D ECEMBER’S here and Santa’s on his way. While I know it’s all too easy to get overwhelmed by the

expectations that go with the season, if we can just manage to stay on the right side of the stress, it’s such a

lovely time of year. Holidays; celebrating with loved ones; kids having so much fun, after all, if you took Christmas away it would leave a rather dark and depressing month. So for me a bit of glitter and some sequins are very much appreciated.

Sophie from the Dinner Set shares some great advice for Christmas entertaining on page 6. You can achieve the wow factor without the woe factor if you follow her seven tips. How ever you are planning to celebrate, I wish you luck, peace and patience, perfect it will never be, but it can always be fun.

Food & DrinkThe Seven Secrets of Christmas EntertainingChristmas is the time to bring friends and family together, to enjoy home-cooked meals over a glass (or three) of something cold, wet and alcoholic with your favourite people. The reality is we’re hopping frantically between last minute work deadlines, the work do (where we had one too many and danced YMCA with the accounts guy), children’s nativity plays, a sick bug and present hunting with a hangover (for which we blame the accounts guy).

Here are seven secrets of the effortless host to help you sail through the silly season:1. PREPARATION MAKES PERFECTThe seasoned host pre-prepares 80% of a dinner party. We’re making stews, pies and lasagne that

pair beautifully with green salads. Even a risotto can be cooked 75% of the way and finished off last minute.

2. EASY NIBBLESIt’s worth having a few easy nibbles to roll out to keep hungry guests from distracting you while you cook. For homemade, try prosciutto wrapped grissini or roasting almonds gently in olive oil, sea salt and paprika. For ready-made, a plate of charcuterie or stuffed olives in a decorative bowl

both work a treat.

3. SHOP AROUND FOR BUBBLES Christmas loves bubbles. Perfect for a drinks party, pre-dinner drinks or with pudding - and they don’t need to cost the earth so shop around. Here are 3 of our favourites:Cava - Cava is making a comeback. We’re

drinking Waitrose’s deliciously dry Cava Brut NV (£6.99/bottle). Great on its own, even better with orange juice for a Mimosa, peach

purée for a Bellini or a splash of fruit vodka (we’re drinking Sipsmith’s Damson vodka.Chapeldown sparkling wine (£20/bottle from Waitrose and Majestic, look out for offers). Wills and Kate served this fancy fizz at their wedding and they know a thing or two about bubbles.

Drappier champagne - an incredibly luxurious Bollinger style bubbly. Favoured by General Charles de Gaulle, you’ll be in good company quaffing this. Retails at £30 (or £20 at Majestic when you buy a few…)

4. EMPLOY A SECRET AGENTLemon is every chef’s secret 3rd seasoning agent. The lemony acidity adds an extra dimension to anything from your Christmas gravy to your veg, curries and salads.5. ANYONE CAN MATCH WINESSimply match the richness of a dish to the boldness of a wine. Delicate flavours like fish need subtle whites (think Sauvignon) or gently reds (like Beaujoulais and Pinot Noir). Strong meaty flavours need big thumping reds (head for the Bordeaux). Wine can create great conversation around the table so get a variety ask your guests’ opinion.

7. SIMPLE EXTRA TOUCHES TURN A MEAL INTO A BANQUETIt can be as simple as a candle (overhead lights favour no-one), a humble bunch of flowers or some hand-picked holly on the table. Sharing

dishes work really well too. Try a simple cheeseboard- 3-5 cheeses on a chopping board with a few grapes and crackers. Or for a rustic informal

feel, bake a Camembert sprinkled with honey, garlic and herbs for everyone to dip some rustic crusty bread into. A beautiful Asian flowering tea makes an easy alternative and an elegant talking point. And even the fullest guest will tell you that they have a separate compartment for chocolate…

CHRISTMAS IS THE PERFECT time for fun craft activities with your own ‘little elves’. These

easy to make Christmas cards will bring out their artistic side and make wonderful keepsakes for friends and family.

MATERIALS NEEDED:• card• green, red and brown paint• sequins and glue (optional)

CHRISTMAS TREE CARDSTEPS:• Fold an A4 piece of card in half, so that you

have a portrait card. One A4 sheet of card folded once will fit a C5 envelope, if needed.

• Squeeze the paint onto a plate.• Dip your thumb into the green paint to make

the tree: Starting at the bottom, apply six thumbprints

for the bottom row, then five, four, three, two and finally one for the top of the tree.

