The saying that “a singlegrain of rice can tip thescale” still holds true at
Hinone Mizunone, where loyalpatrons flock to feast onsweet rice cooked to absoluteperfection.
How does the Japaneseeatery do it? Turns out thesecret behind the highly covet-ed item lies in the restaurant’sname.
“The name Hinone Mizunonehas real significance to us,”operations manager Eiki Tamakiexplains. “Hinone means soundof fire and Mizunone meanssound of water, so when youcook your rice in an old-fash-ioned pot, as we do, that’s allyou can hear — the fire and thewater.”
But while the rice is ichibanon Hinone Mizunone’s menu,
other favorites such as teishokulunches, Japanese curry, udonand sushi have quickly gainedthe attention of patrons sincethe family-friendly restaurant —owned by Japanese restaurantgiant Fujio Food Systems — firstopened its doors on South KingStreet three years ago.
Dining Out recently stoppedby this ever-bustling eatery,where Tamaki and head chef
Teruo Aonuma discussed,among other things, the restau-rant’s fave dishes and the per-fect harmony between fire andwater that exists at HinoneMizunone.

clan loved Hawaii and wouldcome two to three times peryear, and Mr. Fujio wanted toopen up a restaurant here.
DO: Hinone Mizunoneopened its doors for businessin 2008, and since then hasgained quite a number of loyalcustomers. For diners whomay have not yet had theopportunity to experienceHinone Mizunone, what canthey expect?
Tamaki: People can expecthome-style Japanese cooking.It’s really about comfort foodhere. Our regular customerscome to eat here up to fourtimes a week.
DO: This eatery featuressomething for every appetite,whether it is udon, teishokusets, a la carte options such asBroiled Salmon ($6.50), Ebi Fry($5) and Tonkatsu with home-made sauce ($6.50) and more.Any other must-have itemswe’re missing from this list?
Tamaki: Our daily lunchand dinner specials are reallypopular here. Also on our reg-ular menu, frequently request-ed items are Butterfish,Tempura and Sashimi, toname a few. However, the No. 1item for lunch is the Chicken“Ama-kara Age” ($11). This iscrispy fried chicken seasonedwith grated daikon andtopped with a sweet ginger
sauce. This teishokuentrée is somethingpretty unique to us,and it’s also servedwith rice, miso soup,two side dishes andtsukemono.
DO: Chef Aonuma, you’vebeen in the culinary industryfor the past 43 years and havebeen showcasing your skills atHinone Mizunone for a yearand a half. Share with us someof your famed specialty items.
Aonuma: We have theSalmon Avocado Roll ($7.25)and the Ribeye Oroshi PonzuSteak (ala carte $16, teishoku$20.50). This steak is so tenderand features grated daikon.Both the salmon rolls and thesteak are available for dinneronly.
Tamaki: Our Japanese curry
also is very good and is avail-able during lunch. It’s madewith a beef broth base andcustomers can select from theOriginal Curry ($7.50),Karaage Curry ($8.50) or
Chicken Katsu Curry ($9.50).Our Assorted Sashimi Platter(a la carte $21.75, teishoku$26.25) is a must-have, as well.
DO: There has been muchtalk about the incredible ricehere. What makes the rice atHinone Mizunone so special?
Tamaki: We cook all of ourrice in an old-fashioned pot.We have a rice warmer, but wedon’t have a rice cooker. Weset the rice on high heat for 10minutes, low heat for five min-utes and let it sit for 20 sec-onds. We have to constantlykeep an eye on it, or else it’sjust going to burn. Our cus-tomers love our rice. The tasteis definitely sweeter and therice is a lot fluffier. We also
serve all of our rice in an ohit-su instead of a rice bowl —that equates to more than twobowls of rice!
DO: Chef Aonuma, you weretrained in Japan, but knowingthat the majority of your clien-tele is local, did that force youto make some changes to yourculinary styling?
Aonuma: A bit. Yes, most ofour customers are local, so thefood that I serve here isn’texactly what you would find inJapan. Instead, I mix the fla-vors of authentic Japanese cui-sine with local flavors and con-cepts. I always use local ingre-dients as much as I can.
DO: How exactly do you
incorporate local flavor intoauthentic Japanese cuisine?
Aonuma: I do so with deco-ration, and the taste of thefood is a little sweeter.
Tamaki: You’ll especiallyfind local flavorings in particu-lar dishes like the butterfish,sukiyaki, and in our CaliforniaRolls and Spicy Tuna Rolls.
DO: What’s most rewardingabout serving as head chef atHinone Mizunone?
Aonuma: The people, ofcourse. The staff is veryfriendly and we have veryloyal customers.
Tamaki: We do our best withtrying to be very consistentand serving consistently goodfood.

