I’m not a fan of dieting and never havebeen. In fact, a friend of mine recent-ly texted me a humorous saying clear-

ly summing up my thoughts on dieting:“Dear Diet, It's not me, it's you. I justdon't think it's going to work between us.You're boring, tasteless and I can't stopcheating on you.” Yup, perfectly put —it’s over between me and diets.

And as editor of Dining Out, going ona diet is nearly impossible, if you ask me.So in order to stay somewhat healthy,without having to sacrifice the food Ilove, I try my best to make smart deci-sions when it comes to what I eat.Therefore, this week I’ve decided to paytribute to my favorite vegetable of alltime — let’s give a great big round ofapplause for asparagus!

Asparagus is one of the most nationallywell-balanced vegetables in existence,and leads nearly all produce items in thearray of nutrients it supplies. As one ofnature’s most-perfect foods, asparagus isextremely versatile, low in calories, verylow in sodium and high in potassium,fiber, vitamin B6 and thiamin, just toname a few. For today’s health-consciousconsumer, asparagus is heaven-sent.

So, without furtherado, let’s kick diets tothe curb and makeroom in our stomachsand hearts for the new

love of our lives — asparagus.

W hen owner Hyosook Choi opened thedoors to Choi’s Garden in 2000, shewas planting the seeds of her dreams.

Choi, a former housewife from Korea, alwayshoped to one day own her own restaurant, andtoday, 12 years later, Choi’s Garden is flourishing— sprouting up new culinary concepts and har-vesting authentic Korean cuisine.

“Choi’s Garden really emphasizes home cooking, andwe always utilize the freshest meats and vegetables. Wereally want to highlight healthy cuisine and the impor-tance of all-natural ingredients,” says host Temi Chang.

Located on Rycroft Street not far from KeeaumokuStreet, or “Koreamoku,” as it's affectionately called, theeatery, which seats close to 200 patrons, is a “secret gar-den” for those who crave a traditional Korean meal.

“We’re especially known for our yakiniku, pricedaround $24.99. The beef that we use is top-grade andvery fresh,” Chang says. “Customers have the option ofcooking up meats such as Spicy Pork, BarbecueChicken, Kal Bi or Brisket.

“Graduation season is approaching, so we expect tohost many graduation parties, and yakiniku is really pop-ular, so we’re featuring a handful of appetizers to pairwith yakiniku,” she adds.

Appetizers include Long Rice with Pan-FriedVegetables ($15.95), Steamed Butterfish (spicy or mild,$23.99), Spicy Rice Cake ($11.99) and Homemade FriedMondoo ($11.99). These appetizers are perfect for shar-ing among family and friends, and Chang recommends

pairing Spicy Rice Cake and Homemade Fried Mondoofor an unforgettable meal.

However, here at Choi’s Garden it’s clearly impossiblefor yakiniku itself to take all the glory when there are aplethora of items that are equally delicious. Take, forexample, Sang Kal Bi aka Seasoned Prime Short Rib($24.99), and Healthy Stone Pot Rice, which featuresStone Pot Rice with Date, Beans, Sweet Pumpkin, Kal Biand Soup (Miso, Kim Chee or Soft Tofu) ($17.96).

“With our Stone Pot Rice dishes you can choose frommeats or fish,” Chang explains. “Usually in Korea youwould eat it with fish, but for locals we offer kal bi, too.

“Locals also enjoy a favorite appetizer of Special ShoyuSauce Raw Crab ($34.99). The crab is always fresh.”

Choi’s Garden draws in hungry diners with its shabushabu selections as well, be it Beef Shabu Shabu ($44.90)or Seafood Shabu Shabu ($44.90). Ideally meant to beshared among a party of two or three, Choi’s Garden’sShabu Shabu is a nutritious option for those who arehealth conscious.

“Beef Brisket is our most-requested shabu shabuselection,” Chang says. “With all of our shabu shabudishes we give you a lot of vegetables including Chinesecabbage, bell peppers, onions, green onions, zucchiniand enoki mushrooms, and people usually order moremeat because the meat is tasty — it’s very thin and ten-der.”

And according to Chang, there is a proper way toindulge in Choi’s Shabu Shabu. It’s all in the technique.

“You wait until the broth boils and then you put in thevegetables (although not at once), then you take the veg-gies out once they’re cooked and you add the meat to the

broth. Finally, once the meat is cooked, you dip the veg-gies and meat in the sauce that you like. With the leftoverbroth, you add udon to it, and that in itself is a secondmeal,” she explains.

