Dear Reader,

Welcome to Seven Grand, we’re glad you’re here. Truly we are. There are over 800 whiskeys in this bar, and a lot to explore. There is a purpose to this excess and it’s worthwhile to know where we’re coming from. So let us start at the beginning. In 2012 we opened our doors. There was one directive given; “Have a good time, and sell a bunch of whiskey.” Simple enough. However; the devil is in the details, and we’ve learned a lot since then. Initially, this place was a pirate ship full of the most beloved vagabonds and mercenaries doing everything they could just shy of burning the place down. But, over time, something sneaky happened; the whiskey got under our skin. It was always in us literally, but the tradition, the community, the juice itself gets to you. There’s so much heritage, and history to fall in love with. As we grew up, things calmed down and something powerful happened. At a staff meeting during the summer of 2015, we all sat down and asked the question, “why?”. Why are we selling whiskey, why do we care about what’s in the bottle, why is it important to have fun and get people drunk? We worked through it and found our roots; we at our core are a neighborhood bar. We love our regulars – they are our friends. We love the community around us and the family that was created. All the heritage, drama, and history that we learned wasn’t about knowing more facts than the other guy. It’s about using whiskey as an icebreaker – something to open the door so that we may learn more about you. It’s an invitation to join our family and participate in our community. The end result of our staff meeting produced a mantra, an Instagram tag, a theme to connect everything we do: friendships through whiskey. Your bartender made the declaration that the reason they do their job and take it seriously is that through whiskey a family can be created. Please, relax, order an Old Fashioned, and talk with us. Let us allow the whiskey to bring us into the moment. If an extensive whiskey list isn’t your thing, we recommend trying an old fashioned cocktail. It’s a great way to start the conversation and learn about the tradition, heritage, and love that got under our skin. We’re truly glad you’re here and look forward to starting a friendship with you through whiskey.

Of all the questions posed to us, this is perhaps the most common, straightforward, and oddly difficult to answer. When the question “what’s your favorite whiskey?” is asked, it is to help guide and educate someone into a dram that suits them. It is a simple question to ask, but is inherently tied to our personalities, it’s personal. There are layers of knowledge developed over years of experience that shape our absurdy nuanced opinions. A simple answer is never enough, and additionally isn’t why the question was asked in the first place. Nevertheless, we must provide an answer. Wild Turkey 101 Bourbon is the correct oversimplification. Bartenders constantly take complicated situations and bring them to an absurd simplicity. It feels good. You should try it. This isn’t helpful though, so allow me to explain. For the quick and dirty, thinking about it like food will help relate. “Who makes the best tacos in town?” is a conversation that, in San Diego at least, can become contentious and involve more strangers than anyone would naturally expect. The world of whiskey is going to include enough variety of flavor that the closest food question is probably more accurately posed, “who makes the best sandwich, taco, pizza, gyro, burrito, burger, patty-melt, or poke bowl in town?” To which the appropriate response is, “what?” with a furrowed and confused look. Elaborately explained, whiskey at its core is the same. It all starts as a beer made from some grain, distilled into a subjectively delicious spirit, and then tossed into a barrel for lots and lots of hours. The distiller wants their spirit to be as delicious as possible, because if they take shortcuts there, years later their whiskey will suck. Paying taxes on bad whiskey every year it is in the warehouse, is worse than the whiskey itself. So it needs to be good. That means no whiskey distiller makes a “low-tier” or poor quality distillate for their whiskey. They make the best quality they can, and they make a lot of it. So what’s the difference between premium brands and “well” or “rail” brands of whiskey? Well, nothing from a production quality perspective. Your hangover will be just as bad from well bourbon as it will be from a $500 pour of Scotch.The differences in whiskey come from the fabulous randomness of time and wood, combined with the skill of the blender. A master distiller doesn’t spend much of their time at the still. Mostly, they blend. They use their palate to select 1000’s of barrels into a variety of mixtures to create the different brands each distillery produces. At the end of the day, it’s more accurate to say that whiskey is whiskey is whiskey, than it is to say

