All of the facilities and infrastructure of the camp were built through the tireless fund raising efforts, generous contributions and continued support of Florida Federation of Garden Clubs of which the McIntosh Seedlings Garden Club is a part.

Sponsored by the Florida Federation of Garden Clubs, Inc. (FFGC), Wekiva Youth Camp is built on State property in the pristine Wekiva State Park located on the beautiful Wekiva River in Apopka, Florida.

Wekiva Youth Camp is an accredited, week-long residential nature camp for 3rd through 8th Grade youngsters for the purpose of instilling a love and respect for the REAL Florida through nature study, conservation and protection of our environment for the future of our state and our planet.

Wekiva Leaders In Training is a 9th Grade Special Program for Campers who have previously attended Wekiva Youth Camp and wish to become future Camp Counselors. Leadership is emphasized along with intensive studies in marine science (including three-days at the Crystal River Marine Science Center).

Wekiva Youth Camp Leaders in Training

Wekiva Youth Camp is located at the headwaters of the Wekiva River, the beautiful vistas within this park offer a glimpse of what Central Florida looked like when Timucuan Indians fished and hunted these lands. Just one hour from most central Florida attractions, Wekiva Springs offers visitors the opportunity to relax in a natural setting, enjoy a picnic, or take a swim in the cool spring.

Thirteen miles of trails provide opportunities for hiking, bicycling, and horseback riding. Canoeists and kayakers can paddle along the Wekiva River and Rock Springs Run. Canoe and kayak rentals are available from the park's concessionaire. Options for camping include a full facility campground and primitive camping areas.

This is a very popular park, particularly on summer weekends. To ensure entrance, we recommend arriving early; otherwise, the parking area will be full and you may not be able to enter.

The Seedlings Supports A Variety of Other Programs

CIVIC CENTER AND VAN NESS PARK MAINTENANCE - Each fall and spring finds members of The Seedlings Garden Club at the Civic Center’s Van Ness Park on their knees and toes and up to their necks in dirt and bug spray pulling weeds, trimming hedge, fertilizing and replacing mulch, plants and shrubs. Special thanks to Kevin Kniedler for helping us with the fertilizing and mulching

The Seedlings Garden Club, together with The Town of McIntosh, created a five-phase comprehensive plan to improve Van Ness Park. So far, we have seen new sidewalks installed and new plantings added. Last year, we saw the addition of playground equipment, and a beautiful 26’ gazebo, purchased with federal grant funds. This is a work in progress. More projects are planned.

INTERFAITH EMERGENCY SERVICES - At each monthly Garden Club meeting, members contribute to the Marion County Interfaith Services Fund.

InterFaith Services assists people seeking emergency assistance including food for families, personal hygiene items, clothing, medications, identification cards, gas vouchers, eyeglasses, work boots, education, and programs for children. LITTLE TOWN – BIG HEART The citizens and civic clubs of McIntosh reach out to others all year through, but at Christmas, McIntosh really “puts the star on the tree”.

Besides the many Advent services, the Christmas Cantata presented by the Community Choir and Christmas Eve Church services to give thanks for God’s greatest gift, McIntosh is busy doing and giving to others.

Light Up McIntosh Christmas Party is a community supported event. The Seedlings Garden Club decorates the Civic Center for Christmas and provides hundreds of cookies and gallons of punch to help make the evening festive.

The Friends of McIntosh sponsors the Light Up McIntosh Contest in which residents compete for the best Christmas decorations of homes and businesses. Santa arrives in McIntosh on our vintage firetruck. Leading the firetruck with the jolly ole’ elf on board is a festive golf cart parade in season décor, complete with twinkling lights, music and novelties. Competition for cash prizes is intense but the atmosphere is jolly.

The McIntosh Lions Club makes certain Santa arrives safely with his bag full of candy. That jolly ole elf offers his knee, ear and heart to every boy and girl (young and young-at-heart) and listens to secret requests. Grinning, giggling parents are right there with camera for that special moment with Santa.

Members of The McIntosh Seedlings Garden Club make special donations every year to the Salvation Army.

Live Nativity – The Seedlings Garden Club provides cookies and hot chocolate for performers of the Live Nativity. Performers are from area churches.

The Seed Library Micanopy Branch

Alachua County Library District

It all started when Naomi Baxter, Senior Library Specialist at the Micanopy Branch, became aware of how much community interest there was in growing plants. She read about seeds as a unique collection in the library and wanted to try out the idea. Reddick Brothers Hardware donated the first seeds which were placed by plant family in nine-sectioned boxes on book shelves in the garden section to form the beginning of the seed collection.

