A special message about Chartwells from Rick Post, Compass Group USA’s Chief Operating Officer

I’m pleased to take part in a special announcement in this edition of Chartwells Monthly.

As Chartwells Higher Education Dining Services focuses on the future in preparation for continued growth, I am proud to announce that Lisa McEuen has been chosen as Chartwells’ second President & CEO. Lisa has held executive roles in Compass Group and brings 25 years of senior operational and marketing expertise to the company. With the depth of Lisa’s experience, she will continue to drive and redefine the standards within the contract foodservice arena as she leads clients and teams to even greater business success.

The Chartwells education foodservice division was created by Compass Group in 1997, and Steve Sweeney was appointed as President and CEO to oversee and grow the $365 million business. Under Steve’s direction, our dining services business has grown to over $1.5 billion. His leadership has truly been the cornerstone of success for Chartwells. Last July, with its new brand launch, Chartwells set out to be the place “Where Hungry Minds Gather” on college and university campuses across the United States. This brand reimaging marked a new strategic direction and era that Chartwells is undertaking to welcome future generations to campuses. Steve will continue to support Chartwells during the new brand transition.

n After an incredible four decades in foodservice, I am officially announcing the transition of Chartwells’ business to newly appointed President and CEO, Lisa McEuen.

Since the beginning of my career it was all about seizing opportunities and having trust in our teams’ capabilities. But most of all, it was about serving others and being the best at it. What we have all accomplished since the creation of Chartwells in 1997 is truly amazing. I could not be more proud of the efforts by our associates that brought our business to where it is today. I want to thank all of our clients for their support and the trust they place in us for ensuring every student and guest dining on campus is fully satisfied.

Selecting a new President & CEO is one of the most important responsibilities of the Board of Directors. I am confident to say that Lisa McEuen is the perfect choice. Everyone is equally excited about Chartwells’ next chapter as it continues to flourish with the added benefit of new leadership, fresh ideas, and different perspectives. With the business well-positioned for the future, I can depart knowing that our clients and teams are in great hands. Lisa’s skillful leadership will ensure a smooth transition and continued success. I’m proud to follow in his footsteps as Chartwells’ second appointed President & CEO. He has not only been a mentor to me, but an inspiration to many throughout the company and industry.

I began working in foodservice at an early age and attribute my passion for food and hospitality to my parents. My father pioneered dining throughout California’s Silicon Valley and instilled in me the values of respect, trustworthiness, dedication and hard work. The path I wanted to take was clear, having a desire to make everyone’s day a little bit better through unforgettable food.

I’ve had some amazing work-life experiences including the development of high tech dining during the Silicon Valley boom, opening professional sports stadiums and leading groundbreaking start-ups to name a few. My journey has brought me to where I am today and working with the amazing individuals that serve Chartwells with unmistakable pride and dedication. Food is my passion, but people are my commitment. Together we recognize that we play a vital role in educating every guest about what good food’s all about and providing an experience that surpasses their expectations.

As President and CEO, I am honored to represent and guide Chartwells’ 28,000 associates through our next phase of growth together.

Chartwells Monthly and Chartwells Weekly Receive Honorable Mention Competing for 2015 North American Excellence Awards

Chartwells Higher Education Dining Ser-vices’ digital publications and website, Chartwells Monthly and Chartwells Weekly,

received honorable mention from the North American Excellence Awards jury for its 2015 campaign entry.

Five continents competed simultaneously for awards that honor the most exceptional ex-amples of communications and outstanding achievements by communications profession-als. Judges took a comprehensive look at the extraordinary submissions and recently shared their decisions online. Receiving honorable mention for Chartwells’ multiple campaigns is truly considered a success by the distinguished panel of global judges.

The awards have been hosted the past nine years by Communication Director Maga-zine, an internationally-focused publication for multinational corporate communications, PR, public affairs professionals and more. Kris-tine Andrews, Communications Director, said, “Chartwells’ campaigns were judged among some very esteemed companies and we’re delighted that our communications efforts designed for multiple audiences were noticed by professionals in the industry.”

National Nutrition Month® is an annual campaign held in March sponsored by the Academy of Nutrition and Dietetics. Designed to promote healthful meal choices and physical activity, it’s an excellent opportunity to demonstrate our commitment to wellness on our partner campuses.

Webtrition Launches Smart Tags!Webtrition has launched Smart Tags to identify Balanced (criteria on MyCompass), Vegetarian and Vegan menu items. The Smart Tag function automatically categorizes recipes based on designated filters or criteria, designed to replace manual tagging of recipes. Recipes identified as Balanced (“Fit” in Webtrition) now also provide defined amounts of vegetables or fruit, whole grains and protein based on the meal component. Smart Tags do not adversely affect icon printing on PIDs or dining websites and/or apps. This feature allows us to provide guests with more accurate labeling information and removes human error from recipe tagging. Other features include:

n Streamlined search options – find Fit (Balanced) entrées, sides, desserts and other meal components quickly and easily, as well as quickly find accurately labeled vegan and vegetarian entrées and sides.

n Ability to tie ingredients to sector purchasing for Smart Tag analysis so tags can be customized.

n Automatically adjusted Smart Tag based on ingredient swaps within recipes; and auto-recalculation based on menu portion changes within menu cycles.

n Provides a platform for future recipe allergen labeling.

RENEW Empowers Chartwells’ Associates

Rehabilitation Enterprises of North Eastern Wyoming (RENEW) provides services for special needs individuals of all ages. Its mission is to empower persons with

disABILITIES and their families to Live, Love, Learn, Work, and Play. And Chartwells at Northern Wyoming College in Sheridan, WY is proud to support RENEW residents by providing an opportunity to be active members of the campus community.

