Vodka sauce has always been a staple of Italian cooking. The alcohol brings out flavors normally unaccessible in the dish. Italians normally use a regular potato vodka for this, but using Corbin Sweet Potato Vodka gives the dish a sweetness that is not normally present in the dish. Combined with farfalle pasta (bowties) or penne and some freshly grated Parmigiano Reggiano, this is a fantastic dish to serve over the holidays. Ingredients • ½ cup butter • 1 medium onion, diced • 1 cup Corbin Sweet Potato Vodka • 2 28 oz. cans crushed tomatoes (Muir Glen brand if possible) • 1 pint heavy cream In a skillet over medium heat, saute onion in butter until slightly brown and soft. Pour in vodka and let cook for 10 minutes. Mix in crushed tomatoes and cook for 30 minutes. Pour in heavy cream and cook for another 30 minutes.