Husband-and-wife dreamteam Tommy and LienDang serve up a fresh

batch of Vietnamese fare everyday at Pho My Lien, theirWestridge Shopping Centerrestaurant. If there’s one personwho can vouch for the authentic-ity of their cuisine, it’s longtimefriend and business partner,Walter James.

“I’ve known Tommy for

almost 30 years,” says James.“(Lien) was cooking for us andwanted to open a restaurant, andI said, ‘Fantastic idea.’ The foodis good and it’s consistent,” headds. “We’ve been at this for 10years.”

James, along with a loyal baseof customers, loves to indulge inCrispy Spring Rolls ($7.50),filled with pork, chicken, shrimp,shredded carrot, long rice andmushroom. “They’re very habit-forming,” says James. “If you eat

one, you gotta have another.” Thecrisp, golden rolls are servedwith lettuce, mint leaves, ricenoodles and Lien’s special sauce.

Regulars at the bustling eateryalso love Hot Spicy LemongrassStir Fry ($7.95), with a choice ofchicken, pork, beef, shrimp ortofu coated in a spicy, curry-likesauce.

And for a burst of freshness,James recommends GreenPapaya Salad ($7.50), featuringshredded green papaya andshrimp mixed with mint leaves,peanuts and that unforgettablespecial sauce.

“It’s good home cooking,always has a good look and it’sfresh,” describes James. Whatmore could you want?

Watching chef Edgar San Juanwork behind the counter atSushi King is a pleasure. He

is quick without being rushed and theflavorful, artistic creations he serves area reminder of why the restaurant hasbeen an area staple since 1992.

The best thing about dining at a sushirestaurant is that there are no rules whenit comes to appetizers, main courses andeven desserts. OK, maybe not desserts,but almost the entire menu at the KingStreet restaurant is pupu compatible.

Fresh Oysters are a good way to start,and priced at $7.25 it’s a delicacy youcan afford. The fresh shucked oystersare cleaned and served with greenonion, grated daikon that is mixed withJapanese chili peppers and a ponzu dip-ping sauce.

Equally satisfying is Ika Maruyaki, orwhole squid. The tender squid ($11.95)is grilled and served with either a teriya-ki or shiyoyaki sauce. As with every-thing on the menu, it looks as good as it

tastes.Soft Shell Crab ($9.50) is a crispy

appetizer option that is a definite pairingfavorite with any number of menuitems, including Ahi Poke ($9.50). Thebuttery fish is served with green onion,tobiko, yamaimo (mountain potato),ogonori, radish sprouts and tossed witha sesame oil seasoning with a few ingre-dients San Juan isn’t ready to identify.

They are not appetizers, but the EarlyBird Dinner ($15.96) and the Late NightSpecial ($11.45) are crowd pleasers,with options including chicken teriyaki,shrimp and vegetables, salmon katsuand ahi cutlets, just to name a few. Allcome with rice, salad and miso soup.

You know the old say-ing about books andtheir covers. It also

can pertain to restaurants. When an eatery has the

word “barbecue” in itsname, a non-meat-eatermay not even bother to enterits doors. But don’t be tooquick to judge, becausewhen it comes to Koreancuisine, for those whochoose not to eat meat orfish, it’s all about those fab-ulous little side dishescalled banchan. And luckyfor veggie lovers, at 808Yong’s BBQ, owners Yongand Bennett Tom had a bril-liant idea.

“We have the Veggie Plateas a daily special right now,”says Bennett. And at only

$6, it’s a real bargain, with achoice of four banchan andone scoop of either white orspecial Korean brown rice.

“We normally have 12dishes to pick from,” hesays. Bennett adds that thespecial rice is a mixture ofbrown and wild rice, barleyand other grains. And withall that whole-grain good- ness combined with

your choice of four of thosesavory sides, this is a flavor-packed, vegetable-rich dishthat’s good for you. Can’tbeat that.

“We have a good selec-tion,” he says of Chef Yong’ssides, which vary dailyaccording to what fresh pro-duce she finds at the market.The taste-tempting cold ban-chan can include beansprouts, cucumber kim chee,

japchae, spinach, batteredand fried zucchini, goba,choi sum, broccoli, stir-friedbutton mushrooms and manymore, all freshly made.

Banchan bounty

The ocean is a mysteriousenvironment, filled withmillions of creatures that

swim, crawl or spurt through itsopen vastness. What seafoodlovers have come to learn is thatregardless if these ocean resi-dents harbor in warm tropicalwaters or call the dark, frigidtemperatures of the deep seahome, there are many that canbe absolutely delicious oncethey find their way to our plates.

