The processing of coconut water has to undergo different stages:

Harvest and storage

Pre-washing of the coconuts

Cutting of the coconuts in an clean and hygienic environment

Strain/filter the coconut water with a clean cotton

cloth.

Store the coconut water and flesh in hygienic containers

with a temperature below the 4℃

During the bottling both water and the

flesh are filled

All coconut bottles have to be stored below

4℃ .

Harvest:

1. A coconut takes approximately 9 months to grow for its

maximum yield. It is important to harvest the coconuts

on the right stage as late harvest will result in poor

water quality and short durability. For example, due to

high oil percentage and gas formation.

2. Coconuts should be harvested and transported carefully

as the nuts can easily crack from inside and

contaminate the water.

Straining/ filter:

1. When cutting the coconuts, the husk must not touch

the coconut water as it contains acids that impact the

quality and durability of the coconut water

2. Use a cotton cloth to filter the coconut water.

Distribution

1. During transportation of the coconut bottles, buckets

filled with ice cubes are used in order to maintain the

required temperature of 4℃.

The quality of the coconut water depends on the

harvest stage

The average durability of pure coconut water is

approximately two weeks. However, it depends on the

storage temperature.

Coconut water requires a continuous temperature

balance of approximately 4℃, preferably ’ice cold’

Usually the usage of preservatives reduces the

quality and purity of the coconut water.

The bottles are arranged in an empty freezer, and to keep the

immediate temperature balanced the bottles are covered with

a layer of ice cubes.

The demand for fresh coconut water is increasing. Moreover,

it’s one of the fewest drinks that is able to be processed

without preservatives. Further, coconut water has many

health benefits. Therefore, the production of coconut water

should be encouraged.