Today, seeds from the following plant families are available free of charge: Nightshade (eggplant, peppers, potato, tomato); Parsley (carrots, celery), Gourd (cucumber, pumpkins, loofa), Grass (corn, grains), Mustard (broccoli, collards, kale), Sunflower (artichokes, lettuce), Amaranth (beets, Swiss chard); Lily (onions, garlic); and Pea & Beans (beans, peas, lentils). Herbs and native flowers round off the categories.

Naomi credits the success of the Seed Library to assistance from volunteer PJ Worth, Grow Gainesville! Public Group Facebook, and Working Food Gainesville. Lowes Hardware has donated out of date (but still viable) seeds and the Payne’s Prairie Chapter of the Florida Native Plant Society have provided locally collected flower seeds including Black Eyed Susan, Iron Weed, Scarlet Hibiscus, Cherokee Bean and Starry Rosinweed.

One year after the founding of the library, there are now second-generation seeds provided by patrons who grew crops from library seeds and brought in seeds from their harvest. Library staff will be happy to research appropriate planting of seeds by sun/shade/soil for library patrons. Micanopy Branch Manager, Carolyn Wallace, reported to the Friends of the Library recently that more than 170 individuals have checked out seeds with teenagers growing some of the most successful gardens.

The best part: No library card is required for seeds. The library asks only that recipients check in with a librarian before selecting seeds, take only what will be planted soon and share progress with (if possible) photos and a sample of produce!

McIntosh is the proud home of Marion County’s only elementary school of choice in the North end of the county, the McIntosh Area School (Mas). It began originally in the 1890s as a K-12 and continued as such until 1948. It now focuses on elementary education and today is a free public charter school for the neighboring communities. Small class size and over 100 years of combined teaching experience enables a tailored one-on-one education for local children. The Mas Eagles of today are proud of their heritage that included a dedicated garden providing fresh produce for the lunch room and food for local families during the 1930s and 40s. They even canned the bountiful harvest to deliver to families in need. The farming tradition, understanding ecology, botany and care for our earth continues today via the Seedlings Garden Club Education Committee and their strong partnership with Ms. Hensley, our 4th Grade teacher. Last year the Club donated a vertical garden to the school that grows seasonal crops in a self-contained tower and uses earthworms to improve the soil. The children have enjoyed this immensely as well as the lessons members of the Garden Club have provided. Because of this strong interest, the school is expanding its garden! A raised-bed garden will be built soon and serve all our classrooms with respective grade specific science curriculum. Learning how food grows, how to care for the environment, hard work and the pure joy of eating the fruits of your labor are all traits the children learned in our past and what we instill in our students today! This new garden will increase our academic capacity and appreciation for gardening. Mas thanks the Seedlings for their many years of support – for the educational opportunities you have given to our youth promoting gardening and raising awareness for the environment. With you, our Eagles really have soared!

Van Ness Park Revitalized

he appearance of Van Ness Park has changed in many ways over the last 100 years. The oak trees are larger; the slides are made of new tech materials, but there is one recent addition that harkens to the past --a 26 ft. gazebo.

staging area or musicians might grace the gazebo as residents relaxed under the oak trees. The Victorian structure would also make a beautiful backdrop for wedding, graduation and special photographs. The gazebo can be rented for weddings too.

At night, the gazebo is lit and worth a visit. Reclaimed Chicago bricks were used for the gazebo’s floor and a path from the Civic Center to the gazebo. The Garden Club bought matching bricks to create a recognition patio.

So, whether you are interested in staying in shape or just relaxing and meditating, the recent additions to the park will suit all ages.

In the 1800s, McIntosh residents would often gather in the park for an ice cream social or a fish fry, The Ocala Evening Star reported. Now, thanks to two Florida Recreation Development Assistance grants, residents are able to enjoy the new gazebo, playground equipment, and multi-purpose tennis court. The two grants, totaling $100,000, allowed the town to add a new play area that includes slides, monkey bars and riders. The tennis court received a face lift with a new concrete court, net and lighting. The net can be raised or lowered so residents can play the latest rage—pickle ball. In addition, a basketball hoop was added and now it is common to see a large group of the community’s youth playing basketball.

In the near future the town hopes to host socials utilizing the gazebo. During the planning stages, the idea was that civic groups could use the gazebo as a

TABASCO® PEPPERS A NEW INDUSTRY FOR FLORIDA

Did you know that a family-run farm in Florida grows peppers for the Tabasco Sauce you probably use on your food? The Mcllhenny Company of Avery Island, Louisiana has growers all over the world but only one farm in Florida. In the fall of 2012, The Louisiana-based Tabasco® brand of sauces, was experiencing problems with a virus affecting peppers grown on its Avery Island Louisiana site. UF/IFAS retired viral expert, Richard Christie comes to the rescue.

