George John Kundrat is a pastry chef who has worked for a plethora of five star establishments across the world. While working at luxury hotels, his day-to-day operations required him to research recipe concepts and develop and test new recipes. He was usually responsible for the dessert menu, which included traditional desserts, dessert wines, specialty dessert beverages, and gourmet cheese platters.

Cooking school is not for everyone, and before entering it, George was not really sure about what he wanted to do with his life. Fortunately he was only 23 years old when he attended cooking school, and was able to find direction for his life. He was a natural at concocting wonderful recepies. But there are many characteristics that he believes are necessary for any pastry chef.

Food Knowledge – The science of pastry making involves the use of a variety of food items many of which are perishable. According to George John Kundrat, a great chef understands the chemical basis for the combination of foods. He should understand nutrition and how foods are digested in our bodies. Next he will get to learn many things on the job such as measuring, mixing, combining, neutralizing, and balancing etc.

Education - This could involve several different strategies, and not everyone has done an official cooking school education. George says that many people just have a diploma or certificate. Others have an associate’s degree, and those looking for management jobs should definitely aim at a more advanced degree such as a bachelors.
