500g raisins250g sultanas250g currants100g glace cherries50g candied peelzest and juice 1 orangezest and juice 1 lemon250g butter250g light soft brown sugar275g plain flour2 tsp ground mixed spice1 tsp ground cinnamon1 tsp ground nutmeg50g almonds50g brazil nuts50g walnuts5 large eggs

You will need:

First you beat the butter and sugar together until it is light and fluffy.

This is what you do:

Next you whisk the eggs in a jug.

To the butter and sugar add a tablespoon of egg and a tablespoon of flour and beat well. Repeat until all the egg has been added.

Add the rest of the flour and the spices. Fold in gently with a metal spoon.

Finely grate the zest from the lemon and orange.

Cut both fruits in half and squeeze out the juice.

Add to the cake mixture.

Chop the nuts and cherries into quarters.

Stir into the cake mixture.

Mix the dried fruits together in a bowl.

Add to the cake mixture and stir in gently.

Pour the mixture into a round 11cm cake tin.

Bake in a pre-heated oven, 130ºc for 2¾ hours.

When the cake has cooled, you can decorate it with marzipan and icing.