Owning a restaurant with a name asunique as Lung Fung ChineseRestaurant, one is bound to receive
questions about the name’s meaning. Suchquestions are typical, according to restaurantmanager Eddie Ma.
“People are always asking me about (therestaurant’s name, Lung Fung),” Ma says.“From the old times, lots of people use thatname for ‘good luck’ and ‘good fortune.’ ‘Lung’is ‘dragon’ and ‘fung’ is ‘phoenix’ in Chinese. Ifyou come in the restaurant, you can see thepictures in the back, the gate and the ceilingpanels … it’s all dragon and phoenix.”
The restaurant’s décor is just one of manychanges Ma made ever since he became therestaurant’s manager in 2002.
“I did a lot of renovation and updated all thecooking styles,” Ma says. “Lung Fung not onlyhas a chop suey restaurant style; we also havea lot of seafood items.”
Lung Fung first opened in Kalihi 30 years agoand has since moved to its current location inNiu Valley Shopping Center. Due to its loca-tion, Ma acknowledges that many of therestaurant’s customers are locals from neigh-boring communities.
“More people from the East Oahu side come(here),” he says. “I would say ‘thank you’ forall their support, but I’d like to welcome peo-ple not only from East Oahu to taste the foodat Lung Fung.”
Lung Fung offers an expansive menu filledwith many options for customers. Popularfavorites include the Crispy Garlic Shrimp($13.95) — consisting of big shrimp mixedwith fried, crispy garlic — and the Spicy WonTon ($8.95). Other menu favorites are dishessuch as crab and pork chop that include therestaurant’s garlic and chili, according to Ma.
The restaurant not only prides itself on itsfood’s flavor, but on its reasonable prices andproduct presentation as well, Ma says.
“I have 22 years of experience in Chineserestaurants in Oahu and fine dining experi-ence,” he explains. “People are interested inthe look (of our food), so I want to make sureit’s decorated. I want people to feel like theyare getting quality food at a low price. Theaverage price range (per customer) is about$10.”

“Every month, we put somenew items (on our menu),” hesays. “Anytime I travel aroundChina and Hong Kong, I seewhat’s the most popular dishand try to bring it back toHawaii. I put new dishes on aboard, and if people order andthey like it, then I add it to themenu.”
To create an affordable din-ing experience for its cus-tomers, Lung Fung offersnumerous specials. For exam-ple, on the restaurant’s take-out menu, if customers pur-chase an entrée, they also canorder Honey Walnut Shrimp(regular price $13.95) for just$6.99. Lunch specials, offeredfrom 11 a.m. to 3 p.m., are$7.95 and include entrees suchas the Minute Chicken FriedNoodle and Beef BrisketNoodle.
“We also recently started akids’ menu,” Ma says. “For$3.99, you can get orangechicken/beef broccoli, a scoopof rice and two pieces of gaugee; or a bowl of saimin.”
In addition to these promo-tions, Lung Fung also offers abanquet menu, which is popu-lar among locals for planningparties or events.
“We put a lot of seafooditems in the banquet menuand make it very reasonable,”Ma says. “It’s (Lung Fung)good for holding a partybecause there’s a lot of park-ing and it’s very private. They(customers) don’t have toshare the area and spend a lotof money.”

