103934 - WHOLESOME BANANA CAKE
Ingredients Qty
Allied Pinnacle Complete Wholesome Cake Mix 1000 g
Water 480 ml
Canola Oil 280 ml
Pinnacle Banana Filling 350 g
Pinnacle Banana Icing:
80 g per cake
Pinnacle Cream Cheese Icing 200 g
Pinnacle Banana Kularome 4 g
Method:
1. Place water, Canola Oil and Complete Wholesome Cake Mix in a mixing bowl.
2. Using a cake beater, mix on 1st speed for 1 minute. Scrape down, mix for a further 3
minutes on 1st speed.
3. Add weighed amount of Banana Filling and fold through batter by hand.
4. Deposit 550g of batter into paper lined round Sponge Tins. Bake at 180°C for 35 – 40
minutes, or until baked.
5. Remove straight from tins after baking.
6. Once completely cooled, ice with 80g of Icing per cake using a Palette Knife, by
working in a circular motion.
7. Lightly dust top of cake with nutmeg. Let Icing set for 5 – 10 minutes.
Please note: Recipe is suitable for a 20 Q Hobart Mixer.

(BANANA CAKE – No 4)
Ingredients Qty
Allied Pinnacle Wholesome Cake Mix 2500 g
Water 700 ml
Vegetable Oil 700 ml
Fresh Bananas 750 g
Walnuts (Optional) 50 g
Method:
1. Place Water, Oil and Wholesome Cake Mix into a bowl.
2. Mix on 1st speed for 1 minute using a beater. Scrape down.
3. Mix on 2nd speed for a further 3 minutes.
4. Add Mashed Bananas, Walnuts (Optional) and mix for a further 30 seconds on 1st
speed.
5. Deposit 550 - 600 grams into a greased 7” sponge tin or 4.6Kg’s in a half slab tin.
6. Bake at 175 - 180°C for approximately 30 – 40 minutes for the 7’’ round and
approximately 60 to 80 minutes for the half slab
7. Remove from 7’’ Cake from the tins straight after baking. Allow the slab cake to
cool in the tin.
8. Once cool, decorate as desired.
Finishing:
1. Pipe approximately 120g of Dawn Cream Cheese Topping onto the 7” cake.
2. Sprinkle 5 grams of nutmeg on top to finish the cake.

Water 800 ml
Vegetable Oil 600 ml
Fresh Shredded Carrots 600 g
Walnuts (Optional) 50 g
Crushed Pineapple (Optional) 100 g
Method:
1. Place Water, Oil and Shredded into a bowl.
2. Add Pinnacle Wholesome Cake Mix, Walnuts and Crushed Pineapple.
3. Mix on 1st speed for 1 minute using a beater. Scrape down.
4. Mix on 2nd speed for a further 3 minutes.
5. Deposit 550 - 600 grams into a greased 7” sponge tin.
6. Bake at 175°C for approximately 30 – 40 minutes.
7. Remove from tins straight after baking.
Finishing:
8. Once cool, decorate with Pinnacle – 105569 Cream Cheese Topping 6KG or Dawn –
105863 Cream Topping 12.7KG as desired.
9. Sprinkle 5 grams of nutmeg on top to finish the cake.

Pinnacle Wholesome Cake Mix 2500 g 5000 g
Water 500 mls 1000 mls
Vegetable Oil 700 mls 1400 mls
Grated Carrot 750 g 1500 g
4450 grams 8900 grams
Method:
1. Place Water, Oil and Wholesome Cake Mix into a bowl.
2. Mix on 1st speed for 1 minute using a beater. Scrape down.
3. Mix on 2nd speed for a further 3 minutes.
4. Add Shredded Carrots and mix for a further 30 seconds on 1st speed.
5. Deposit 550 - 600 grams into a greased 7” sponge tin or 4.6 Kg in a half slab tin.
6. Bake at 175 - 180°C for approximately 30 – 40 minutes for the 7’’ round and
approximately 60 to 80 minutes for the half slab
7. Remove from 7’’ Cake from the tins straight after baking. Allow the slab cake to cool in

2. Add Pinnacle Wholesome Cake Mix, Walnuts and Crushed Pineapple.

4. Mix on 2nd speed for a further 3 minutes.
5. Deposit 550 grams into a papered 7” sponge tin.
6. Bake at 180°C for approximately 30 – 40 minutes.
Finishing:
Decorate with approximately 120g of Dawn Cream Cheese Topping.
Sprinkle 5 grams of Toasted Shredded Coconut on top to finish the cake.

AP Caramel Kularome (105437) 50 g 360 g
Method:
1. Place water, Canola Oil, Complete Wholesome Cake Mix and Caramel Kularome in a
mixing bowl.
2. Using a cake beater, mix on 1st speed for 1 minute. Scrape down. Mix for a further
3 minutes on 1st speed.
3. Weigh 150g of 105413 - AP Caramel Sauce into the 920g plastic pudding bowls.
4. Deposit 420g batter on top of the sauce.
5. Place on 8 pudding bowls per tray. Cover with a piece of silicon paper. Place
another tray on top of the paper.
6. Bake at 150°C for approximately 50 – 60 minutes.
Pay close attention to the make-up sheet
1. Only lid, pack and label puddings when completely cold.
2. Cook at recommended temperatures to avoid overheating and melting of pudding bowls.
3. KEEP SYRUP CHILLED. This will avoid any boil out during baking.
