Para bien o para mal, Sant Joan no alberga ninguno de
los grandes templos de la electrónica que han situado
a Ibiza en el centro del planeta dance. La música en
estas latitudes se vive en el recogimiento intelectual de
la creatividad del estudio. Músicos y productores de
embargo, la música suena, especialmente en verano, en
un paraíso para saciar el apetito y entregarse sin
miramientos a la gula. La carretera principal divide
el municipio en dos, dejando a cada lado una red de
restaurantes tan apetecible como variopinta. Cocina
tradicional ibicenca, por supuesto, pero también cocinas
del mundo dan vida y color a la oferta gastronómica de
la zona, con destinos altamente recomendables como los
ensenadas que ganan terreno al mar y salpican toda

numeroso de representaciones de la célebre Tanit

Culleram, que en sus orígenes lucían colores vibrantes
y luminosos, así como quemadores de perfume, vasijas,
platos de barro y otros elementos necesarios para el
ritual, además de medallones de oro y plata entregados
como ofrenda, se encuentran repartidos por museos
Ibiza conserva una interesante colección que permite
adentrarse y conocer la civilización púnica.

copa a cabras y ovejas, a abuelos adictos al trabajo y a

For some 7000 years, the pine has been the most
important reference in the forests of Ibiza and so it was
island soil. They soon turned the pine into a worthy
trade alongside that of the salt business, especially
under Moorish colonization. There was much export of
timber, fuel and charcoal and it was said that the pine
were excellent for shipbuilding. Later, as per the law of
opposites, the over-exploitation of the Ibiza pine tree
transformed into its under-exploitation, and the tree
once again became the king of the local Mediterranean
vegetation, its unmistakable scent permeating the air. It is
estimated that there are currently seven million pine trees
in Ibiza, more than half of those responsible for scenting
the countryside of Sant Joan.

En sus valles crece también el almendro, el algarrobo, la
parra y el olivo, mientras que en la montaña, al amparo
del pino blanco, se cobija la sabina.

La carretera de Sant Joan sigue hacia el norte y alcanza pronto el pueblo, que sigue hasta San Vicente
de sa Cala, una cala históricamente prestigiosa, la cala por excelencia; un valle que va al mar entre

mientras que los tambores suenan. Es la música
de Ibiza al ocaso. Es Portixol es la pura estampa de Ibiza. Es pequeña y virgen, y está rodeada de
los típicos chamizos donde los pescadores guardan
sus llaüts. El agua es tranquila y transparente y
forma una especie de piscina natural. Cala Xuclà es un rincón privilegiado de color esmeralda que
se erigirá en el paraíso del amante del buceo. Ideal
para disfrutar de los bellos fondos marinos del
Mediterráneo es igualmente S’Illot d’en Renclí.

etapas difíciles y convencido de que en los tiempos que
corren se puede producir música con un ordenador
portátil manejando los potentes programas producidos
ad-hoc.

The lush vegetation in Sant Joan offers a perfect
setting for artists looking for inspiration. The
intensely red earth supports vegetable gardens
and pine forests in which music studios take cover
here and there. If you are observant and you
follow your intuition, the music map slowly starts
to manifest, and musicians, their sounds and their
machines all take their place on its varied territory.
In the 80s there was only Ibiza Sound Studio, which

on a laptop with powerful ad-hoc programmes.

Lo primero que sorprende del Centro Cultural de Sant Joan, CCSJ a partir de ahora, es que está
linda con la del señor José Ribas, párroco de San Juan. De esta curiosa interacción no podían más que
salir curiosos proyectos, heterogéneos, transversales y multidisciplinares. Dunckel, que representará a las
Baleares en la próxima edición de la Trienal de Fotografía de Hamburgo –en abril-, siente debilidad por
las nuevas tecnologías aplicadas al arte, así que la experimentación es una constante en la programación

make wines from monastrell grapes mainly, which is the
traditional variety in Ibiza, and some tempranillo, syrah,
merlot and cabernet sauvignon in small family estates
where the stocks are 20 or even 50 years old.

Ibiza’ and they have worked relentlessly to position their
view of the proliferation of wineries all over the Spanish,
European and world scenes. These wines are controlled
Balearic Government, in order to guarantee a quality

wineries make their wines are updated to keep up with
more demanding trade standards and harmonize wine

have motivated the wineries in Ibiza to progressively
make their wines more varied, so that now it is

is plum-coloured, bright and has the scent of a ripe
fruit; in the mouth it’s warm and dense. The regulation
‘Vinos de la Tierra de Ibiza’ also includes the varieties
ull de Llebre, merlot and tempranillo, and the white
varieties macabeo traditional Ibiza stock, chardonnay,
moscatell, parellada and malvasía.
Wine makers in Ibiza who wish to give their wine
greater balance and aroma nuances all prefer French
oak barrels, where the wine is left to age for between
three and 18 months, depending on the type of wine
that is being made. In the Balearic Islands and in

of rosé wine, proving that monastrell has adapted
perfectly to the conditions in Ibiza.