As you may know, the topcrab of the sea is arguably theAlaskan King Crab, and if youcome at the right time, PandaCuisine will have these delec-table mammoth crabs for you totry. Priced at $49.99 per pound,the Alaskan King Crab, aside

from being a meal in itself, is agood source of protein withvery little calories. The snow-white meat is unparalled, espe-cially when steamed with garlicas Panda Cuisine does. AlaskanKing is not readily available atPanda Cuisine, so calling aheadis a wise decision.

A seafood dish that is a regu-lar on Panda Cuisine’s menu isSalt and Pepper Squid ($8.99).Very lightly fried, diners willbe able to undoubtedly taste thefresh squid rather than layers ofbatter. There also are more than70 items on Panda Cusine’slunch menu (from 11 a.m. to4:45 p.m.), all priced at $7.99each, which come with soup ofthe day and steamed rice.

Panda Cuisine also has a late-night menu (10 p.m. to 1a.m.), with seafood, meat andvegetable dishes priced at $10or less.

With its elegant atmos-phere — including outdoor seating on anidyllic garden terrace — Il Lupino is theperfect place to enjoy a leisurely meal.The ambience is so encapsulating that youmight even forget that you’re in Waikiki atall and instead have been transported toItaly — a feeling that Il Lupino’s authen-tic Italian cuisine will solidify.

“It’s traditional Italian cuisine, and it’s alittle rustic because Chef (Nick Sayada)does everything in-house,” explains gen-eral manager Adriana Nickerson. “It’sclassic Italian that some people might notbe used to. But it is something that Iwould like people to venture out andexperience what Il Lupino has to offer.”

Should you choose to venture to IlLupino, a pleasant surprise of flavors forbreakfast, lunch and dinner awaits.

Dishes that will tantalize your tastebuds include Gnocchi Ricotta e Spinaci($19), which includes hand-rolled spinachand ricotta cheese gnocchi with pomodorosauce and Parmesan cheese, and Linguinealle Vongole ($16 for lunch, $19 for din-

ner), which features fresh clams served inyour choice of bianco (white wine, freshclam juice, olive oil and chili) or rosso(bianco with pomodoro) sauce. Othermust-trys are Linguine alla Carbonara($15 for lunch, $18 for dinner) andTagliatelle ai Tartufi ($15 for lunch, $18for dinner), which serves up linguinepasta in a citrus cream sauce with blacktruffle purre and asparagus.

Other delightful dishes includeProsciutto, Mozzarella & Tomatoespanini ($12) and Zucchini e Melanzanepizza ($14), with oven-roasted zucchiniand eggplant, tri-color peppers andParmesan cheese.

Il Lupino also features the onlySalumeria in Honolulu. Salumeria optionsinclude an array of meats and cheeses —all imported from Italy. One selection isjust $5, and you also may opt for theSmall Platter ($25) with three meats andthree cheeses or the Large Platter ($40)with five meats and five cheeses. TheSalumeria is open from 3 p.m. to closing.

In addition to importing some ingredi-ents from Italy, Il Lupino also makes useof fresh, local produce.

“The chef incorporates a lot of local

ingredients,” Nickerson says, explainingthat some of the salads use Nalo Greensand other dishes include locally grownbasil. “We do like to use what local pro-duce we can get.”

Il Lupino Trattoria & Wine Bar is the brainchild offather and son restauranteur duo Wolfgang andPeter Zwiener. Wolfgang, who cultivated his love

and knowledge of Italian food while traveling through Italy as a youngman, was a longtime waiter in New York. One day, Peter proposed theidea that his father start his own restaurant. Today, the two own a num-ber of eateries on the Mainland, as well as Wolfgang's Steakhouse,which is located directly upstairs from Il Lupino.

The restaurant combines the Zwieners’ vision with the expertise ofChef Nick Sayada.

“Our chef makes everything in house — from the stocks to all of oursauces to our fresh gnocchi,” Nickerson says.

Sayada has years of experience in the restaurant industry, formerlyworking as a chef in well-known restaurants such as Black Orchid and

Nick’s Fishmarket in addition toowning his own restaurant in SanFrancisco. Nickerson credits muchof Il Lupino’s tasty cuisine toSayada’s creativity.

