Summary of menu planning findings:

I was quite surprised at the level of difficulty involved in planning a menu for 6-8 graders while

following the USDA’s National School Lunch Program (NSLP) and School Breakfast Program (SBP).

The amount of time put into this project was approximately 70 hours. With that amount of time, I

expected everything to be near perfect, if not above the RDA and minimum requirements. However, by

the end of my menu planning and food analysis, I was shocked to find that most of my meals were

inadequate in at least one, if not multiple, key micronutrients such as vitamin K and vitamin D. I also

found it difficult to develop meals that tasted good, had enough calories, limited sodium, and limited

saturated fat, but that was also affordable. In terms of cost, I struggled the most with planning the

lunch menu because I strived to include gluten-free bread options as well as grains using only 100%

whole grain products which can be costly.

To plan my menu, I first started by researching and exploring studies conducted on the

effectiveness of and student perceptions on the NSLP and SBP. Shortly after the implementation of the

NSLP in 2011, a study investigated student responses to the new guidelines.3 The study found that the

intervention students (those receiving food based on the new NSLP guidelines) consumed more fruits

and vegetables than the control students (those receiving food based on the old guidelines) in both

elementary and intermediate (6-8 grade) schools.3 The study also found that the intervention

intermediate students consumed fewer calories than the control intermediate students.3 The NSLP

guidelines state that intermediate schools must offer lunch meals consisting of 600-700 kcals.7

However, the study found that intervention intermediate students only consumed approximately 520

calories even though an average of 612 calories were offered.3 In addition to that study, a qualitative

study conducted at three kindergarten through 8th grade schools found that many students commonly

purchased food and drinks on the way to school.1 In addition, students commonly reported that they eat

more than one breakfast due to hunger and access.1 Finally, a pilot study conducted in middle schools

examined the long-term impact of chefs on school lunch consumption.2 The chef initiative involved

training existing cafeteria staff to create more flavorful and healthier lunches, including increasing fruit

palatability.2 The study found that vegetable and whole grain consumption increased in the chef

initiative schools.2 This specific finding is applicable to the menu planning process because it is

important to remember that the cafeteria staff must be able to cook all of the meals using given

equipment, and that the recipes need to be reproducible because not all cafeteria staff are as skilled as a

chef in the kitchen. However, the skills gained as the employees learn will benefit the children in the

end.

Based on these findings, I set out to ensure that both my breakfast and lunch meals included

enough calories to support the children even if the entire meal was not completely consumed. I also

strived to create meals that are not too complex for the cafeteria staff to handle when preparing lunch

and breakfast meals in bulk. After creating the general menu recipes, I then calculated the cost and

spent an additional 2-3 hours editing my original recipes because they were over-budget. Once the

costs were determined and all meals were deemed within budget, I analyzed my recipes in Food

Processor. I was shocked to see that most of my micronutrient guideline amounts were not met, and

that my saturated fat amount was higher than 10% of kcals in many meals. After some adjustment, I

was able to meet all guidelines for sodium, saturated fat, and calories, but many micronutrients were

still inadequate. However, I was surprised to see that my fiber amount in almost every meal met the

DRI recommendation for 6-8 graders. This is because all grains were whole grain or whole-grain rich,

and many of my fruit choices were fresh.

Overall, this project was a wonderful learning experience. I now feel equipped to plan a menu

for any foodservice operation. In addition, I am so much more appreciative of all foodservice managers

and menu planners. It is a very difficult and tedious task to plan a menu that most customers will

enjoy, stays within budget, and meets DRI (and USDA if applicable) recommendations. All in all, I am

very glad I completed this project.