bodegas ibicencas a introducir progresivamente más variedades en sus vinos, siendo
habitual ver un 80 por ciento de monastrell con 15 por ciento de cabernet sauvignon
y un cinco por ciento de syrah. El líquido resultante es de color ciruela, brillante, con
anteriormente mencionadas, hay que añadir ull de Llebre, merlot y tempranillo como
variedades aceptadas por la regulación de ‘Vinos de la Tierra de Ibiza’, mientras que
las variedades blancas aceptadas son macabeo cepa tradicional de Ibiza, chardonnay,
moscatell, parellada y malvasía.
Las barricas de roble francés son las más apreciadas entre aquellos elaboradores
instalados en Ibiza que deciden darle mayor equilibrio
y matices aromáticos, dejando una crianza de tres a
18 meses según el estilo que quieran impregnarle al
vino. En las Baleares y en exclusivos establecimientos
alejados de las islas tenemos la ocasión de probar
Lausos 2007 de Can Rich, 100 por cien cabernet

nothing to do with the wine that the four aforementioned
pitiusas wineries produce and bottle, which has for
long been mistaken for the other home-made variety.
The only relationship between the two is the fact that
the wineries which produce, bottle and commercialize
technically correct wines make use of the stocks and the
grapes which the local vine growers have inherited and
learnt to take care of, generation after generation. This
is how you start loving wine. Juan from San Vinya den
Palerm and Mariano from Can Rocas are well aware
of this, as they have spent their whole lives making
payés wine using traditional methods and investing the
greatest of love.
In the 6.000 squared metres which Juan dedicates to
wine, half is dedicated to some 50 year-old stocks and
the other half to 30 year-old tempranillo. The average
3.500 litres of wine produced per harvest are consumed
within the family or locally, as it is always welcome in
patron-saint festivities and at the pig slaughter, which
gathers together family and friends.
Mariano from Can Rocas, who has been playing
around the vines since he was 14, sells most of the 5.000
litres that he harvests to Sa Cova, a bottling winery in
proud to know that his wine is bottled, commercialised
and consumed beyond the island.
Bright red. The red that stains everything it comes into
contact with, crimson red, which can excite the most

tiempo, mercado e industria han asociado con el vino
artesanal. El único nexo de unión entre unos y otros es
el hecho de que las bodegas que producen, embotellan
y comercializan vinos técnicamente bien elaborados se
nutren de las cepas y la uva de esos viticultores locales

de monastrell desde los 14 años, vende la mayoría de
los 5.000 litros de su cosecha a Sa Cova, la bodega
embotelladora situada en el valle de San Mateo. Y claro
que se siente satisfecho, incluso orgulloso, sabiendo que
su vino se embotella, comercializa y consume fuera de la
isla.
Rojo intenso, ese que mancha todo lo que toca, rojo
carmesí, que emociona a cualquier desalmado, rojo
como las tierras de Sant Joan. Tierra fértil que gusta
de frutales, olivos y cepas. Los campos de Ibiza son
generosos en variedad y calidad. Sol, humedad, cal,
arcilla, magnesio, algo de agua y mucho trabajo dan sus
frutos, puro placer para el hombre. Y el vino es de los
escasos productos agrícolas de Ibiza que son exportados
y que tiene la virtud de transmitir valores básicos, a
menudo muy arraigados a la tierra.

Si uno ha tenido el privilegio de degustar las hierbas
ibicencas estará de acuerdo en que, refrigeradas y en
vaso corto -o sea, chupito- o en copa y con hielo, son el
mejor licor de sobremesa jamás inventado. La bebida
espirituosa por excelencia de Ibiza viene elaborándose
desde al menos dos siglos atrás y se obtiene de la
maceración hidroalcohólica de plantas aromáticas que
el campo de Ibiza da. En la mezcla, que puede incluir
hasta18 tipos de plantas distintas, radica la fuerza y el
equilibrio del elixir, dando lugar a fórmulas preciosas
llevan toda una vida elaborándolas, empezaron a
comercializarse bajo tan poético nombre en 2009

hydro-alcoholic maceration of aromatic plants present in

included in the mix, providing the power and balance
of this elixir and giving rise to precious formulas such
they’ve been preparing this drink for a long time, they
only started to sell their product with this poetic name
in 2009, following the original recipe and maintaining
the traditional process. The result is delicate and mouth-

Virgin olive oil

present in the Ibiza countryside, buildings
which produced oil for all the neighbouring
farms. This collective form of production has
fallen into disuse. However, the last few years
have witnessed a considerable increase of olive
farming and production, with the extraction
of top quality virgin oils, as in the case of Es
end of 2010. The farm is located in Sant Joan,
close to the Can Curuné restaurant, on the
road leading to Benirràs beach. Production is
limited to between 2.000 and 3.000 litres per
year, depending on the harvest, and the entire
process until the precious liquid is obtained is
organic, sweet, fruity and thick, the result of
mixing the picual variety of olive with some
empeltre and a touch of sevillana. The olive
from Jaen, the leading province in olive oil
production worldwide since the Romans
settled in Hispania. The Phoenicians brought
the olive oil to Ibiza and the story goes on.
Tradicionalmente existían en el campo ibicenco las
llamadas almazaras o trulls, instalaciones donde se

considerable aumento de las explotaciones de olivos y la
producción de la aceituna, de donde se extraen aceites

Un aceite virgen excelente; orgánico, dulce, afrutado y
consistente, resultado de combinar la variedad picual con
algo de empeltre y un toque de sevillana. El olivar lo dirige
mundial de aceite de oliva desde que los romanos se
trajeron los fenicios. La historia continúa…