One example of such creativity,Nickerson says, is a colorful salad,Insalata Farfalla ($14), which includespapaya, avocado, marinated mush-rooms, chopped tomatoes and curedonions all bathed in a black truffle vinai-grette. Nickerson explains that Sayadathought up the salad after seeing all ofthe vibrant colors of the ocean when hewas snorkeling one day.

“He is just great at what he does andcoming up with dishes,” Nickerson says.“He's brilliant.”

If you’re looking for a restaurantwhere you can get affordableJapanese food that will satisfy your

hunger pangs, look no further thanKatsu, located at 3008 Waialae Ave.,previously occupied by Richo KoreanCuisine. The establishment celebratedits grand opening April 3 with about300 people in attendance.

Owner Masaru Hashiguchi’s mis-sion is to provide the people of Hawaiiwith a bigger sense of Japanese foodwhile giving value to the customer.“There are so many second- and third-generation Japanese in Hawaii whowould understand the culture and therestaurant,” he explains.

Hashiguchi just wants people to eat alot (at a reasonable price) and enjoythemselves.

This is Hashiguchi’s first restaurantin Hawaii, but he owns nine otherestablishments (ramen restaurantsand bars) in Japan. He hopes Katsuwill be a friendly and accessiblerestaurant where patrons can “pop in”for a good meal.

This is not your ordinary Japanesedining experience. While it is notmeant to be a high-end eating estab-

lishment, with servers who cater toyour every whim, Katsu puts greatemphasis on the quality of its food.With only 10 employees, this place islargely self-serve.

There are seven entrees to choosefrom for now, and Hashiguchi plans toinclude more dishes on the menu in thefuture. You must order an entrée, andthe buffet comes as part of the deal.

Entrees include: Chicken Katsu($9.75 lunch mini, $12.98 lunch regu-lar, $14.95 dinner mini, $17.98 dinnerregular), Pork Katsu ($10.98 lunchmini, $13.98 lunch regular, $15.98 din-ner mini, $18.98 dinner regular),Assorted Tempura ($12.98 lunch,$17.98 dinner), Assorted VegetableTempura ($10.98 lunch, $15.98, din-ner), Chicken Karaage ($9.75 lunchmini, $12.98 lunch regular, $14.95 din-ner mini, $17.98 dinner regular), andSpicy Chicken Karaage ($10.98 lunchmini, $13.98 lunch regular, $15.98 din-ner mini, $18.98 dinner regular).

The dinner buffet includes a bottom-less drink, but during lunch the drinkoption costs $1.99. Hashiguchi recom-mends hojicha (a dark-colored roastedJapanese green tea).

According to Hashiguchi, manypeople have been raving about thecurry, which is part of the buffet. Otheritems available at the buffet are rice,miso soup, udon and salad bar.

Sides that you can choose frominclude Curry Flavored Long Rice withSoybeans, Garlic Pasta Salad, Fresh-cut fruit and Mango Pudding.

The benefit of having all these choic-es is that you can play around with itand make your own combinations. Ifinspiration doesn’t hit you but yourstomach is calling for food, Katsu has alist of combinations you can try such asCurry Udon or Curry Rice.

Katsu is a great place for families toenjoy a nice meal. Two children age 4and under can eat for free with every pay-ing adult. There is also a 10 percent sen-ior discount for those age 65 and older.

Head down to Katsu and you’llleave with a full tummy and a not-so-empty wallet.

“It’s authentic Japanese food

combined with an Americanatmosphere,” explains Hirose,who owns the restaurant. “I wantto show local people the realJapanese way of eating.”

Popular dishes include YoshiOriginal Ribeye Steak (3/4pound, $18), which features asweet and flavorful secret saucemade with a saikyo miso baseand sesame seed; and AssortedSashimi ($20) featuring a mixof fresh fish such as maguro thatis from the waters of Hawaii,hamachi and red snapper fromJapan, and Atlantic salmon.

There also are daily specialsand a full bar serving sake,shochu, chuhai, beer, hard liquor

and wine. A great complement toyour meal is Takezake ($8), ahouse special sake served frombamboo.

Closed for lunch, Yoshi opensat 5:30 p.m. and caters to the latedinner crowd withlast call for

food at 11 p.m. (10 p.m. Sunday,closed Tuesday). Aside from thegood food and service, cus-tomers also can enjoy the art-work throughout restaurant,including paintings by artistHisashi Michii.

