From the moment you approach 1 Hotel Brooklyn Bridge, its design creates a visceral connection to Nature — thanks to a few ingenious ideas, a lot of local artists and artisans, and a million panes of glass. Throughout the hotel, palettes, shipping containers, pilings, and pier structures inspire our design, with special green moments to delight and surprise around every corner. We let the structure of our building speak for itself with board formed concrete and exposed mechanicals.

ABOUT SEAMUS MULLENSeamus Mullen is an award-winning New York chef, restaurateur

and cookbook author. He opened his first solo restaurant Tertulia in Manhattan in 2011, which garnered two stars from The New York Times

and was a finalist for the prestigious James Beard Foundation Award for Best New Restaurant. In 2013, he opened El Colmado, a Spanish tapas and wine bar at Gotham West Market, a food hall in New York’s Hell’s

Kitchen. In March 2015, he opened a second outpost of El Colmado in the Meatpacking District called El Colmado Butchery, a tapas bar and butcher

shop. He was awarded “Chef of the Year” by Time Out New York and has been named a semi-finalist for Best Chef NYC by the James Beard

Foundation three years in a row.

Growing up on an organic farm in Vermont, Seamus learned from a young age the value of eating real, whole foods. More recently, Seamus has become a leading authority in the conversation on food, health and

wellness. We’re honored and excited to have him lead the food experiences at 1 Hotel Brooklyn Bridge. From restaurant to room service, his careful

hand oversees everything that comes out of our kitchen.
