Juice processing

Can be divided into• Processing using mechanical power• Processing mainly using enzymes

Juice ProcessingDifference:

• Mechanical requires higher investments and higher power consumption

• Enzyme treatment implies additional operational costs for using enzymes

• Enzyme treatment results in higher yields. Different enzymes or enzyme cocktails can be utilized, up to liquifacting enzymes, that theoretically can result in very high yields

• Enzymes can change taste slightly, which does not automatically imply the quality is lower.

• Since both processes are available in Uganda I don’t intent to mention too much about it except give some idea’s about products that I did not find at the Ugandan market yet.

Juices

• I have seen pasteurized and sterilized juices. Even fresh juices squeezed in a supermarket with just three days shelf-life.

• What I did not see are industrially made fresh juices with three days shelf life, e.g. packed in 3 l cans or bottles for use at home

• Nor did I see flash pasteurized fresh juices with a shelf-life of about 10 days for better logistics, but with the taste of fresh juice. Also packed in e.g. 3 l cans or bottles.

• Required investment: flash pasteurisation equipment with cooling and aseptic filling or with hot filling.

Flash pasteurization

• Gas pasteurizer and plate heat exchanger with automatic temperature control for preserving fruit and vegetable juice.

Filling

• Hot filling of fruit and vegetable juice in 0.25 – 5 l bottles/cans

PULP

• Just an idea, because pulp processing is well-known in Uganda

• How about fruit bars and dices?Would there be a market?

One recipe to show the idea:• Mango Pulp (48.8%),

Apple Juice Concentrate(32.5%),Apple Pulp(16.3%),Apple Fiber,Lemon Juice and

• Thickener(Pectin).• Also: sugar can be addedProcessing:• Mix, sheet, dry, cut, pack with

optional freezing before drying

Can be cut into e.g.:

• Bars• Sticks• Bits

• And combined with e.g. nut pieces if desired

• Would it be thinkable, in the future, to have a professional pineapple/fruit processing plant where fruit is dried and the remaining fruit in the peel and, if applicable, around the stone is pulped and used to process juices or bars?
