Hello students, graduates and friends. 2011 is here and I wish you all a great and successful year ahead and beyond. We launched h in 2010 and here we are with our second issue, Summer 2011. We welcome the arrival of our new students this semester and look forward to assisting them in reaching their personal and professional goals. We also welcome the return of our Internship students who for the past 6 months have been balancing work/life and dare I say it study. And we do not forget the class of 2011 who return to complete the journey they started 2 years ago, their degree! h is written in the true spirit of you, The Hotel School Sydney student, and with THSS in its 22nd year we have reason to celebrate. This issue of h focuses a lot more on the success in the workplace, commitment to study and what true determination can achieve. Yes! These were met with challenges, obstacles and possibly self actualisation. Sorry! Couldn’t resist a reference to Maslow. Rewards as we know are based on merit and hard work. Having observed the industries global trends and changes with our very own growth in Australia,
I believe 2011 could be one of our strongest years, in terms of tourism, conferences, events and domestic travelling. We must take into consideration the efforts Tourism Australia and NSW generated late last year, and look positively forward to what the next 24 months will bring to Australia’s Hospitality and Tourism Industry. From an employment perspective this should increase the number of jobs available. With The Hotel School Sydney embracing social media, we encourage you to join and follow us through facebook on www.facebook/laurence.luxford and share your thoughts and network with classmates, friends, graduates and industry personnel. I personally will be keeping you all updated, connected, in touch and in the know with THSS and can’t wait to hear from you. We all have ambitions. Some more adventurous then others. from the directorFor many years Switzerland has been perceived as the long established home of hospitality education. We regard Australia as the new, innovative and strategic centre of tourism and hospitality education. Our infrastructure of world-class hotels and educational facilities, currency in curriculum, innovation in delivery and genuine Australian hospitality make for a great learning environment.
h magazine is published in the spirit of the above.
Each year we try to improve our teaching and learning environments. In 2010, our focus was concentrated in improving and perfecting our physical facilities with the acquisition of the former University and Schools Club on Phillip Street. Whilst many private colleges collapsed in 2009, given their reliance on international markets, our owners had the confidence and foresight to invest in our future - I am sure you will agree, the finished product has become a great strategic new home for our current, past and future students.
In 2011 our focus will be on continuous improvement and innovation. We will:

How the program works + Internship is a period of industry experience that is a mandatory part of the Bachelor of Business in Hotel Management program
+ In order to meet the industry experience and academic requirements students are required to satisfactorily complete 6 months and acrue 600 hours industry experience in one organisation, as well as all corresponding university assessments
+ Students seek a position within all aspects of the tourism and hospitality industry. Suitable employers include: hotels, resorts, restaurants, bars, catering services, clubs and casinos
+ Students generally undertake Internship in July or January. If they are returning to study they may be retained as a member of staff.
+ Students may work in a casual, part-time or full time position to meet organisational needs
+ Internship constitutes paid employment within the tourism and hospitality industry. The student enters into an employment agreement that is governed by the award or enterprise agreement relevant to the organisation
+ Organisations have the opportunity to select and recruit students through traditional selection processes
benefits to you as host organisation + Freedom to place the student where you choose within your organisation, allowing you to achieve maximum benefit
+ After completing Internship the student may remain as a member of your staff
+ No contracts and no reports to write. Simply complete one brief performance evaluation towards the end of Internship

work Integrated Learning (wIL) is the term given to a university program that integrates learning with its application in the workplace. Internship is one form of wIL and is a period of observing, learning and practicing in a business environment. Students are given the opportunity to effectively integrate theory with the practice and responsibility of the workforce.
The Hotel School Sydney (THSS) provides this experience through the Internship Program, a co-operative work-study venture between tourism and hospitality organisations and THSS. Much of the success of the Internship program has come from the strong relationships developed with industry over the last 20 years.

why did you choose Park Hyatt Sydney to complete your Internship?Sarah and Victoria indicated several factors including the international reputation of the Hyatt brand; the emphasis on creating an individualised experience for all guests; and being a boutique hotel, the ability to interact with regular guests, VIPs and long stay guests. Victoria added, “When I arrived for my interview, the staff were happy, helpful and most importantly, were having fun. I have since found the Park Hyatt to have a lovely working atmosphere, with supportive managers as well as colleagues”.
what do you do?V The communications department is located back-of-house, within the front office department. I answer phone calls, make wake-up calls, reply to or forward emails, make restaurant reservations, take in-room dining orders, order amenities for guests and action guest requests. I also deliver guest messages, send and receive jobs to and from engineering and housekeeping, complete tasks for sales and marketing.S The reception is located front-of-house, within the front office department. As a receptionist, my role is primarily to check-in and check-out guests to the hotel. I deal directly face-to-face with guests, interacting with them throughout their stay and assisting in making their stay memorable and enjoyable.
what skills and attributes are required to work on reception? V You need to be sincere, as your body language and tone are transferred through the phone. Listening skills are important. It’s what you do the most. You need to prioritise. In busy periods there is a long list of requests. There’s a lot of information to learn. We are the hotel operator, housekeeping, butler service, in-room dining and restaurant reservations. S To be a receptionist you need a high level of people skills to be able to interact and deal with people and different situations. Communication skills are essential.
what do you like most about your job?Both girls enjoyed interacting and engaging with people, meeting new people every day, adding that “their colleagues are lovely people and make Park Hyatt Sydney a great place to work”.
where would we find you on your day off?V Either sleeping in and recuperating energy or going for a jog to soak up some sun. S Spending time with friends, shopping or relaxing at home.

