Ravioli Maker Attachment

NOTE: This attachment is designed tobe used with pasta dough only. Donot cut or roll any other material orfood with Ravioli Maker.

NOTE: To avoid damaging theRavioli Maker:

• Do not wear ties, scarves, or long necklaces when using.

• Gather long hair with a clasp before using.

Ravioli Maker — Fills sheets of pastawith filling, then crimps the edges forstrips of stuffed pasta that after dryingcan be separated for cooking. RavioliMaker attaches to the stand mixer forstability, but is operated manually for

precise control.

Select Pasta SheetRoller attachment.Insert attachmentshaft housing (C)into attachmenthub (D), makingcertain that the power shaft fitsinto recessed, square hub socket.Rotate attachment back and forthif necessary. When attachment is inproper position,the pin on theattachmenthousing (E) will fitinto the notch (F)on the hub rim.

4. Tightenattachmentknob (A) untilPasta SheetRoller iscompletelysecured to mixer.

Tips for Exceptional Pasta• Good pasta dough is firm and

leathery to touch, but also pliable.It should never stick to your fingersor crumble and fall apart. Manyfactors, such as humidity, brand offlour used, and size of eggs, mayaffect dough consistency.

• To test for correct doughconsistency, pinch a small amountof dough together after mixingwith the flat beater. If the doughstays together without sticking toyour fingers, it should work well. It may be necessary to add a smallamount of flour or water to reachcorrect dough consistency.

• If using Ravioli Maker for the firsttime, practice feeding pasta withoutfilling through the attachment toperfect your technique.

• Separated ravioli can be cookedright away or stored in therefrigerator overnight. For longerstorage individually freeze raviolion baking sheet. Then store infreezer in sealed container.

• Cook ravioli in 6 quarts salted,boiling water until al dente orslightly firm to the bite,approximately 3 to 4 minutes.

If you do not own a KitchenAid® PastaSheet Roller, pasta sheets can beprepared by hand. Pasta sheets shouldbe rolled out to a thickness of 1⁄16 inchand a width of 51⁄2 inches in order topass through the Ravioli Maker.

To Attach Pasta Sheet Roller:Remove “Do not immerse in water”label, prior to use.

To attach accessory:1. Turn OFF and unplug mixer.2. Depending on

which type ofhub you have,either flip uphinged cover or loosenattachment knob (A) by turning itcounterclockwise and removeattachment hub cover (B).

4. Move the PastaSheet Rolleradjustmentknob to setting2. Feed thedough throughrollers to further flatten. Change tosetting 3 and feed dough throughrollers again. Dough should beflexible, not sticky, and exactly thesame width as the flat rollers.

5. Using a knife, trim each end ofthe dough sheet.

6. Lightly dust the rollers of theravioli maker with flour.

7. To clean Pasta Sheet Roller, letparts air dry for one hour and thenremove any dried dough using theCleaning Brush. If dried doughcannot be removed, try hand-tapping the attachment. Atoothpick can be used if necessary.Never use a knife or other sharpobject to remove excess dough.Polish with a soft, dry cloth andstore attachment pieces in a dryplace at room temperature.

NOTE: Never wash or immerse PastaSheet Roller attachment in water orother liquid. Never wash in dishwasher.

NOTE: To avoid damaging the PastaSheet Roller:

• Do not run a dishtowel or any other cloth through the rollersto clean them.

• Do not insert objects such as knives, screwdrivers, etc., toclean the Pasta Sheet Roller.

1. Prepare pasta dough and let restat least 10 minutes. Cut doughinto sections approximately thesize of a tennis ball and work withone section at a time. Wrapremaining dough in plastic wrapto keep from drying out.

2. Adjust Pasta Sheet Roller to setting 1(Pasta SheetRoller settingsare adjusted bypulling out andturning theknob on thefront of theattachment).Turn the standmixer to Speed2 or 4 and feeddough into thePasta SheetRoller.

