Student’sFavoriteFoodsareBackBurgers, Wraps and Pizza….Oh My!

Besuretotakeanotherlookattheschoolmenutoday.Schoolmealscannowincludemorestudentfavoriteslikechickensandwiches,burgers,pizza,chickennuggets,delisandwiches,saladsandwraps.Therearemorevarietiesandalotofchoicesyourstudentswillwanttoeat.Mealsarenutritious,affordableandmoresatisfyingthanever.

Why the Change?TheUnitedStatesDepartmentofAgriculture(USDA)releasednewupdatestotheNationalSchoolLunchandSchoolBreakfastProgram(NSLBP)onDecember10,2012,thateliminatestheweeklymaximumsforgrainsandproteinsfortheremainderofthe2012–13schoolyearforlunch.Allotherguidelinesfromtheinitialschoolmealstandardswillremaininplace,includingtherequirementthatstudentsneedtoselectatleast½cupoffruitorvegetabletomakeacompletemeal.

What is Considered a Complete Meal?Therearefivefoodgroupsthatstudentsmustselectfrom:fruits,vegetables,protein,wholegrainsandmilk.Studentsmustcontinuetoselectthreeofthefivefoodgroups,withonebeingafruitand/orvegetable,tobeconsideredacompletemeal.

Cooking Up Change

StudentsattheChicagoVocationalCareerAcademy(CVCA)wontheHealthySchoolsCampaign’sCooking up ChangecontestlastNovember.Twelveteamscompetedinthecontesttocreatehealthfulanddeliciousmealswithinabudgetandusinglocalproducefromoneofthenation’slargestfarm-to-schoolprograms.ThewinningteamofstudentchefsfromCVCAdishedupamealofoven-friedchicken,leafygreensandcabbage.

Great job Diamonte, Sheanice, Kaliah, Ciara, Tatiana and Jerome! And good luck in the national Cooking up Change finals in D.C. this May!

The2013AmericanAssociationofSchoolAdministrators(AASA)NationalConference,“WhereEducationLeadersUnite,”tookplaceinLosAngeles,CaliforniaonFebruary21–23.Conversationsfocusedontheimpactofthenew

schoollunchprogramregulationsandhowChartwellsissuccessfullyworkingwithdistrictclientstocomplywiththeregulations.

TheAASAistheprofessionalorganizationformorethan13,000educationalleadersthroughouttheworld.AASAmembersincludechiefexecutiveofficers,superintendents,seniorlevelschooladministrators,cabinetmembers,professorsandaspiringschoolsystemleaders.

ChartwellsCelebratesNationalSchoolBreakfastWeekForover45years,theNationalSchoolBreakfastprogramhasbeenakeyfactorinfuelingthebodiesandmindsofmillionsofAmericanschoolchildren.Chartwellsaloneprovidesover2.3millionbreakfastsdailyinschoolsnationwide.OnMarch4-6,ChartwellscelebratedNationalSchoolBreakfastWeekwithspecialpromotions,menusandeventstohelpstudents“wakeup”withbreakfast,including:

• Chartwellshighlightedfruitsandvegetablesthatarein-seasonandreadilyavailable,andshowedhowtheycanbeincorporatedintobreakfastrecipesandmenuitems,aspartofChartwells’SimplyGoodstudentnutritioneducationprogram,whichalsoemphasizeslocallygrownfood.

• “Breakfastclubcards”encouragedstudentstoeatbreakfastatschoolonaregularbasis,givingthemrewardsforbeingarepeatbreakfastcustomer.Themealcombosbundlepopularbreakfastfoodstocreateagrab-and-go,completemeal.

• Chartwells’chefsconductedculinarydemonstrations,featuringpopularbreakfastitemssuchasyogurtparfaits,oatmealmix-ups,breakfastcrepesandeasyomelets.

• “BreakfastorBrunchforLunch”wasafuntwistwherebreakfastfoodswereshowcasedatlunch.

