Slide 2 a Food-Borne Illness (FBI) Scenario FACSE Nutrition and Wellness Occupation Integrated Activity Mission Possible : Slide 3 Your Mission Your mission is to solve the Case of the Potluck Poisoning a Food Borne Illness scenario by: 0 Using this presentation 0 Filling out medical forms 0 Exploring the Health and Wellness Occupations 0 Deciding from the facts what caused the Potluck Poisoning Slide 4 Health and Wellness Occupations 0 These occupations collect, manage, organize, and analyze information in the Health and Wellness Field. 0 These occupations require computer technology skills and knowledge of health care & office software. Slide 5 You will be exploring these occupations 0 The Medical Records Technician that records the patients personal and insurance information. 0 The Epidemiologist that collects all the facts and solves the case. Slide 6 The Community Potluck was organized by 4 individuals: 0 Molly is a local housewife who runs a day care center. 0 Mike runs the towns meat packing plant. 0 Abram is the manager of the Roto Rooter Fertilizer Outlet. 0 John is a hard-working local dairy farmer. Slide 7 Activity #1 Worksheet: Identify the 4 Contributors to the Potluck Dinner 0 Describe the people as you watch the presentation 0 Match the people to the pictures that represent their part in this scenario by writing the LETTER of the person in the square to the left of the picture 0 Use the Activity #1 Worksheet 0 Use the next 4 slides to find the answers. Slide 8 Molly 0 She is a local housewife who runs a day care center for 9 children approximately 1-8 years old. 0 She was asked to cook 15 hams. 0 The day of the banquet, she and 3 of her older day care children spent most of the day preparing the hams in her kitchen. 0 She also has a soft spot for birds and cats; you are told she has 4 birds and 12 cats. Slide 9 Mike 0 He runs the towns meat packing plant. 0 He and his wife donated some 150 pounds of beef and pork which, when you arrive, are being cooked over several open pit barbeques. 0 Several kids, ages 5-9, are playing near some of the uncovered meat. 0 You also note several flies camping on the beef, and a no- pest strip hanging close by. Slide 10 Abram 0 He is the manager of the Roto Rooter Fertilizer Outlet in the states capitol, about 290 miles away. 0 He has been ill recently and only helped mix the salad after nobody else would volunteer to do it. 0 Symptoms of his recent illness include double vision, diarrhea, high fever and skin lesions. 0 He feels fine now. Slide 11 John 0 He is a hard-working local dairy farmer who has been asked to bring 200 gallons of red fruit punch. 0 Lacking anything else to bring the punch in, he uses several of his milk cans. 0 The milk cans have just recently been repaired from several years of use. Slide 12 The Case of the Potluck Poisoning It could happen anywhere. 0 On the evening of September 23, at approximately 8:30 p.m., your phone rings. 0 Upon answering, a nurse from your local hospital frantically tells you of some 95 people who are, as she describes it, Lying all over the place. 0 They are vomiting, they have diarrhea and some are in such pain that they wont even move from the hallways of the hospital and the front lawn of the community center. Slide 13 The Community Potluck Dinner 0 From what you can gather at the emergency room, there was a community potluck dinner, which was attended by some 350 people. 0 The dinner began at 8:00 p.m. 0 The first sick patients began arriving at the hospital around 9:00 p.m. 0 It is time to explore 2 occupations to help you solve the case... Slide 14 Gather information from the patients to admit them into the hospital 0 As the Medical Records Technician of the Hospital you are responsible to get personal and medical insurance information from all patients 0 Family members begin to arrive and you get information from them. Slide 15 Activity #2: Patient Record 0 Fill out the Patient Record Worksheet (Activity 2) in Microsoft Excel. 0 You should make up your information about your age, if you are married, phone number, etc. 0 When you are done, print the sheet, then sign your name and date it. He says that more people will probably be coming. 0 Going in through the side door, you meet 6 other victims experiencing similar symptoms. 0 We are informed by Environmental Health Services that this seems to be a larger than normal outbreak and they have called an Epidemiologist. Slide 18 The Epidemiologist arrives: 0 It is only 20 minutes later as the Epidemiologist arrives at the hospital. 0 In the ensuing time, an additional 20 individuals have arrived - all with similar symptoms. 