PIZZA BAGUETTES

For the base, use baguettes made with Macphie Bread

Concentrate as per basic recipe. Split each baguette

lengthways and spread with Macphie Pizza Topping or

Macphie BBQ Flavour Pizza Topping. Cover with your choice

of additional toppings and sprinkle with grated cheese. Grill or

oven bake at 200°C (400°F) until the cheese melts.

Suggested toppings:

Ham and Pineapple; Pepperoni and Onion; Chicken and Bacon;

Mozzarella, Tomato and Basil.

FOCACCIA PIZZA

For the base, make up Softie® as per basic recipe, add olive oil

and chop through dough (add mixed herbs to dough if required)

and shape as desired. Spread Macphie Pizza Topping over

the base and cover with your choice of additional toppings.

Sprinkle with grated cheese and bake at 230ºC (450ºF) until

the cheese melts.

SPICY SAUSAGE POCKETS

Make up Softie® dough as per basic recipe. Sheet out to 2-3mm

thick, and cut into 6" diameter dough pieces. For the filling,

mix together Macphie Pizza Topping, pepperoni and Mozzarella

cheese as required and add Filset at 3-4% of the total filling

recipe to help prevent boiling out. Place the filling in the center

of the dough pieces, brush the edges with GlenGlaze, fold

over and seal. Apply GlenGlaze and sprinkle with mixed herbs.

Prove at 40°C 75% R.H. for 15 minutes before baking at 210°C

(420°F) with low base heat for approximately 15 minutes.

ITALIANO QUICHE

Make up Macphie Quiche Mix as per basic recipe, with the

inclusion of seasoning to taste, and leave to stand for

15 minutes. Place a small amount of Macphie Pizza Topping

on the base of prepared short pastry cases, and add chopped

cherry tomatoes (if required). Whisk the quiche mixture again

briefly and pour into the pastry cases. Top with a small cherry

tomato, grated cheese and mixed herbs before baking at

205°C (400°F) for approximately 20-25 minutes.Serving Suggestions