Carroll County, VA

BackgroundIn2009,CarrollCountySchoolDistrictpartneredwithChartwellsinanefforttorevamptheirschooldiningprogram.Thegoalsofthispartnershipweretoincreasemealtimeparticipation,reducelaborcostswithoutaffectingcustomerservice,improvethequality,varietyandnutritionalofferingsofthefoodandenhancetheatmosphereofthediningcenters.

New Food ProgramsWithChartwells’help,theschoolintroducedseveralnewfooditemstothelunchmenus,includingaBajaFlatsStationatthemiddleandhighschool,awhitewhole-wheatpizzacrustmadewithallnaturalingredients,andawidevarietyoffreshfruitsandvegetablesfromlocalfoodsources.Theschoolalsolaunchedvariousin-schoolpromotionstohelpraiseawarenessofthenewfoodandcreateexcitementforbreakfastandlunchmealtimeoptions.

Facility RemodelTheschoolworkedwithChartwellstoremodeltheservinglinesandcreatebrandedsignageandmaterialstohelpmerchandizethenewmenuoptions.Theexistingservingcounterswerecompletelyremovedandreplaced.Newcoldpans,heateddisplays,heatedshelvesandlightfixtureswereinstalled.Aspartoftheproject,thestudentdiningroomwasalsorevivedwithnewdiningtablesandseats,astereosystem,loungeseatingsofasandafreshcoatofpaint.

Culinary and Food Safety TrainingTheChartwellsstaffhosteda16-hourtrainingcampforallfoodserviceemployeesthatconsistedoflessonsinfoodsafety,customerservice,foodpreparationandpersonalsafetyinthekitchen.Asaresultofthistraining,theCarrollCountystaffhasreceivedvariousawards,includingtheBe-A-StarPlatinumawardforexcellenceinfoodservice.

SuccessThestudentbreakfastmealparticipationhasincreasedbymorethansevenpercentandwithinthefirstthreeyearsofafive-yearcontract,thedistricthadalreadymetitsfinancialgoals.Through

continuousattentiontodetailandongoingeducationforitsassociates,thedistrictcontinuestoseeconsistentsuccessinitsfoodserviceprogram.

ChartwellswasproudtoawardMenashaSchoolDistrictinWisconsintheBe-A-StarNationalAccountoftheYear.Thedistrictwonover550schoolsforthefirst-place,covetedprize,andwaspresentedwithitsawardattheCompassNightofStarsCelebrationinOrlando,FloridaonOctober17–19,2012attheHardRockHotel.

“Fromdayone,Menasha’srelationshipwithChartwellsSchoolDiningServiceshasprovidedourcommunitywithpositiveandproductiveoutcomes,”saidDr.RobertKobylski,SuperintendentofMenashaPublicSchools.“Ourdistrictisproudtopartnerwithanorganizationthatsharesourperformanceideals.”

Menashareceivedthisdistinctionbecauseofitssuccessinmeetingawardcriteriainthefollowingways:

NorthHavenHighSchoolinConnecticutamplifiedits“SimplyGood–YouAreSustainable”initiativesbyeducatingstudentsaboutfoodpreparationandthebenefitsofacompleteandbalancedmeal.“We’regettingstudentstounderstandwhatmakesagreatmeal,”saidJillDonnelly,ChartwellsDirectorofDiningServicesatNorthHavenPublicSchools.“We’retryingtogetthemtounderstandthebenefitsofeatingacompleteandbalancedmealandmakingsureit’sanattractiveplate.”

NorthHavenHighSchoolstudentsareabletosign-uptotaketoursoftheschoolkitchentolearnaboutfoodpreparation.Vendorswerealsoinvitedintosetupastationtoresembleafoodshowandallowedthestudentstosamplefoodsfromdifferentlocalfoodvendors.

