~d. 'They seem to be im­posed with the explicit pur­

pose of making it as diffi­

cult as possible for them

have been the hardest work­

3 o'clock, go to the market,buy all the stuff and then

THE name of Mr. L. W. Ritch is a household word to everyIndian in the Union and to all who are acquainted with the his­

tory of Indians in Soutb A.friC3. Mr. Ritch was associated withMahatma Gandhi from 1903 when the latter was practising inJohannesburg. He played aD important role during the PassiveResistance campaign led by Mahatma Gandhi, in those memorabledays, as a representative of the Indian community in London. HeW2S versed with the Indian question from A to Z and after thedeparture from South Africa of Mahatma Gandhi and Mr. H. S. L,Pouk, the Indian community looked to Mr. Ritch for advice andguidance. When Mahatma Gandhi c.reated a Trust of the PhoenixSettlement, in 1914, he appointed Mr. L. W. Ritch as one of tbeTrustees and he is today tbe only surviving Trustee of tbe oldTrustees who had then been appointed. Phoenix Settlement and'Indian Opinion' arc both deeply indebted to Mr. Ritch for bisvalued services for over tbirty five years. He has bad seriousmishaps during the latter part of his life which has physicallyincapacitated him, and for some years be I:!.as ',owing to ill-healthbad to retire from his legal practice. 'Thougb physicallyinactive mentally and spiritually he is still as active as ever,as the readers of 'Indian Opinion' will have noticed from hisregular deep and thought provoking contributions. Mr. Ritch willbe celebrating his 84th birthday on February 14, and we have nodoubt his many friends will join us in very heartily congratulating­bim and also Mrs. Ritch and wishing him many more years ofhealtb, happiness and peace of mind.

Relined sugar has a vcr)' strongchemiCJI affinity or altr~clion forolcium. tbat is, for lime.' If itcomes inlo contact with lime. itforms a new subSlance. a lime­sugar combination that is notcap~ble of being assimil:llcd inlothe human body. Tkis lime· sugarcombination is therefore ncretedby tbe body, and in so doing, thebody loses lime. But lime is anexceedingly important element intbe making and healthy mainten­ance of bones and teeth as well asof hlood and tissues. In order '0be healthy, we must eat plenty offood rich in organic lime. that is,lime that bas gone through pl:tnt­tissues and become changed byplant-life so that it can be rhen upby a living body :tnd built in'otke cells. and tissues of that bod)'.The lime must be organic 11mI',not just dead chemical lime, whichis worse than useless.

Now, it is an unfortunale f:lctthat our more refined modernfoods are noteworthy for lheirbck of organic lime. Wholewheat. whole meal'cs and m.myolher grains have appreciabl~

Again, improper methods ofpreparing and cooking food ex­Iract :lnd waste whatever organiclime may be in the original 3ub­st:lnce. Take obbage, for in­~tance. R.lw, fresh cabbage, well­grown on healthy -composted soilwithout use of cbemical ferlilizers(which are harmful poisons) is avery rich source of organic lime,of which it contains nearly twiceas much as is in cow's milk and20 to 30 times 35 mucb as is inmeat. But wh.:n cabbage is boiledjn a lot of water and then strainedin a col:tuder, the lime is allextracted :I.nd thrown away withthe water.. The cabbage tbat isthen served is DO better for foodthan some old well-boiled news­papers. The best way to catcabbage is as a raw salad.

That IS one of the troubles ofmodern civili::ed diet. It is sorefined that it lacks tbe mineralclements necessary for maintain­ing he:lltb. So, in tbe firstinstance, mucb of our food doesnot have eDough lime to buildand keep sound our teeth andbones. And then, when we takerefined sug:lr, this sugar seeks outand combines with the lime in tbefood, :Ind thus a diet :llre:ldy de­ficient in lime becomes even maredeficient. Still \Vorse, sugar isvery readily absorbed into theblood-stream, where it then comesinlo contact with lime alreadyincorporated ~nto tbe body. Sotbe sugar combines with this lime10 m:lke the lime-sugar combina­tion [that is then thrown out ofthe body. In olher words. thesugar robs the body of its pre­cious bone.bullding org:lnic lime.But Nature is alw3Ys trying toprotect us against our folly. Shetries to save the most importantand vital pJrts at the expense ofthose we can do without if needbe.