expensive whiskey is better than inexpensive whiskey. Expensive whiskey is never expensive because it tastes better. It’s expensive because it was more expensive to produce. Or it took more time to produce, which is almost the same thing. Any of the bartenders here with any tenure at all, have likely drunk through the entirety of our 800+ bottle collection. We’re passionate geeks, who are spoiled with choice and just as excited as anyone ought to be to try something new. When you’re exposed to such variety and embrace it with thoughtfulness, your opinion shapes around some arbitrary criteria that becomes a working definition. We like a bourbon that is the most “bourbon-y” of all the bourbons and a scotch that is the most “scotch-y”. Talk about lazy language. I assure you though, that laziness is more about efficiency than it is a lack of adjectives. “What’s your favorite whiskey then?” It depends. If all whiskey, defined as stuff that gets you drunk, is the same, then we are free to allow our nights intentions, budget, and palate determine the favorite whiskey of the moment. As professionals spoiled by more booze than we can hope to remember, we tend to have three favorites. The no budget favorite, which is always expensive, weird, and constantly changing. The palate favorite, which slow to change, reasonably expensive, generally available, and delicious. Finally, there’s the one that fits all three most frequently. The last of this group ends up at staff parties, holidays, is shared with friends and family, and represents a common thread unifying all of our community events. It’s the most important one, and is, for now, Wild Turkey 101 Bourbon.

Yes, we have Pappy Van Winkle. Yes, it’s expensive. We actually have every release of Pappy Van Winkle from 2012 until now, and it varies in price from $50 an ounce to $300 an ounce. We’re building a library here. If you want dope whiskey, that’s why we buy single barrels. If you want Pappy, I’m gonna charge you a fortune. This seems both arrogant and absurd, but I promise you there’s a good reason. If you’re up for quite the American dream story keep reading. I recommend you first settle in with a drink. The world of whiskey is a wild and colorful place full of tradition, patience, honor, and perhaps most importantly, marketing nonsense. Tie someone’s mortgage to selling a bottle of alcohol and they’ll come up with all sorts of stories as to why you should buy that specific bottle; five times distilled, diamond filtered, seven barrel finished, pure clean limestone water, gluten and vegan free, are all descriptions that come to mind. The line between marketing nonsense and valuable differentiation is one that becomes a gradient the more popular a product. If you didn’t notice already, whiskey is popular and nonsense is everywhere. So what is up with Pappy? There are two steps to this, you need a story about where it came from, and a description of what it is. Surprisingly, it deserves its reputation and is worth its value. Given the caveat that $300 an ounce is ridiculous. The story starts way back in 1897. American whiskey prior to 1897 had very little regulation for additives, transparency, or source labeling. Everything was chaos, and the west was wild. As the aftermath of the Civil War ‘wrapped’ up, Julian Van Winkle started working with a man named W. L. Weller. Weller was running a non-producer whiskey company selling a variety of whiskey brands. As they grew two things happened: Weller got old, and Julian bought a distillery for the company. Weller sold the company to Van Winkle, and the distillery was eventually named Stitzel-Weller. Van Winkle was a super smart guy and saw the telegraphed punch of prohibition from a decade away. Or maybe more accurately he knew how to make some powerful friends. Either way, the distillery he purchased in 1908 was one of the few distilleries allowed to continue the production and sale of whiskey through prohibition. Go Old Rip! It’s worth taking an aside here, and discussing what exactly is in a bottle of Pappy Van Winkle Straight Kentucky Bourbon. We’ve got 5 ingredients, water, yeast, barley, corn, and then a flavoring grain. Rye is the common flavoring grain for bourbon. That doesn’t mean it has to be rye, you could use anything really. The general practice before the

industry was sophisticated was to use whatever was available. Rye was the cheap, rational decision. Sometimes they’d skip the rye altogether, or put wheat in there, or go nuts and use all four. Maker’s Mark started telling everyone that the recipe for Maker’s came from baking bread. That’s a great analogy for thinking about the flavors the grain adds to whiskey. Malted barley is king here as it’s the grain to jump-start the process of converting starch in the into sugars that the yeast can eat and turn into ethanol. Pappy Van Winkle is what we in the industry call ‘wheated’. Wheated bourbon, you guessed it, uses wheat as the flavoring grain. The exact proportions are sworn to secrecy. (70%/16%/14%) Back to our story; prohibition is over and whiskey is making a come back. Julian is on it and released two pretty important labels; W. L. Weller Special Reserve and Old Fitzgerald. Van Winkle started selling the W.L. Weller with a “whisper of wheat” to communicate the superior character of his whiskey. This is the first mention of ‘wheated’ as a differentiator for a whiskey we can find. The ad shown is alluding to a “century-old secret”, and the general consensus is that the marketing department made that up.