“AlloftheactivitiesweplannedfortheSimplyGoodprogramweredesignedtotakethemysteryoutofschoollunchandshowthestudentsthatweareservingreal,wholesomefoodsrightattheirownschool,”saidDonnelly.Shewantstogivethestudentsasmuchinformationaspossibletobringhomewiththemandhelpthemmakehealthyfoodchoicesnowandthroughouttheirlives.

Donnelly,herstaff,theschooladministrationandthefourelementaryschoolsintheNorthHavendistricthavebeenrecognizedwiththebronzeawardintheHealthierUSSchoolChallenge(HUSSC).Thisvoluntarynationalcertificationinitiativethatencouragesandpromoteshealthiereatingandphysicalactivityinschoolenvironments,hasbeenawardedto254Chartwellsschoolsacrossthecountry.

Breakfast

Breakfastisthemostimportantmealofthedayforstudents.Notonlydoesitgivethemenergytostartanewday,butitislinkedtomanyhealthbenefits,includingweightcontrolandimprovedbehaviors.Thenexttimeyouare“toobusy”toeatinthemorning,thinkaboutthewaysanutritiousbreakfastcangiveyouandyourstudentanextraadvantage,suchas:

• HigherAcademicScores–Studieshaveshowneatingbreakfastatschoolresultsinhighertestscoresduetoimprovedconcentrationandbetterproblem-solvingskills.

• ImprovedBehavior–Hungrychildrenaremorelikelytohavedisciplineproblems.

Lunch

Inadditiontotheimmediatereliefofagrowlingstomach,lunchcontributestoasolidfoundationofgoodnutritionandhelpsmaintainpeakacademicperformance.Ahealthylunchshouldprovideastudentwithenoughcaloriestokeepthemgoingthroughoutthedaynomattertheiractivitylevel.Thecaloriesshouldcomefromnutritiousfoodsthatarelow-calorieandlow-fat.

Schoollunchprovidesapproximatelyone-thirdofthecaloriesanaveragechildneedsfortheday,butchildrenwhoareactiveandgrowingmayrequiremorethanothers.Althoughstudentsshouldhaveanadequatenumberofcaloriestosupporthealthandgrowth,it’simportanttofocusontherighttypesofcalories,notjustthenumberofcaloriesrequired.It’salsounrealisticandperhapsunhealthyforstudentstoattempttomeetthedemandsoftheirschoolday,bothphysicallyandintellectually,allinonemeal.Eatingabalancedbreakfastandlunchiskeyinmaintainingenergylevels.

Manystudies,suchasoneconductedbyTuftsUniversitySchoolofNutrition,havealsoconfirmedthatstudentswhoskipluncharedistractedintheclassroom.Skippingmealsalsoincreasesthechanceoflowbloodsugar,orhypoglycemia,whichcancauseheadachesorthedevelopmentofdiabetes,andevenweightgain.

Snacks Most students need a healthy snack after school. With that in mind, Chartwells offers snack choices in the cafeteria

consisting of: low fat or skim milk, proteins, grains

and fresh fruits and vegetables.

Thisyear,Chartwellspromoteda“ThinkYourDrink”campaignthatencouragedstudentstodrinkmorewaterandlesssugar-sweetenedbeverages.

AccordingtoConnieEvers,ChartwellsRD,byadolescence,nearlyoneinfourteensdrinkmorethan26ouncesofsoftdrinksdaily.Increasedconsumptionofsugar-sweetenedbeveragescanleadtoexcesscaloricintake,weightgain,andalsoincreasetheriskofdevelopingtype2diabetes.

ThroughoutNationalNutritionalMonth,Chartwellssetupdisplaytablesinthecafeteriasdemonstratingthe“shocking”amountofsugarinsodaandothersweetenedbeveragessuchassportsdrinks,sweetteaandVitaminWater.Wealsoeducatedstudentsontheotherpotentiallyharmfulingredientsfoundinsugar-infuseddrinksandhighlightedthenutritionalbenefitsofdrinkingwaterinstead.