• Use two thumbprints for the trunk, or paint, or draw it on.

• Add sequins for tree decorations, if desired.• Allow to dry then write your message inside to

complete the card.

CHRISTMAS WREATH CARDSTEPS:• Fold an A4 piece of card in half, so that you

have a landscape card. One A4 sheet of card folded once will fit a C5 envelope, if needed.

• Squeeze the paint onto a plate.• Dip your thumb in the green paint. Make a

circle of fingerprints to form a wreath.• Using your little finger dipped in red paint, add

a few berries scattered throughout the wreath.• Draw a bow, or add some ribbon, if desired.• Allow to dry then write your message inside to

complete the card.

These are just a couple of ideas – you could also try fingerprint snowmen, Christmas stockings, or Christmas puddings!

MATERIALS NEEDED:• brown paper or card• red drinking straw• ring reinforcement stickers (optional) • felt tip pens• string or pipe cleaner to hang• hole punch and scissors

STEPS:• Using the template below, cut out the three

pieces from brown paper or card.• Punch holes through all tabs. • Add a ring reinforcing sticker to back of

tabs (optional). • Draw on the eyes, nose and hooves with

POSITIVE AGING REFERS to maintaining a happy lifestyle, staying healthy, engaging fully in life

and feeling good about ourselves as we mature through life.

Many of us react to the aging process in one of two ways. Firstly we see the negative side, associating it with decline and loss. Secondly we become insistent that age is just a number and tend to deny and disguise the progression.

Having and maintaining a positive feeling towards aging can help us feel good and have a sense of control. However I can’t help noticing that somehow ageing has lost its association with wisdom and experience, and become something to fear or feel ashamed about. Nevertheless in some cultures aging is a privileged rite of passage that brings with it honour and added respect.

Adults of 60 and older are now the fastest-growing segment of our population. Having reached this marker myself I can truly identify with the three D’s: decline, denial and disguise! But this hasn’t stopped me from following my dreams! I have experienced tragic loss, failure and rejection but have also experienced abundance, fulfilment and happiness.

As we age our lives and experiences become imprinted on our face, mostly in the form of habitual lines and wrinkles. Many of us through the years will try to reverse this process by engaging in cosmetic treatments and surgical procedures. Some of us will realize that we cannot turn the clock back, so instead will embrace what we have by following a natural path of looking after ourselves both outwardly and inwardly. Preserving our beauty as we age doesn’t have to be viewed as hard work, instead provided we keep a solid foundation of positive thinking and healthy rituals the beauty will shine through.

KEEP A POSITIVE ATTITUDETry to see the bright side of everything. Being optimistic and feeling good about yourself can help you to cope with life’s challenges.

THIS MONTH I AM stepping a little out of the town boundaries but the story is one of great

interest as I hope you will see.

It all began when I was staying with friends in Tavistock and one morning I decided to take a look at the monument to Sir Francis Drake as a distant ancestor had something to do with the unveiling of it in 1883. Standing behind the statue is a rather austere block building with crenellated walls but nothing else of any substance around it. I asked my host for the story behind it and he replied that I should know all about it as there was as much of the tale in Twickenham as in Tavistock.

The building, much resembling a prison or barracks was in fact the old gatehouse to Fitzford House, a sumptuous Elizabethan mansion no longer standing and the home of the Fitz family of Devon.

Four generations of the Fitz family had lived on this site and had all been very successful in the law and had all married well, increasing their property and estates with each generation, so that apart from the Devon estates, they owned property in Cornwall, Kent and Southwark. John Fitz, the father of the subject of this story, was a counsellor-at-law and married Mary, daughter of Sir John Sydenham of Brimpton, Somerset. He had managed to add to the wealth of the family and retired from public life.

Devon folklore has it that one day he and his wife were returning to Tavistock across Dartmoor from Moreton Hampstead and they lost their way; the account states that they were ‘pixy-led’ and went around in circles until they came across a clear running stream. Both exhausted and parched with thirst, they dismounted and quenched their thirsts in the clear waters. Immediately John’s head cleared; he knew where he was and was able to pick up the trail to Tavistock. In recognition of this, he built a granite structure to enclose the well and bearing his initials and the date 1568,

this still stands today. Such was his superstition; he had water from this well piped to his mansion at Fitzford.