3. Fold dough in half and roll again.Repeat foldingand kneadingprocess severaltimes or untildough is smoothand elastic. Lightly dust pasta withflour while rolling to aid in dryingand separation.

Using Your Ravioli MakerTo Use:

1. Remove hopper from the RavioliAttachment by pulling upwardfirmly.

2. Fold pasta sheet in half.

3. To insert the pasta sheet, insert thefolded end between the formingrollers. Rotate the handle onequarter of a turn to feed the pasta sheet.

NOTE: Two-knob handle providesprecise thumb and forefingercontrol of rolling and filling. The mixer is not turned on while making ravioli.

4. Separate the two loose ends of thepasta sheet and drape each endover the smooth metal rollers.

Using Your Ravioli Maker

5. Locate the slight indentation onone side of the hopper rim.Position the indented side so itfaces the attachment-knob-side ofthe stand mixer. Place the hopperon top of the dough sheet,between the separated ends, andpush down until you hear a clickand the side edges of the hopperrest against the Ravioli Maker.

6. Using the provided scoop, spoon1-2 scoops of filling into thehopper. Spread the filling evenlyinto the corners of the hopper andgently, evenly press down on thefilling with the scoop.

7. Slowly turn the handle. Check thatravioli strips are feeding freelythrough bottom of attachment.

8. Add more filling to the hopper asneeded. Spread the filling evenlyinto the corners of the hopper andgently press down on the fillingwith the scoop. Make sure allfilling in the hopper is used beforethe end of the pasta sheet isreached, or the filling will collecton the rollers. Use the scoop toremove extra filling if necessary.

9. Place the strips of ravioli on alightly floured surface and letthem dry for at least 10 minutes.Separate the ravioli one by one,tearing along perforations.

10.Before rolling the next sheet ofravioli strips, clean the attachmentby using the brush to lightly dustthe rollers with flour.

Care and CleaningTo clean the Ravioli Maker 1. Dust the attachment with flour

and use the brush to clean it.

2. Remove the hopper and snap openthe thin white plastic guides/leversat the bottom of the attachmentfor easy access to the rollers. Washin warm, soapy water.

NOTE: To avoid damaging the RavioliMaker Attachment:

• Never wash in dishwasher.• Do not run a dishtowel or any

other cloth through the rollersto clean them.

• Do not insert objects such as knives, screwdrivers, etc., toclean the Ravioli Maker.

Helpful HintsFirst Time PracticeTo perfect your technique, practicefeeding pasta through the rollerswithout adding any filling. Enjoy the smooth and easy manual operation.

Uneven Feeding of DoughPasta sheets should be uniformlythick (1⁄16 inch) and wide (51⁄2 inches).Center the sheets when feeding theminto rollers. Lightly dust the pastawith flour to aid in processing.

Is the Dough too Dry?If dough seems too dry for smoothfeeding, add a small amount of water to reach the correct doughconsistency. Repeat folding,kneading,and rolling processes to prepare the sheets.

RECIPES

Pumpkin-Sage Ravioli with Browned Butter and Pecans

1 recipe Basic EggPasta

1 can (15 oz.) pumpkin1⁄4 cup packed brown

sugar1 teaspoon ground

sage1⁄2 teaspoon salt1⁄4 teaspoon black

pepper1⁄4 teaspoon ground

nutmeg6 tablespoons chopped

pecans6 tablespoons butter

Prepare pasta dough; let rest.

In medium bowl, combine pumpkin, sugar, sage,salt, pepper, and nutmeg; refrigerate until ready tofill ravioli. Follow directions for preparing pastasheets, using ravioli maker and cooking ravioli.*

On baking sheet, place pecans in single layer. Toastin oven at 350°F for 5 to 7 minutes, or until goldenbrown and aromatic. Meanwhile, in heavy 1-quartsaucepan over medium-high heat, heat butter untilgolden brown. Serve hot butter over cooked ravioliand top with pecans.

