Birchbark Farm is a micro-dairy, with ten Swiss Alpine does who provide us with approx. six gallons of healthy milk daily, from April through October.

We operate as a Community Supported Agriculture supplier. This brings you as close to this local end product as possible, and it keeps our cheeses affordable as well as very fresh, high quality and free of preservatives or other additives.

We strongly encourage you to visit our farm to see the cleanliness and health of our animals and product preparation first-hand. We milk at 7:00am and 6:00pm and make cheese in between, so please call ahead so we are around to meet you. And of course, we encourage you to come taste the cheese!

To participate, simply fill out the form in this brochure according to the quantity/type of product you desire, pay the associated CSA subscription and send it in. You will receive a member card and become a fractional “owner” of one of our milking does for the season. This entitles you to a portion of the cheeses she/we produce. It’s that simple.

Either pick up your cheese (s) from us on the farm, or make arrangements with us for drop-off at a location near you (offer limited to Mason and Manistee Counties, MI). Sign up today, as a limited number of shares is available. We can freeze your fresh cheese if needed, with no deterioration in taste.

Goat cheese is a healthy alternative to cow’s milk cheese and meat as a source of digestible protein, calcium and lower-fat, creamy-tasting cooking ingredients. More easily digested

and less allergenic than cow’s milk

cheeses, goat cheese also has smaller

molecules, lower fat, cholesterol and

calories than other cheeses.Goat cheese is a regular feature of

the much-touted Mediterranean Diet, which has been credited as helping to lower heart disease. Pasture-fed goat cheese also contains Conjugated Linoleic Acid (CLA), a heart-healthy fatty acid. And because Birchbark Farm cheese is so mild and sweet, you can use it in appetizers, salads, sauces, sandwiches, spreads and even desserts!
