How to Make Vegetable Chips

Instructions

Things You'll Need: 2 lbs. assorted vegetables, peeled

(sweet potatoes, russet potatoes, large radishes, butternut squash, large carrots, turnips, parsnips, rutabaga, beets)

Salt to taste Vegetable cooking spray1. Step 1

Peel vegetables and slice very thinly, about 1/16-inch thick. Sprinkle vegetables slices lightly and evenly with salt.

Let stand 20 to 30 minutes, allowing vegetables to release moisture.

Rinse well in cold water and dry completely on paper towel.

To dry vegetables in the microwave, arrange slices in single layer on large microwave-safe plate sprayed with cooking spray. Spray vegetables with spray also. Microwave on high power until dried, 5 to 7 minutes. Check and rearrange after 4 or 5 minutes. Remove vegetables as they are dried.

To dry vegetables in an oven, arrange slices in a single layer on a jelly roll pan sprayed with cooking spray. Spray vegetables lightly with cooking spray. Bake at 275 degrees F for 40 to 50 minutes, checking occasionally and removing vegetables as they are dry.

The vegetables will become more crisp as they cool. Store cooled chips in airtight container at room temperature.

KROPEKYou have to add prawn/ shrimp paste into the Tapioca flour, add a little salt and papper and mixed it.

Do not add water. Do not use fresh prawn.

The next process is the most critical. Roll it into cylinder shape of about 2" thick, follow by steaming it.

You need to ensure that you steam it thru to the core, else it wil still be raw inside.

After steaming, allow it to be cool. The following process is to ensure the crispiness.

You need to slice them into thin pieces, and sun them. If they are not sun well, after you deep fried them, they will not be crispy.

Duration of suning depend on the amount of sun you have. If it is rainy season, well. . . good luck. It will not taste nice.

If it is hot sun, 2 days will be more than enough.

The amount of prawn to flour is up to you. For your own consumption, add more prawn. Outside, they use little rotton prawn to give the flavour. 

It is easy, but the process is long.
