Do you know what your benefits are with
Summit County?
Summit County provides the following benefits for their full time employees: A. Health Insurance with Select Health, paying 100% for Select Med Plus/Health Save for a
family if you pass your biometrics.
B. Dental Insurance with Reliance Standard, paying 100% for a family
C. Life insurance with Sun Life Financial, paying for $30,000.00 for the employee and $2,000.00
for each of their dependents.
D. Summit County offers short term and long term disability at no cost to the employee.
E. Summit County pays for 11 holidays during the year.
F. Summit County allocates one 8 hour personal holiday, per employee, per year.
G. Sick leave accrues 2 hours per pay period. There is a 400 hour limit on sick leave.
H. Employees accrue vacation based on their hire date, commensurate with their years of
service with Summit County. Maximum carry over to the next year is 200 hours.
I. Summit County pays their portion of Utah State Retirement for their employees.
J. Summit County permits employees to enroll in a variety of additional insurances, including
life insurance, and allows them to pay by payroll deduction.

There was a farmer who grew watermelons. He was doing pretty well, but he was disturbed by some local kids who would sneak into his watermelon patch at night and eat his watermelons. After some careful thought, he came up with a clever idea that he thought would scare the kids away for sure. He made up a sign and posted it in the
field. The next night the kids showed up and they saw the sign which read, “Warning! One of the watermelons in this field has been injected with cyanide.” The kids ran off, made up their own sign and posted it next to the farmers sign. When the farmer returned, he surveyed the field. He noticed that no watermelons were missing, but the sign next to his read, “Now there are two!”
A little boy opened the large old family Bible, and he looked with fascination at the ancient pages as he turned then one by one. He was still in Genesis when something fell out of the Bible. He picked it up and looked at it closely. It was a very large old tree leaf that had been pressed between the pages of the Bible long ago. “Momma, look what I found!” the boy called out. “What do you have there?” his mother asked. With astonishment in his voice, the young boy answered,” I think its Adam’s underwear!”

Carrot Cake Cookies with Cream Cheese Frosting
Ingredients Cookies
● 1 cup Butter (Sweet Cream Salted) ● 1 cup Granulated Sugar ● ½ cup Brown Sugar ● 2 Eggs ● 1 teaspoon Vanilla ● 3 cups All-Purpose Flour ● 2¼ teaspoons Cinnamon ● 1 teaspoon Baking Powder ● 1 teaspoon Baking Soda ● ½ teaspoon Salt ● 2 cups grated and chopped Raw Carrots ● 1 cup chopped Pecans ● The Best Cream Cheese Frosting
Instructions 1. Grate and chop 2 cups Raw Carrots 2. In a large bowl, cream butter and sugars until light and fluffy. 3. Beat in eggs and vanilla. 4. Mix in cinnamon, baking powder, baking soda and salt and mix well. 5. Add flour and mix until combined. 6. Add in 2 cups of carrots. 7. Bake the cookies in a 375 degree oven for 13-15 minutes or until golden brown around the
edges. 8. Allow cookies to cool. 9. Frost with The Best Cream Cheese Frosting 10. Apply chopped Pecans around the edges of cookies.
The Best Cream Cheese Frosting Ingredients 1 pound (4 cups) of Powdered Sugar
½ cup Butter (We use Salted Sweet Cream Butter)
8 oz. Cream Cheese
3 teaspoons of Vanilla
Instructions 1. Beat cream cheese, butter and vanilla in a mixer until blended. 2. Add powered sugar, a cup at a time and continue to mix until sugar is incorporated. 3. Frost cookies.

DERRICK RADKE , Public Works Director Derrick’s father was an engineer for two different oil companies so he grew up
in western states that lie on a straight line between Louisiana and Alaska. After
graduating from High School in Anchorage, Alaska, Derrick attended the Uni-
versity of Wyoming, earning a Bachelor’s Degree in Mechanical Engineer-
ing. His favorite foods include smoked spare ribs and homemade apple pie. An
almost 25 year employee, Derrick served as the County Engineer for 21 years
before taking over as Public Works Director three and half years ago. When
asked what he likes best about working for Summit County, he said, “Every day
there is a new challenge.” He also likes, “The privilege of interacting with the
great people that work for the County.” Outside of work, his life evolves around
his family and youth hockey. His favorite vacation was last year, a trip to the USA Hockey Nationals Tourna-
ment with his daughter’s team.
AMY JONES, Administrative Assistant for Environmental Health Department A Taylorsville native, Amy is a graduate of Skyline High School and attend-
ed Salt Lake Community College. Married with three children, Amy and her
family currently reside in Henefer, which Amy stated is “A beautiful commu-
nity to raise my children in.” Her favorite food is tacos and steak, her favorite
movie is Breakfast at Tiffany’s, and her favorite place she has visited is
Washington, D.C. When not working at the County, Amy enjoys road biking,
being with her family, and watching her children play sports. A one year em-
ployee of Summit County, Amy loves “The people I work with, they are my
second family. You couldn’t ask for a better group of people.” Something
very few people know about her, Amy has been playing the cello ever since
3rd grade.
TREVOR OLSON, Sergeant Trevor has worked for Summit County for 15 years and enjoys his job, particularly,
“All the friendly people that live here.” His favorite food is steak and his favorite
book is New Jack by Ted Conover. Married with two children, Trevor enjoys
spending his free time on the ski slopes. In fact, his first time skiing was at Park
City and he has been addicted ever since. His all-time favorite place he has visited
was the scenic Grand Canyon.