0 The Epidemiologist begins to collect information by setting up his laptop computer and using the latest version of the EPI Info web site. 0 In the meantime, 3 Environmental Health Specialists are sent to the dinner to collect food samples, which are transported to the public health laboratory at the hospital. Slide 19 To Be Continued 0 The Epidemiologist begins to piece together a story from the sick people, which involves: 0 People at a community dinner become sick displaying nausea, vomiting, diarrhea, severe headache, but no fever. 0 The Environmental Specialists collect the containers the food and drink were served in. 0 By early the next morning, several patients are ready to be interviewed. 0 The Epidemiologist interviews people who brought the food and drink. Finish this activity before going on to the next slide. Slide 22 Activity #3 Epidemiologist Chart 0 On the spreadsheet, you will see the following information for 5 people who ate at the community dinner. Enter it into the spreadsheet. 0 TANNER - Did not get sick. He ate the ham & salad. He drank water only. He is on a diet and is limiting his sugar intake. 0 ANA - Did get sick. She ate the ham, salad and drank the fruit punch. 0 MEGAN - Did get sick. She ate salad and had the fruit punch. 0 JIM - Did get sick. He ate the ham, salad, and drank the fruit punch. 0 BRIANN - Did not get sick. She ate the salad and drank water. Finish this activity before going on to the next slide. Slide 23 There are many reasons why people get sick. 0 Viruses and bacteria may cause infections likes strep throat and influenza (flu). 0 Some bacteria and viruses can live in food causing food-borne illnesses like salmonella and hepatitis A. 0 Exposure to excessive amounts of chemicals or chemical elements (also called minerals) can cause illness like heavy metal poisoning from lead or cadmium. Slide 24 Activity # 4: Classify Illnesses 0 Fill out the Activity # 4 Classify Illnesses worksheet as you learn more about 5 illnesses. 0 Record the cause of each illness 0 Record the time it takes to get sick 0 Record what happens to the patient 0 This information will help you solve the case 0 Use the next 4 slides to find the answers Slide 25 Influenza (Flu) 0 Cause of the illness: This is an extremely contagious infection caused by a virus. 0 It attacks the nose, throat, and lungs. 0 Time for symptoms to occur: is short and the symptoms come on quickly. 0 Symptoms are: fever, headache, fatigue, dry cough, sore throat, congested nose, and body aches. 0 Most people will recover in one to two weeks, but a few people will progress to pneumonia and other complications including death. An average of 35,000 Americans die annually from Influenza. Slide 26 Hepatitis A 0 Cause of the illness: Is a viral infection that causes liver damage. 0 This particular virus is transmitted by food or water that has been contaminated with feces from an infected person. 0 This obviously means you should always wash your hands after going to the bathroom AND before handling food. 0 Time for symptoms to occur: is within 2 to 4 weeks. 0 The symptoms include jaundice (yellow skin and eyes), fatigue, abdominal pain, loss of appetite, nausea, and vomiting. 0 There is no treatment for Hepatitis A. Slide 27 Salmonella 0 Cause of the illness: This is a bacterial infection that may occur after eating contaminated food such as raw chicken or raw eggs. Some animals, such as reptiles, baby chicks, and baby ducks, may also carry salmonella and pass it in their feces. Cats and dogs can also carry salmonella in their feces as well. 0 Time for symptoms to occur: they begin one to three days after the infection. 0 Salmonella infection causes diarrhea, fever, and stomach pain. Slide 28 Lead Poisoning 0 Cause of the illness: Lead is a soft, heavy blue gray metal naturally occurring in the earths crust. Lead used to be common in paints, and is still found in batteries, solder used for repairing metal containers, bullets, and roofing materials. It also exists in food cans that have not been soldered properly. 0 Time for symptoms to occur: within 30 minutes to an hour. 0 Lead poisoning can cause stomach pain, diarrhea, and vomiting. Prolonged exposure can damage the kidneys, cause mental retardation, coma, seizures, and death. Slide 29 Cadmium Poisoning 0 Cause of the illness: Cadmium is a metal, which can be very poisonous to the body. It is highly corrosion resistant and is desirable in the automotive, electronics, marine, and aerospace industries. It has also been used in soldering and in the production of metal cans. 0 Time for symptoms to occur: within 30 minutes to an hour. 0 If cadmium is ingested, it can immediately cause choking attacks, vomiting, abdominal pains, diarrhea, dizziness, and a loss of consciousness. Slide 30 To be Continued 0 Within 24 hours the first results of the food come back negative. The food items were not spoiled with bacteria. 0 Investigation shifts to chemical or metal poisoning. 0 The symptoms presented by the patients mimics that of heavy metals. 0 The question was where did the heavy metals come from?