Patisserie La Palme D’Or pridesitself on quality deliveredthrough both its delicately pre-pared desserts and stellar cus-tomer service. As its name (trans-
lated to mean “Golden Palm,” and alsothe symbol gracing the trophybestowed upon the top film at France’sCannes Film Festival) suggests, cus-tomers are in for the cream of the cropwhen experiencing what La Palme D’Orhas to offer.
The Ala Moana Center eatery’s flagship items areits pastries, made daily from scratch to ensurefreshness. Its recipes are crafted to make thedesserts sweet enough to enjoy without being over-whelmed with too much sugar. The treats incorpo-rate not only flavors from various ingredients gath-ered from Hawaii, Japan and around the world, butalso showcase the artistry of the chefs that incorpo-rate various textures and design to complete thepresentation.
Executive chef Akiko Kimura brings a wealth ofexperience from her training at the Osaka AbenoTsuji School of Culinary Arts to La Palme D’Or,where she’s worked for nearly two years. Kimura’stutelage fuels the patisserie’s fusion of traditionalFrench pastry-making with techniques from Japan.The combination has produced a wide array of con-fections, from the simple and classic to the exotic
and flashy.The Gateau Au Fraise ($4.80) is La Palme D’Or’s
signature strawberry shortcake and although lightand fluffy, the layers of moist sponge cake sand-wiched with whipped cream and sliced strawberriespack a flavorful punch. According to Kimura, thestrawberry shortcake is modeled after the popularstyle found in Japan. The Vanilla Roll Cake ($3.40)incorporates a similar soft sponge cake rolled upalong with whipped cream and vanilla custard.
The Mont Blanc ($4.99) provides customers withthe royal treatment — the pastry was presented tothe Emperor of Japan during his visit in 2009. Thedessert includes a base of almond cake baked withchunks of chestnuts and gooseberry that is coveredwith fresh whipped cream and an intricate piping ofsmooth, rich chestnut cream containing a hint ofrum. During the constant rush of the week, some-times dinner gets put on the backburner ofthings to do, leaving most folks scrambling
when hungry cries of “What’s to eat?” fill the kitchenair.To the rescue is 3660 on the Rise. Since April, the
award-winning restaurant has been offering a three-course menu of monthly specials to alleviate thestress of last-minute dinner preparation.“We decided to start these specials to give our cus-
tomers a great excuse to eat out on the weekdays,”says banquet catering manager Cheryl Leong. “Theyhave been well-received from the beginning.”According to Leong, Chef Lydell Leong invents the
menus based on guests’ requests, crafting new disheseach month for foodies looking for a tasty and afford-able dinner out during the week.For the month of June, the three-course menu

Since opening at the corner ofWaialae Avenue and WilhelminaRise in 1992, 3660 on the Rise
has grown into a favorite neighborhoodestablishment, thanks in part to its menu of Euro-Island cui-sine that is as diverse as the Islands themselves.
“The menu appeals to the local tastes, and many of ourcustomers are familiar faces who return time and again,”says banquet catering manager Cheryl Leong.
The Waialae eatery is also popular among the famous set,who seek out the restaurant for its relaxed and welcomingatmosphere.
“Celebrities who have dined here in the past have beenable to maintain a low-key profile,” Leong notes.
“Its casual atmosphere makes it a comfortable place todrop by and have drinks and pupus, or for the family to cel-ebrate a special occasion,” she adds.
For those special get-togethers, 3660 on the Rise alsooffers four banquet rooms that can comfortably accommo-date up to 200 guests. Lunch and dinner buffets or setmenus are available, with offerings that include Pan-SearedScallops, Grilled Tenderloin of Beef, Soy Sake-GlazedButterfish, Lacquered Fillet of Wild Salmon, Shichimi-SearedBreast of Chicken, as well as an array of salad and dessertchoices.
“We have a dedicated banquet chef who prepares the samequality of food as the main dining room,” promises Leong.

Pho can best be described as a com-fort food. Served for breakfast, lunchor dinner, pho dishes have an inviting
allure to them as the flavors of each ingre-dient merge together, rising from eachsteaming bowl. Pho is essentially Vietnamese, but the
cultural influence France had on Vietnamalso is a factor in the development of thisnoodle soup. Food historians have theo-rized that pho is an evolution of the Frenchphrase pot au feu, which translates deli-cately to “pot on the fire.”At the restaurant’s Aiea location inside
Westridge Shopping Center, the majority ofpho dishes consist of simmering beef inhot broth, but for seafood lovers, the Phowith Shrimp and Squid is a tempting alter-native.“This a very healthy meal that has been
on our menu from the beginning,” saysowner Tommy Dang.Pho with Shrimp and Squid — priced at

Lobster Ravioli
Ingredients: • 1.5 pounds fresh Manila clams• 2 tablespoons vegetable oil• 1 tablespoon chopped garlic• 2 tablespoons diced onion• 1 tablespoon red jalapeno pepper• 1 tablespoon salted Chinese black beans• 2 tablespoons oyster sauce• 1.5 cups chicken stock• 1/2 tablespoon cornstarch mix with 2 tablespoons water• 1 tablespoon chopped green onion• Salt and pepper, to taste (Some black beans are
very salty, so salt may not be necessary.)
Preparation: • Clean the clams by rinsing in water until allmud and sand are removed.• In a sauté pan on medium heat, add vegetable oil, onions and garlic. Sauté for a few seconds, add clams, cook for a minute then add chicken stock, chili pepper, black beans and oyster sauce. • Keep cooking until all the clams are open. Stirin cornstarch mixture and bring to a boil. Finishby adding the green onion and season with saltand pepper, if needed. Turn off heat.