John Fitz then become increasingly interested astrology and the casting of horoscopes. So much so, according to the Rev John Prince that when his wife was about to give birth in 1575, he studied the stars and ‘finding at the time a very unlucky position of the heavens, he desired the midwife, if possible, to hinder the birth but for one hour; which, not being to be done, he declared that the child would come to an unhappy end and undo the family.’ Thus young John Fitz came into the world.

Young John’s early days are not documented but he seems to have had a normal upbringing in Devon. Unfortunately John senior died on 8th January 1589, aged sixty-one. His will made his wife executrix and guardian of their son, who was a little over fourteen years old.

Despite John senior’s will, Mary was not granted guardianship of her son. He was a ward to the Queen and was placed in the care of Sir Arthur Gorges, an associate of Sir Walter Raleigh. Young John seems to have been well looked after and there were no early signs of any of the antisocial behaviour to come.

his majority. His bride was Bridget, sixth daughter of the 3rd Earl of Devon, Sir William Courtenay of Powderham. They had one daughter, Mary born on 1st August 1596 when John had reached his twenty-first birthday. Now that he was of age, he considered himself free of all restraint. He was the owner of large estates, and ‘was without stability of character or any principle, and was inclined to a wild life.’

Over the next two to three years, his reputation grew as a boisterous reveller with a fearsome temper who would draw his sword in anger with little provocation.

On 4th June 1599, he was breakfasting with friends at Tavistock and according to ‘The Bloudie Book’, wine was flowing freely and ‘with great varietie of merriments and discourse they outstript the noontide.’ As the day wore on, John Fitz had drunk a great deal of wine and started to boast about his possessions, stating that every foot of land in all his estates was owned in freehold, save that owned by the Queen herself. At this point his friend, Nicholas Slanning of Bickleigh, interrupted Fitz to politely remind him that he occupied a small parcel of land that rightfully belonged to Slanning who could claim rent for it should he so wish.

On hearing this, Fitz seems to have gone berserk, leaping up to call Slanning a liar and in a blind fury drawing his dagger and moving as if to stab Slanning. Slanning swiftly drew a large knife he was carrying and parried the thrust. Before any further action could take place, other members of the party interceded to separate the two and calm was restored, at least on the surface. Shortly afterwards, Slanning probably thought that it would be an opportune time to leave and quietly departed for Bickleigh with his servant on horseback.

A short distance into their journey, they came to a steep and rough descent. They dismounted so that the servant might lead the horses whilst Slanning walked through the adjoining field. Suddenly he noticed John Fitz and four others

bearing down upon him. Slanning awaited the arrival of the party and asked Fitz why they had followed him with such urgency. Fitz answered that he was determined to avenge the insult he had suffered earlier and ordered his men to draw their swords, whereupon all five fell upon Slanning who was forced to draw his own sword in defence. There was a brief skirmish and then Fitz’s men withdrew, sheathing their swords.

There the matter might have rested but for the cajoling of one of Fitz’s men called Cross who shouted ‘What play is this? Why child’s play; come to fight and now put up your sword!’ With this Fitz, who had sheathed his sword, now drew it again and rushed towards Slanning. Slanning was wearing long riding spurs and as he stepped back, they caught in a tuft of long grass and unbalanced him. As he staggered backwards, Fitz ran him through the body and another of Fitz’s men struck him down from behind where he fell ‘foully killed.’

‘Great was the lamentation that the countryside made for the death of so beloved a gentleman as Maister Slanning was.’ His children had not yet reached their majority and had to bide their time to take action.

This is by no means the least of the ignominious incidents to involve John Fitz’s, I will tell you more of his infamous tale in next month’s issue.

INSPIRED TO BRING you an alternative to the traditional Christmas column, I have decided

to approach the festive season from a Latin American perspective. I am, of course, heavily influenced by the fact that I am writing this in Mendoza Argentina, having already been in Chile running wine tours. Chile in particular has been a gastronomic revelation.

PISCO AND CEVICHEPisco is a white brandy with the spirit often distilled from Muscat grapes. The Pisco Sour is a generous measure of brandy, lemon or lime juice, egg white, lots of crushed ice and a drop or three of Angostura bitters. I am not a spirits kind of guy so I thought there was just one type until I discovered a bar in Santiago with its selection of over 150 Pisco based drinks including many different sours and reflecting the Chilean and Peruvian heritage!