Fast forward to 1957, and you’re sitting in a warm kitchen, red rays of waxing light coating the checkerboard cotton table cloth in front of you. The wicker basket sitting in the middle of the table has steam rising from the linen cloth cuddling the rich cornbread underneath. Your plate sits pushed away, a half-finished slice of bread, seductively covered in butter melting into the warm cracks and pockets. Bill Samuels Sr. looks at a sheet of paper, looks at you with a look, half mischievous half proud, and pushes it your way. “You know, Margie over there did this, says we need a bottle like them fancy cognacs. I don’t know about that, but I do know she’s real pretty,” says Bill. “EEEE!” the piercing sound of an oven timer rings. Margie leans over, red cherries just like polka dots, pattern down her white linen dress, and opens the oven. Margie speaks, “I know Julian agrees with me Bill, wheat is our answer.” Julian interrupts “You’re right Margie, the red wax top on a long neck and a wide shoulder is a class act. And wheat IS your answer Bill, I’ve been making it for years.” Maker’s Mark, the iconic wheated whiskey with the red wax top has it’s recipe thanks to some clever baking, and Van Winkle. The 1970’s and 80’s was a rough time for whiskey. Vodka was all the rage and the new generation wanted to buck the stuffy traditions of their parents. Over the decades and into the 90’s distillery after distillery closed or was consolidated. The best whiskey in the world was being put into bottles and sold for bargain prices. The Stitzel-Weller distillery turned off its stills, sold its barrels and brands in the early 1990s. Julian Van Winkle, not to be confused with his father, Julian Van Winkle, wasn’t just gonna give up the family business though. He kept the name Pappy Van Winkle and started a contract brand with Sazerac Company. Old Fitzgerald was sold to Heaven Hill, and Weller went to Sazerac. Wheated bourbon spread to the rest of Kentucky and now we’re at a more modern day history. Starting in the early 2000s the farm to table food movement started to happen. People were hungry for authenticity, slow food, fresh vegetables, and interesting cuisine. Traditions were of interest again. People started rediscovering bourbon, and that Pappy stuff was some of the best. Julian made his marketing move by befriending the hospitality and restaurant industry. As time moved on, we all recognized how darn tasty the stuff really was. The Stitzel-Weller juice was gonna run out and Sazerac hadn’t been making very much wheated bourbon. Perhaps it’s better to say that in 2010 when Pappy was $45 a bottle and it was impossible to give away, nobody thought it was going to be worth

thousands of dollars in less than a decade. Even if Julian did know in 2010 how popular it was going to be and did start making enough, we’d still be 3 to 6 years away from that whiskey being old enough. So as bourbon became popular, the delicious whiskey he was trying to just get in front of people became rare. So now we’re spoiled and all have our money out trying to buy those $30 or $40 bottles with knock your socks off whiskey in them and they don’t exist. Good bourbon takes 6 to 8 years, Scotch 10 to 15 years before we start to see something special. More importantly, maybe only 1 in 10 barrels have that something special quality. So, unfortunately, as the whiskey bar, we’d be the first to run out of anything special if it was affordable because everyone knows we have it. Instead, our business model is to buy entire barrels of the best whiskey we can find and sell it to you as cheaply as we can afford.

