Comfort foods are familiar, simple foods that are usually made from scratch. These foods are often emotionally significant to a person and often associated with pleasant childhood memories. The dishes are typically inexpensive and uncomplicated to prepare. Many people eat comfort food because it is familiar, tantalizes the appetite and is full of flavor.

Typically these foods are prepared for home-style and family dining. Recently some upscale restaurants have taken classic dishes and added their own flair. Some of these include macaroni and cheese, mashed potatoes, applesauce, chicken and dumplings, potato chips, and chocolate cake. One example is macaroni and cheese, adding aged cheddar, winter truffles, and grilled prosciutto serving as a side dish. A main course could be meatloaf stuffed with spinach and red peppers. Yet another example could be potato chips; frying purple, yukon gold, russet and sweet potatoes to create a crisp potato collage. These three ideas are just the tip of the iceberg. There are several variations that can be created from a basic dish. Experiment with new flavors and cooking methods in small batches and test them on your specials board to determine what sells. If the items go over well you can add them to your menu or they may become a signature dish.

Utilizing seasonal starches, vegetables, berries and proteins are great ways to season up your menu. Incorporate the fresh seasonal ingredients into your features and showcase them in different cooking methods. If you are unfamiliar with the products or cooking applications for the item, do research and learn how it is cooked, served and used. Knowing the product history will help you be more creative and understand what flavor profile you need to aim for.

Now that fall has arrived, this presents a perfect opportunity to try new comfort style foods. As recommended above you can take a classic dish and adopt it as your own with a new culinary twist. The cool fall weather brings in new aromas, colors and often a heartier appetite. Combining seasonal fresh ingredients with classic dishes may offer just enough change to impress your customers. Be creative as you cook, but be cautious and try to focus on your customer base. You want to create something that is familiar and not intimidating to your patrons. When you create your own variation of a classic, use the original name and add a sizzle word to define your new creation. If you name your dish something bizarre, people are less likely to try it; likewise when they are comfortable with the name and description they are more likely to order that item.

Tying seasonal ingredients into classical home-style meals will

spark the interest of your customers and will kindle

new business.

Maplevale FarmsDoing our best to be Big in a Small Way

This may be confusing at first glance.

Please give me a chance to explain.

We are Big - due to our affiliation with UniPro. Maplevale Farms is a proud member of UniPro which is the largest foodservice distribution cooperative in the United States. We are one of over 650 members. These 650 members have a total of over 900 locations. The collective sales of the members is $60,000,000,000 (that’s right! 60 Billion) per year. Foursquare is a social networking site that utilizes a smartphone’s GPS location-based technology. Users of foursquare “check-in” at various locations indicating to others of their arrival and earning points. Through the use of “check-ins” users can win electronic badges based on a number of differing criteria. Businesses are able to claim their physical location and offer customers cou-pons, frequency promotions, and much more.

There are over 6 million users of foursquare and its popularity continues to grow most among users ages 18-30. Foursquare users are interested in seeking deals and tend to be first movers regarding new technology and trends. Although many industries are utilizing four-square, restaurants are currently the largest segment of businesses being sought after by users.

Users who have a smartphone, such as an iPhone or Android, are able to “check-in” to venues and earn points based on varying criteria. Users can choose to share their “check-ins” with their personal social media platforms such as facebook and twitter.

Upon “checking in” a user can see other foursquare users who have “checked-in” and also view “tips” that others have shared about the particular venue.

Social media discussions are occurring about your establishment whether you are part of the conversation or not. Foursquare allows you to monitor and join the discussion, while also promoting frequency rewards and gather your customer’s analytics.

Unlike regular coupon and discount promotions, foursquare enables you to execute one-time coupons for new consumers and also frequency reward coupons for valued customers. Foursquare’s platform also allows you to track areas such as the number of people checking-in, names of individuals, frequency of individuals, what customers are suggesting in the “tips” section, and much more.

Being able to provide multiple promotions, having instantaneous ability to modify promotions and the added benefit of being able to gather customer analytics makes foursquare a good fit for your business.