Yield: 6 servings (12 to 15 ravioli with 1 tablespoonbutter and 1 tablespoon pecans per serving).

*For very moist fillings, such as pumpkin, pastaroller setting 4 works best, and ravioli should becooked immediately after filling and drying.

Per serving: About 510 cal, 13 g pro, 67 g carb, 21 g total fat, 9 g sat fat, 170 mg chol, 550 mg sod.

Basic Egg Pasta4 large eggs

(7⁄8 cup eggs)1⁄2 cup water

31⁄2 cups sifted all-purpose flour

1⁄2 teaspoon salt

Place eggs, water, flour, and salt in mixer bowl.Attach bowl and flat beater. Turn to Speed 2 andmix 30 seconds.

Exchange flat beater for dough hook. Turn to Speed2 and knead 2 minutes. Remove dough from bowland hand knead for 1 to 2 minutes. Let it rest for20 minutes. Divide dough into 4 pieces beforeprocessing with Pasta Sheet Roller attachment.

Follow cooking instructions, page 6.

Yield: 11⁄4 pounds dough.

IPES Salmon-Cream Cheese Ravioli

with Roasted Garlic Cream SauceRavioli

1 recipe Basic EggPasta, page 11

1 fillet (12 oz.) salmon 2-3 teaspoons olive oil

1⁄4 teaspoon salt1⁄8 teaspoon black

pepper1 container (8 oz.)

cream cheese withchives and onion

2-3 teaspoons choppedfresh dill or 1⁄2teaspoon dried dill

Sauce1 large head garlic1 teaspoon olive oil1 tablespoon butter1 tablespoon all-

purpose flour11⁄3 cups whipping cream

1⁄8 teaspoon groundnutmeg

1⁄4-1⁄2 teaspoon salt1⁄8 teaspoon black

pepper

Prepare pasta dough; let rest.

Drizzle salmon with oil; sprinkle with salt andpepper. On greased baking sheet, roast salmon at400°F for 10 minutes, or until center flakes easilywith fork. Cool; remove and discard skin and darkmeat. In medium bowl, flake salmon; combine withcream cheese and dill. Refrigerate until ready to fillravioli. Follow directions for preparing pasta sheets,using ravioli maker and cooking ravioli.

Peel loose, paper-like skin from outside of garlic. Cut1⁄2-inch slice from top of garlic to expose cloves.Place cut side up on 12-inch square of aluminumfoil. Drizzle with oil; wrap securely in foil. Bake at350°F for 45 to 50 minutes, or until knife point incenter meets no resistance; cool. In small bowl,squeeze garlic out of cloves; mash with fork.

In heavy 2-quart saucepan over medium heat, heatbutter until hot. Stir in flour; cook 1 minute.Gradually stir in cream, mashed garlic, nutmeg, salt,and pepper. Heat to boiling; boil and stir 1 minute,or until thickened. Serve hot over cooked ravioli.

Yield: 6 servings (12 to 15 ravioli with 1⁄4 cup sauceper serving).

1 bay leaf1-11⁄2 teaspoons salt

1 teaspoon sugar

Prepare pasta dough; let rest.

On baking sheet, place nuts in single layer. Toast inoven at 350°F for 5 to 7 minutes, or until lightbrown and aromatic. Cool slightly; chop.

In medium bowl, combine nuts, chicken, andcheese; refrigerate until ready to fill ravioli. Followdirections for preparing pasta sheets, using raviolimaker and cooking ravioli.

In large saucepan over medium heat, heat oil. Addonion; sauté until onion is tender. Add garlic; cook1 minute longer. Add remaining ingredients; stir.Bring to boil; reduce heat and simmer 30 to 40minutes, or until sauce is thick and flavors areblended. Serve hot over cooked ravioli.

Yield: 6 servings (12 to 15 ravioli with 1⁄2 cup sauceper serving).

*If desired, water may be substituted.