In the American pop-culture classic Wayne’s World the following scene unfolded; “I don’t believe, I’ve had French champagne,” said Cassandra. Benjamin replied, “Actually, all champagne is French, after the region. Otherwise, it’s sparkling white wine. Americans ignore the convention, so they call their sparkling whites champagne, though they’re not.” Wayne vainly contributed, “Ah, yes. It’s a lot like Star Trek: The Next Generation. It’s often superior, but will never be as recognized as the original.” God, Benjamin was the worst. In the wise words of Garth, “If Benjamin were an ice cream flavor, he’d be pralines and dick.” I can’t think of anything more pretentious than the classic non-sequitur lore spewing one-up-manship of alcohol knowledge, and other than wine, Scotch may be the best category for it. It is a reality due in part to its expense, where everyone has a story to tell in an effort to justify asking you for $100. I find this unfortunate because the Scots that make the whiskey are truly humble, kind people. If you walked into a Scottish pub and starting talking about the joys of pre-1980’s scotch during the days of old sherry casks, direct fire stills, and floor malted barley nobody would listen to you. Ask someone about their day instead, and you’ll end up with a friend for life. Scotch whiskey started its story, just like most alcohol, in an effort to store and keep excess grain production. Eventually, it developed into a product that grocers bought, blended, and bottled for the local community. Then, as capitalism does, certain blends became better known and loved and turned into brands. Johnny Walker would be the most famous of these. It wasn’t until the 1960’s that a brand named Glenfiddich started advertising their “pure malt” Scotch that Single Malt Scotch started to become a thing. 2009 was the year Single Malt Scotch got a legal definition. The pretentiousness of it came from a highly competitive market in the late ’80s and ‘90s where they were losing market share to vodka and decided to compete in the luxury market instead of the value market. Grey Goose became Glenfiddich’s main competition. Everyone doubled down on heritage, history, and a sense of place. All good things in my eyes. Knowing things doesn’t make you a douche, it’s what you do with that knowledge. I’m reminded of a friend who visited a Scotch distillery and was treated to a lovely tour conducted by a sweet woman barely out of high school, spending her summer as a whiskey tour guide. He came back from the tour complaining to me about how he was ‘lied to’ because she said all of the

whiskey was aged in sherry casks while they were standing in a room filled with bourbon barrels. This misstep was not because the brand was lying, but rather the college kid giving tours doesn’t understand the important difference between 100% sherry aged, and sherry cask finishing. Nor did she really understand that she was surrounded by bourbon casks. She was working at her friendly neighborhood distillery for the summer, because that’s what college kids do there. That distillery isn’t there to indulge the uber-nerds with their trivia questions, but rather to help the local economy out with tourism and booze. Also, more importantly, keep making whiskey like they did 100 years before that because that’s what they do. In Scotland, most of the distilleries make whiskey the way they make whiskey because that’s the way they make the whiskey. Certainly, some of the distilleries have massive R&D departments nailing down the chemistry of aging and distilling. Hilariously and ironically, the answer to that question is both yes and no. Irish whiskey, like all whiskey is in the middle of a renaissance and revolution and deserves your attentions. Though, there are some sneaky facts behind that answer, and I wouldn’t call them common knowledge just yet. So why would we say that an entire countries contribution boils down to one thing? Well, we need some context. Not many argue, and all should know, that we owe the birth of whiskey to the Irish. The word whiskey itself stems from the Gaelic term “uisce beatha”, meaning water of life. The modern column still, the backbone of the whiskey industry, was first brought to the masses by an Irish taxman by the name of Aenus Coffey. It was this early advance and others in the world of whiskey that brought Ireland to the forefront of the whiskey world stage during the 19th century. Ireland held roughly 60% of the world market. Close to 100 distilleries dotted the emerald isle. Now Scotch and American whiskey reign supreme, and Ireland is picking up the scraps. So, what happened? Well to be blunt, war, famine, the British, and that grand social experiment called prohibition. After a Civil War, two world wars, famine, massive emigration, prohibition, and a trade war with Britain, the Irish whiskey economy was in shambles. In 1966 the remaining distillers (Jameson, Powers, and Cork) came together to in a genius move, born of necessity, to form one consolidated company and facility called Irish Distillers. This consolidation eventually led to an acquisition by Pernod Ricard that helped jumpstart worldwide distribution and was matched with a significant marketing force. So is there only one company, one product, and one whiskey? Not quite. Irish Distillers survived in Ireland and Bushmills in the English controlled north remained as well. Then in the 1980’s John Teeling launched the next Irish distillery dubbed Cooley. It’s at this point with 3 distilleries operating with properly aged and aging whiskies in Ireland that the industry began to grow again. I think it’s important to mention what gives Irish whiskey its identity, and at this point for the story make sense we have to explain. Marketing will tell you that Irish whiskey is made from barley and is triple distilled in pot stills for a smooth flavor. This is mostly untrue. There is barley distilled in pot stills in most bottles of Irish whiskey. However, the biggest names in Irish whiskey are using column stills and rye or corn to make grain distillate and aging in ex-casks for brief amounts of time to fill most of their bottles. They then use that barley distillate to augment the