Mr. Christie began a research project to grow 23 different lines of genetically improved Tabasco® seed to determine which line would produce a vigorous and prolific plant with peppers that would be easy to harvest mechanically. Christie contacted a Providence, Florida, forester/farmer to ask if he would be interested in helping with the research project. It was a no brainer for Jimmy Bielling. With the downturn of the forestry economy, Jimmy knew he needed to diversify, so he was eager to accept the challenge. In his words, “The magic word for us is research.”

After three years of production, 13 lines were developed and proved suitable for Florida. Pointing out his pepper fields, Jimmy described his peppers as “colors so vibrant they almost look like jewels,” and added they are, “the only Tabasco® peppers grown in Florida.”1

The Tabasco® plant has a typical bushy growth, which commercial cultivation makes stronger by trimming the plants. It takes approximately 80 days after germination for the plants to have fully matured fruits. The plant can grow about 60 inches tall and develops quickly at temperatures between 80°F and 85°F, with cream or light-yellow flowers that develop upward-oriented fruits. Tabasco® ranges from 30,000 to 50,000 Scoville units of heat level.2

Once the peppers are harvested, the peppers are sorted and only the ones that meet the Tabasco standards are used. Pickers use a red stick to assure that they are ripe enough. The peppers are then ground into a mash, salt is added, and they are placed into white oak barrels once used for whiskey. They are then aged three years before being sent to processing at the Avery Island plant.

Just as the McIlhenny Company diversified the growing of peppers to prevent disease and to ensure long-term success, the Bielling family has also diversified over the years. Jimmy is a certified prescribed burn manager and runs a site prep and reforestation business. The family sells and manages real estate, runs a small cow/calf operation and breeds horses. Hard work is the core of their various enterprises. His wife of 38 years, Kathy, is a big part of everything they do. As a girl, Kathy worked for one of the Seedlings members, Eva Jo Callahan, in Trenton, FL when she was 16. Eva Jo, and her husband Pete, remember Kathy as bright, hardworking and capable. She

had a way of making everyone as ease. Friends and family of Jimmy describe him as hardworking man of passion determination and faith. It is good to know that we have such dedicated farmers working in Florida.

PEPPER FACTS

Hot peppers get their spicy flavor from a compound known as capsaicin, and the relative spiciness of peppers is compared on a heat index known as the Scoville scale. Milder peppers like Anaheims or jalapenos rank between 1,000 and 10,000 Scoville units, while spicier peppers like the cayenne or habanero can check in at 50,000 or 250,000 Scoville units.3

PLANTING AND CARE

You can buy hot pepper transplants at your local feed and seed or garden center, or you can start your own from seed. If you’re interested in trying some of the more exotic peppers like the ghost pepper, you may need to order seeds online.

For best success, choose varieties that are known to do well in Florida and that are resistant to diseases. Be sure to wait until after the last frost date before you plant your peppers in the spring.

Like most vegetables, hot peppers need full sun in order to produce a good harvest. Plant them away from patios, walkways, or any areas accessible to small children is important, to prevent plant oils or fruits from irritating skin or causing any other problems.

If you are planting peppers in the garden and you have sandy soil, be sure to add plenty of organic matter to the planting site. If you are planting peppers in containers, use a well-drained potting media.

Fertilize your peppers at the time of planting, and then fertilize two to three times during the growing season or use a controlled release fertilizer for season-long feeding. Hot peppers ae relatively drought-tolerant, but you should water them regularly to keep them productive.

According to the website Songfacts, “Parsley was COMFORT, sage was STRENGTH, rosemary was LOVE, and thyme was COURAGE,” and thus these herbs “were important to the lyrics.” Perhaps these symbolic representations also made the herbs part of a love spell?

GROWING & DRYING HERBS

Tie stems in bundles and hang the herbs upside down. Use twist-ties so you can easily tighten the bundles when stems shrink as they dry. A warm, dry spot is best; avoid the kitchen. Wrap muslin, a mesh produce bag or a paper bag with several holes around the bundle and tie it at the neck.

To Oven-Dry: Place herb leaves or seeds on a cookie sheet one inch deep or less.

Put herbs in an open oven on low heat – less than 180 degrees F – for 2-4 hours. To see if the herbs are dry, check if leaves crumble easily.