Chartwells is one of many local businesses that supports RENEW and employs individuals at Sheridan Community Col-lege who help guarantee that campus dining runs flawlessly. According to Tracy Treece, Director, “Charles, Jerry, Kent and Willie are RENEW residents who help manage our dining room by greeting guests, ensuring stations are fully stocked and the dining area is pristine. Willie often hums a tune while working and is always there to lend a hand to a student and will help carry a plate to a table. Kent has worked on campus for almost 20 years and makes sure that all stations have plenty of plates, silverware and cups to make it through the lunch rush. Charles takes his job very seriously and comes to work in a sport coat and slacks, but is quick to point out the pride he has in his Chartwells polo style shirt and name tag. Jerry is always quick with a smile and very proud of his contributions to the team and in keeping our dining room spotless. Every associate is included and participates in ev-erything from staff meetings to celebrations. Our entire team receives a huge amount of praise for their efforts and great

job. There is nothing better than seeing their smiles and eagerness to work. I am proud of our entire team.”

Inclusion is a State of Being Valued at Central Community College Dining

Chartwells’ Director of Dining Services, Deborah Hemberger, shared the

great photo above with Chartwells Monthly. Deb wrote, “Chartwells at Central Community College in Hastings, Nebraska supports individuals with disabilities by finding the right job for each team member so they can be successful, productive and still have fun at work. We do this through cross training and changing it up when we have special events by giving associates the chance to try a new role for the day. We work with Goodwill Services of Greater Nebraska and post all job openings with them. We also worked with the Young Adult Life Skills class at CCC and help train students. Inclusion is a state of being valued, respected and supported and it’s part of our culture here on campus at CCC.”

“Historically, we have always started off Black Histo ry Month with an African American Visiting Chef. Our students have always loved the visiting chef series. Some additional activ-ities include playing Martin Luther King’s speeches instead of music, posting photos of African American leaders and exhibiting Afrocentric artwork in partnership with the Multi-cultural Student Affairs department.”

Shippensburg University LGBTQIA Concerns Committee Creates Safe Zones

Chartwells has partnered with the Shippensburg Uni-versity LGBTQIA Concerns Committee for 9 years. “One of the most important projects we became

involved in was the introduction of LGBTQIA SAFE ZONES on the Ship campus,” noted Nick Iula, Chartwells’ Resident District Manager. Students and Chartwells associates recognize the sign that helps identify the surrounding space as friendly and understanding to the LGBTQIA community.

Once training is completed, the student or associate is able to post a SAFE ZONE sign on their dorm or office door. Nick added, “It’s a great way for our managers to embrace our diverse and inclusive culture.”

Missouri State Dining Celebrates Culture

Auburn Catering Supports March of Dimes

The East Alabama Signature Chefs Auction brings together top local chefs in an annual fundraising event to help raise dollars for the March of Dimes. Auburn University

Dining’s Tiger Catering team served Dr Pepper-braised beef short rib, local blue grits, roasted carrots and micro pea shoots. The dining team also donated a tailgating package that raised $850. Chartwells Monthly is proud to share this letter from the March of Dimes sent to all chef exhibitors supporting the event.

Missouri University of Science and Technology Campus Dining Serves Halal Meals

Missouri University of Science and Technology is a diverse campus with a 17% or 1,400 international student population. There was a high demand for

Halal meals and the Chancellor chose Chartwells’ internal concept named Zatar that would offer all students a culinary experience not commonly found on college campuses. In addition to global cuisine, the concept was set up in a refur-bished train boxcar. Shayna Drew, Chartwells District Marketing Manager said, “The menu has been a huge draw because it’s exciting and interesting. Everyone wants to see what it’s all about! The first day we opened, snow covered the ground and the line was still out the door. The freshness of the food keeps guests coming back for more.”

Mark Potrafka, Director of Services & Operations, added, “The Zatar concept supplements the dining variety in the student union with an added touch of sustainability with the refurbished rail car. The boxcar certainly makes a great con-versation piece that goes hand in hand with our customizable wraps, salads, kabobs and more offered in a weekly menu.”

The University of Miami Dining Services team put togeth-er a tremendous VIP reception on the Lakeside Patio for the Inauguration of new President, Julio Frenk, on

January 29, 2016. Guests of all ages “Charted the Course to their New Century” and traveled around the world indulg-ing in purely authentic cuisine from Europe, Asia, Africa and America. From tiger shrimp ceviche, braised pork bao buns, short ribs, and vegan ancient grain salad, to cassava baskets and quinoa burgers, guests delighted in global cuisine at dedicated stations at the outdoor reception. Each station had authentic décor to create an experience for each guest to travel through all of the continents in the heart of UM’s campus.

Chartwells’ Director of Marketing, Amanda Goodwin, said, “The idea for the international theme was representative of how diverse the University of Miami’s campus actually is and it is a rewarding experience to see our team’s vision come to life. We consulted with the University and put all of our culinary, marketing and catering talents together to create this wonderful experience. Each attendee received a replica Passport directing each guest to the four continent food stations each with unique menus, beautiful décor, and endless desserts. We served over 2,000 University students, faculty and staff. The ambiance was very upbeat and lively with a band and University of Miami mascot, Sebastian, was dancing around while everyone was celebrating. From a sustainability

standpoint, many food items were served on bamboo and we locally sourced produce and seafood.”

Michael Ross, Chartwells’ Resident District Manager, com-mented, “On behalf of the dining team I’d like to thank the University for this opportunity. It is truly a privilege to cater such an esteemed event. Congratulations to our team for shining brightly and making the events run smoothly.”