SO CHRISTMAS DAY ARRIVAL DRINKS START WITH A PISCO AND ONTO THE STARTERAs a first course at Christmas, smoked salmon is a staple so instead I propose Ceviche. This is a classic South American dish with raw fish marinated in lime or lemon juice and mixed with red onion, peppers, garlic and coriander – but as you can imagine there a multitude of recipes. Key to success is the freshness of the fish of course but as a starter this is refreshing and tasty and just in case you want to stick with a classic wine selection then would be great with Sancerre or Chablis or Cloudy Bay Sauvignon Blanc.

A NICE BIT OF BEEF FOR DINNERWhen I was first in Chile in 1998, my foodie experiences were few and far between and I count an Alfalfa salad in Santiago as one of them. Fast forward to 2015 and I find a vibrant, gastronomic scene with a numerous top class restaurants in the capital producing innovative, creative cuisine that has been a revelation. Both Chile and in particular Argentina are renowned for their beef and this would be a great choice for your Christmas dinner. Now instead of the Christmas

Claret or Boxing Day Burgundy I believe that this is the opportunity to excite your tastebuds with an Uco Valley Malbec – Achaval Ferrer estate is making some sublime wines at present or a Chilean Carmenere. The Carmenere grape has been a revelation and the De Martino estate in the Maipo Valley produce as good as an example that I have ever tasted.

TIM’S DINNERSIn Santiago I experienced a wonderful meal at a fabulous restaurant called Aqui Esta Coco -situated in the upmarket Providencia area of the city. Beautifully adorned, this is a specialist seafood restaurant with an exciting, thought provoking menu. Scallops, prawns, ceviche, hake, salmon, octopus and a variety of others were all available in various guises but what caught my eye was the Congar eel – a true speciality. Lightly grilled with an avocado mousse this was delicious. In Mendoza, there is a terrific restaurant called Siete Cocinas which highlights the variety of regional cooking within Argentina. The meal embraced the senses with cuttlefish and wheat tabbouleh, a puréed green bean and creole sauce on a poached egg cooked sous vide, clay oven roasted goat and an extraordinary dulce de leche dessert – all washed down with some sublime Mendoza wines.

Councillor’s Update

CROSSRAIL 2Even if the construction of Crossrail 2 starts on time in 2020, opening is not expected until the early 2030s. It will make new connections from South West London across Central London to North London. The current consultation on crossrail2.co.uk is until 8th January 2016.

It no longer envisages that Crossrail trains running through Teddington to Twickenham would displace the current circular Waterloo to Waterloo service. The latter including direct trains from Teddington to Richmond and beyond will now remain. Instead some Crossrail trains will continue beyond Teddington to all stations to Shepperton. Others will terminate at Hampton Wick with a new sidings being built just beyond Hampton Wick station to enable trains to reverse direction. An alternative of using Strawberry Hill depot to reverse trains is apparently not feasible.Crossrail 2 will provide Teddington with faster

connections to Chelsea, Victoria, Tottenham Court Road, Euston, St Pancras and The Angel and then to North East London. Step-free access from street level to platforms will be provided at all Crossrail 2 stations, though of course the last Government promised us lifts at Teddington within four years.

481 KINGSTON TO WEST MIDDLESEX HOSPITAL BUS SERVICE TO BE DOUBLED – AT LASTSince the daily half-hourly 465 Dorking to Fulwell service was curtailed at Kingston in 2006, Sandy Lane and Park Road have been served by a Monday to Saturday hourly service, the 481. The 481 also replaced the R62 bus service from Teddington to West Middlesex Hospital. Since then we have campaigned for the service to be restored to half-hourly and been regularly

rebuffed by Transport of London (TfL) who contended that usage was insufficient. However usage has gradually

PARKINGStephen Knight reported last month that, despite a majority of respondents in many roads voting to join the present controlled parking zone, in most cases this majority did not meet the Council’s threshold of 50% of all households in the road. Thus the current administration’s threshold policy effectively counts non-responding households as against change. In addition the majority of respondents in a number of roads already in the zone such as Cedar Road, Bridgeman Road and Christchurch Avenue voted for extended hours but came marginally below the 50% threshold. As we go to press we have a meeting with the cabinet member arranged though his decision to take no action has already been published.