Limited parking is avail-able in front of the restau-rant, and street parking is

Determining whether or not a certainfood is “delicious” is subjectivebased on differing taste buds and

opinions. However, here at HinoneMizunone on South King Street, there’s amutual understanding by loyal diners thatHinone’s cuisine is some of the best. Thisfamily-friendly establishment is owned byJapanese restaurant giant Fujio FoodSystems, and opened its first U.S. locationhere in the islands in 1998. Specializing intraditional Japanese entrees, therestaurant features a little bit ofeverything, from Teishokusets to bentos, udon, misobutterfish, and Honone’sever-popular rice, cookedin an old-fashioned pot.

“Our Saba Mitsuke

($8.50), Chicken Katsu Curry ($9.50) andKaraage Curry ($8.50) are standout dishes,”says operations manager Eiki Tamaki.

Hinone’s curries are prepared in theJapanese style, and are beef-based and mixedwith pieces of potatoes, carrots and yourchoice of meat, be it chicken katsu or karaage(Japanese-style fried chicken).

With its comfort-able atmosphereand warm, wel-

coming staff, Kapa Café isa place where it really does“feel like family.” Theeatery, which opened lastNovember, is distinct fromothers because of its spe-cific purpose, according toowner Shelly Seleni.

“I want Kapa Café tobe a platform forPolynesian and localentrepreneurs,” sheexplains. “I want to createa safe place for them tocome and know they havethe freedom to share what

they’re doing.”Although the eatery usu-

ally doesn’t open onSundays, to officially“launch” the restaurant,Kapa Café is open today(April 15).

“As an introduction toKapa Café, we will be opentoday and invite everyoneto become a part of ourfamily,” Seleni confirms.

Seleni, who started asocial network group forPolynesian and local entre-preneurs in 2009 called theTapa Network, realizedthat she needed to build ahome for the network.

“My whole visionbehind what I’m trying toaccomplish is very uniqueto the process of makingtapa (Polynesian cloth),”Seleni says. “The processof making tapa takes morethan one person; it actuallytakes a village. Tapa isunique and significant tothe Polynesian culture as awhole. When I openedKapa Café, it just madesense because I’mHawaiian and Samoan —the tapa represents mySamoan and ‘kapa’ (‘cloth’in Hawaiian) is myHawaiian.”

While Kapa Café hasn’teven been open for a yearyet, businesses are alreadyutilizing the eatery as anetwork spot and meetingplace. Seleni notes that,while Kapa Café usuallycloses at 6 p.m. Mondaythrough Friday, many dif-ferent networking groupsutilize the space for theirprivate meetings. The caféprovides a private roombusinesses can rent to holdtheir meetings, which fitsclose to 30 people.

“It’s become a very safeplace for them (business-es) to network, share theirdreams and share oppor-tunities,” Seleni says.“What I really see for thecafé is that people comein with a heart of cooper-ation, not competition —they come in to collabo-rate versus compete.”

At Kapa Café, one willfind traditional café farewith a unique, Polynesiantwist and a variety of fla-vors. All sandwiches, forexample, are made witheither Guava bread — theCafé’s signature “pinksandwiches” — taro rolls orspinach bread. A specialGuava aioli also is used for

the sandwiches. Customer favorites

include Hot PastramiGrill on Spinach Bread($9), Guava Melt ($7.50)— a turkey, ham and two-cheese panini with Guavaaioli — and Turkey Swisson Guava Bread ($5.50).Also popular among cus-tomers is Chicken SaladMix on Taro Roll ($5.50)and Taegu Tofu Salad($8.50). Customers alsohave the option of makingtheir sandwiches combomeals for an additional $2(comes with chips and acan drink).

Kapa Café also offersdaily specials. Previousspecials have included asteak sandwich with alilikoi horseradish ($9),kalua pig on taro roll ($9)and an Angus burger ontaro with a mango ketchuprelish ($7.50).

Smoothies are one-of-a-kind at Kapa Café, witheye-catching names suchas the popular Samocha($5.25) — an AlmondRoca mocha — and PolyPunch ($3.95), a mango,lychee and passionfruitblend with a bit of li hing.Another signature smooth-ie is Supahfruit ($3.95plain) — made with acai,blueberries, gogi andpomegranate — and the“upgraded” version, Supah

Supahfruit ($5.25), whichincludes granola and icecream.

Also noteworthy are theunique Kava blends atKapa Café. Regular Kava($3) is available, as well asflavors includingmacadamia nut, melon andcappuccino ($5 per cup).

“Most people associatekava with dirt water, butthe Kava blends we’vecreated here are so deli-cious that people have tostop and try them,” Selenisays. “We also feature alot of Polynesian dessertsthat are (currently) partof the specials and theywill be incorporated intothe menu.”