Hotel guests have always had high expectations on the upkeep and presentation of guest rooms. Be it for business or pleasure a hotel room always needs to create a home away from home experience that is clean, warm and inviting with enough amenities to pacify even the fussy ones.
With James’ ambition we will no doubt be hearing soon about his progression into management, actually... “soon” is here! Let’s hear what Club Med Lindeman Island Housekeeping manager, Vikki Hill, had to say about James:
James has proven himself in a very short time to be such a valuable part of our team. James has exceeded in all he does and goes out of his way to help other members of our team to achieve results.
James works 8 hours a day in housekeeping and then 5-6 hours in the resort’s dining & entertainment area with guests, participating in shows at night and helping run the entertainment games. On top of all this, there are late night rehearsals a couple of times a week.
James, on his own initiative, jumps in to help clear glasses in the bar area and around the theatre after the shows. I have had several other Managers approach me, praising James for all he does and his great attitude. James arrives for work every morning with a smile on his face. He is a pleasure to have in my department and is well liked by all staff members. I am pleased to add, due to his positive attitude and natural competence for the job, James has just commenced training as Housekeeping Supervisor.

Coming from her home town in Rous Mill, south-east Lismore, this young girl is far from country. Jodie enrolled into the class of ‘07, after finding out about THSS in the UAC guide. After further research, Jodie was determined to study at THSS.
Jodie became President of the Student Representative Council (SRC) in 2010. Jodie learnt that planning and managing student events was definitely for her. She commenced co-ordinating social events, charity fundraisers including Jeans for Genes Day + Youth Off The Streets as well as co-ordinating monthly SRC meetings. Jodie and fellow SRC members have been successful in raising the SRC profile. They leave a benchmark for the new President to follow with New Year recommendations ready for implementation.
Besides being the SRC President, Jodie also was a committed Student Mentor and formed great friendships through this process. One of Jodie’s mentees was successful in gaining an internship position at Sheraton on the Park. Jodie is currently Manager of The Gallery Tea Lounge also at Sheraton on the Park.
Jodie was the voice of The Hotel School Sydney on FBi 94.5FM with fellow classmate Mitchell Petropoulos (see page 29). Jodie successfully balanced university studies with a broadcast series that aired monthly. Asking Jodie about the experience, she said
“I was fortunate to gain an inside look to another industry that had elements of what I was studying. It had links to events and sales and marketing that I enjoyed”.
Jodie also became the face of The Hotel School Sydney DVD (see page 8). Jodie experienced the complexity of putting together this production.

Did you always want to work in hospitality? I knew from a young age that I wanted to work in hospitality, although I couldn’t pinpoint exactly what prompted that choice. I could have never imagined doing what I do though, which is proof of the variety and breadth of positions available in the sector.
what was your first job? My first job was as a Front Office trainee at the Hotel du Palais in Biarritz, France. The Hotel is a Member of The Leading Hotels of the World. It was great insight into the importance of delivering quality customer service and creating memorable moments.
what was life like at THSS when you were studying? Busy! Although the schedule was structured. The links between study, work and life were manageable.
Did you work whilst you studied? I juggled part-time work at the Four Seasons Sydney, so never a dull moment. All the operational experience I gained has become useful in my more recent positions, so the sacrifice was worth it.
what was your first job after THSS? I was most fortunate to join a hotel consultancy business before graduating from THSS. Throughout the six years I spent with the company’s principals, I learnt a lot about the industry and more specifically how to analyse various hotels markets, forecast supply & demand scenario and prepare financial projections. This knowledge was certainly most useful when it came to transitioning to my current position.
what is your current role? I work as part of Starwood’s Asia Pacific Acquisitions & Development team, focused in the area of feasibility analysis.
what is involved in your role in development? what do you do? I analyse hotel markets and prepare financial projections for the purpose of underwriting for either existing or future projects that Starwood is interested in operating.
what book are you reading at the moment? The Jungle is Neutral: A Soldier’s Two-Year Escape from the Japanese Army by FS Chapman.
what is your favourite holiday destination? Can’t beat France and I still have so much to explore. But I am relishing discovering parts of Asia at the moment. I would recommend Luang Prabang in Laos to anyone with relaxation, nature, culture and great food in mind.
what is your favourite restaurant? L’Entrecote in Bordeaux, for the simplicity of the concept and the consistency of the delivery.
Are you still in touch with graduates from your year group? Not as many as I should.
Any advice for THSS graduates of 2010? Keep in touch with people. It’s amazing how small the industry is and how important those contacts can be

careers advisors luncheonIn September 2010, The Hotel School Sydney hosted the Careers Advisors and Hospitality Teachers’ Luncheon at InterContinental Sydney. The luncheon proved to be a great success with the talented and very funny Vince Sorrenti as guest MC for the day.
Entertainment continued during lunch with Vince’s humour and the amazing magic and memory skill of Nigel. During Nigel’s one hour performance and many clever tricks, he impressed the audience with his ability to remember the names of the 180 guests in the James Cook Ballroom during his performance.
Lunch was also an opportunity for Careers Advisors and Hospitality Teachers to network with each other, as well as meet with staff, graduates, industry managers and current students of The Hotel School Sydney. Tables were hosted by staff and Year 3 Student Mentors who were able to talk about the Bachelor of Business in Hotel Management and answer questions about The Hotel School Sydney.
During lunch we also took the great opportunity to launch our latest initiative ‘An Introduction to The Hotel School Sydney DVD’. (See page 9) This special screening was viewed for the first time and advance copies were given as part of the gift packs our guests received on arrival.