cheaper lighter grain whiskey. This should sound familiar, it’s nearly identical to the Blended Scotch Whisky model. It’s partly because of this blending practice plus a lighter flavor profile, and only 3 distilleries, many Irish whiskeys end up with a somewhat homogeneous flavor profile. If I were to blind taste 5 Irish Whiskies below $30, my mind would be blown if I could correctly select more than 2 of them. Don’t tell anyone I said that. Since 2001, Irish whiskey has grown in the US market by 1000%, and premiumization has led the charge. John Teeling’s sons recently open another distillery under their namesake which became the first new distillery in Dublin in over 125 years. (The first whiskey they brought to market was Cooley distillate.) It’s with premiumization that true variety has been able to shine. The entire Redbreast line is showing off 100% barley pot-distillate. Bushmills has a single-malt line, and we have some truly craft distilleries making their own whiskey. Fair warning however; there are also many labels that are just repackages of more grain whiskey, tapping into that lighter flavor profile. So, the number one question I ask if an Irish Whiskey tastes smooth and light is, “does Cooley make it, or do you make it yourselves?” With that said, we are proud to offer what I would consider a quality representation of the variety that Ireland has to offer with as little of the fluff as we’re comfortable carrying. And there is certainly more than one to choose from.

I’m reminded of a time smack in the middle of my journey through bartending. I had been around just long enough to know something, and be truly passionate about everything I thought. I was voraciously reading cocktail books, whiskey blogs, and imbibing everything. I was in love with the craft. A dear friend and colleauge in the industry came in and changed the way I approached my passion forever. It was a random Wednesday in 2014, sometime in the Fall. Two people are playing pool under the dim lights, walking lazy circles around the table looking for their best shot. A couple is nuzzled close together in the shadows of the back corner booth. Creedence plays over the speakers, and my fingers flick back and forth, as the spoon wooshes around the glass. “Can I start you a tab?” I ask, as the citrus oils spray away from my fingers and gently float down over the glass. “Keep it open,” they say, take their Old Fashioned and head to the smoking patio. The bar is quiet tonight. Earlier, a Whiskey Society had us all in a state of excitement and revelry over some of the most interesting and expensive Scotches from Islay. The presenter, a legend in our bar, came with the big guns. To our great sadness he left after the Whiskey Society. The fun of the tasting adventure fading in our minds, and we stood, polishing glassware starting to eye the whiskey wall thinking if there was anything we could justify tasting. The front door swings wide, and a long pair of woolen pants step inside. A grin beaming out of a bearded face so bright and shiny you almost didn’t notice the bright, shiny head on top. He was back. After the whiskey society, he had gone in search of food. Now satiated, wife called, and daughters facetimed to bed, it was time for a nightcap. We threw our hands up in celebration and shouted, “Johnnie!” He sits, apologizes for his earlier necesarry departure, and procedes to ask us what’s new on our wall. This is exciting to us because he’s got ‘brand money’, so we’re not too worried about cost. We grab the Bowmore 23 year port wood, the Ardbeg Arbog, the Octomore, the Yamaziki 18 year... we grab the good shit. He looks at each of us in the eyes, mischeviously bent forward and says, “let’s drink ‘em all.” We excitedly pour him each of these whiskeys, and he casually smells them, takes a sip and starts asking us some questions. He knows his brands, but not all whiskey, so we illuminate where we can and start to have a lively conversation about all things whiskey.

“Well f*k’n drink sum, jaysus. I ddn’t order’m juss fer me” Johnnie barks at us. Oh ya, he’s Scottish. He then grabs two other people near by and, in the most politely Scottish way, tells them they will be drinking this whiskey with us. I, as politely as I can, try to decline in the tasting of all of this expensive whiskey, because I don’t want to take away from his experience. The tone turns serious, and he looks at me very intently. “You’re missing the point. All of this...” he gestures wildy over the glasses, “isn’t about me, or how special this sherry cask is, or how nice that Ardbog is, or how peaty Octomore is, it’s about this!” He gestures wildly again, but points to all of the people, myself included, and says, “it’s about sharing, together, with you Brett, Dagong, Jessica, Dante, and Ben, and Carlo, and yes, even you, Chad.” Whiskey isn’t about being fancy, or rare, it’s about sharing something that brings us together, whether we’re strangers or family, whiskey is about engaging in fleeting pleasure for the chance at lasting connection, or deepening our love for one another. Whiskey isn’t a thing, but rather a conduit for communnity. It was that day that I realized my love for the craft was, in fact, missing the point. It’s not about knowing, it’s about sharing.
