you end up just grabbing something quick and picking at things rather than taking time over what to eat.

Q how have you changed your eating habits?

Clare: I eat a lot more consciously now than I ever did. I used to eat in a mindless way. I read up on nutrition and I had some great advice from a nutritionist called Martin Macdonald. We came up with a tailored eating plan for me that incorporated all the nutrients I needed and which enabled me to eat in a balanced and healthy way. I still have days where I just want some fish and chips or a curry, but it’s your mind working rather than your body needing these foods. Q are you working on any other projects?

Clare: Both myself and my husband (BBC Radio 6 Music dJ Chris Hawkins) now work for the BBC. I’m working on a science documentary series called Fierce Earth which is about bringing excitement and passion to the natural world so I’ve been filming around the world with that. I’m also in the process of writing a novel which is currently with a literary agent. It’s the story of a girl’s journey through america and finding peace, contentment and happiness. I’m also working as an ambassador for the Healthy air campaign, which involves lobbying the government to address the high levels of air pollution in the UK. every year 29,000 people die prematurely in this country because of the air they breathe and we also have some of the highest frequency of child asthma symptoms worldwide. It’s just staggering. We will keep campaigning until the government takes notice and takes action.
